Christmas officially arrives at our house when I make these melt-in-your-mouth bars. Red and green maraschino cherries add a jolly finish to each light and creamy morsel. -Kathy Dorman, Snover, Michigan

2 cups all-purpose flour
2/3 cup packed brown sugar
2/3 cup cold butter
1 cup chopped walnuts
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 eggs
1/4 cup 2% milk
2 tablespoons lemon juice
1 teaspoon vanilla extract
Sliced red and green maraschino cherries, optional

Steps:

  • In a large bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Stir in walnuts. Reserve 1 cup. Press remaining crumbs onto the bottom of an ungreased 13x9-in. baking pan. Bake at 350° for 12 minutes. , Meanwhile, in a large bowl, beat cream cheese and sugar until light and fluffy. Add eggs; beat on low speed just until combined. Stir in the milk, lemon juice and vanilla. Pour filling over crust. Sprinkle with reserved crumbs. , Bake 25-30 minutes longer or until edges are lightly browned and filling is almost set. Cool in pan on a wire rack. Cut into squares. Garnish with cherries if desired. Store in the refrigerator.

This dessert is so good it seems a shame to have Christmas in the title. This is so good year around. Even though it is cheesecake it does not need to be baked in a cheesecake pan -it can be baked in a pie pan or in a square pan. This is so simple , you will make it often using different fruit each time.

CRUST:
1/3 c cold butter
1/3 c brown sugar, firmly packed
1 c flour
FILLING:
8 oz cream cheese, softened
1/4 c granulated sugar
1 large egg
1 Tbsp lemon juice
1/4 c green maraschino cherries
1/4 c red maraschino cherries

Steps:

  • 1. Crust: Cut butter in chunks, add brown sugar and flour. Mix at low speed. Mix at medium speed for 1 minute. Reserve 1/2 cup crumbs. Press remaining crust mixture into an 8-inch square baking pan. Bake in center of oven at 350^ for 10-12 minutes. --- Filling: Beat cream cheese, sugar, egg and lemon juice together at medium speed until fluffy about 2 minutes. Stir in chopped fruit. Spread filling over hot crust, sprinkle with reserved crumbs. Continue baking for 18-20 minutes or until filling is set and lightly browned. Cool in refrigerator.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup cold butter
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon vanilla
1 egg
1 can (21 oz) cherry pie filling
1/3 cup sliced almonds

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, place cookie mix. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. Reserve 1 1/2 cups of the crumb mixture for topping. Press remaining mixture in bottom of pan. Bake 10 minutes. Cool.
  • Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth. Spread cream cheese mixture evenly over partially baked crust. Spoon cherry pie filling evenly over cream cheese layer.
  • In small bowl, mix reserved 1 1/2 cups crumb mixture and the almonds. Sprinkle over pie filling.
  • Bake 40 to 45 minutes or until light golden brown. Cool 30 minutes. Refrigerate about 2 hours or until chilled. Cut into 6 rows by 4 rows. Store covered in refrigerator.

½ stick butter, chilled and cut into small pieces

½ cup white sugar

  • Preheat the oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 9x13-inch baking pan with cooking spray.
