COLD QUINOA SALAD image

Yield 4 sides or 2 lunches

Number Of Ingredients 10

1c dry quinoa
1 large organic tomato, diced and drained
1 organic cucumber, seeded and diced
1/2 large red or purple onion, sliced thin
1/2 cup chopped fresh mint
3 cloves garlic, minced
juice of one lemon
1 1/2 c plain yogurt (optional)
1tbsp olive oil
salt or soy sauce, and pepper

Steps:

  • Heat olive oil in a medium sized pot over medium heat. Rinse and drain quinoa, and saute in oil until it starts to turn golden brown. Add 2 cups water and soy sauce to taste, bring to a boil, cover, and simmer for 15 mins. Add lemon juice, toss with a fork and let cool. In a large bowl, toss quinoa, chopped vegetables, garlic, mint, and seasonings. Chill, and serve with generous dollups of yogurt on top and sprigs of fresh mint.
