Here's what you need: oil, chorizo, onion, ground beef, salt, pepper, tomato sauce, rotini pasta, parmesan cheese, fresh basil

1 tablespoon oil
4 oz chorizo, chopped
½ onion, chopped
1 lb ground beef
2 teaspoons salt
2 teaspoons pepper
3 cups tomato sauce
1 ¼ cups rotini pasta
½ cup parmesan cheese
½ cup fresh basil, chopped

Steps:

  • Heat oil in a large pot over medium-high heat.
  • Cook chorizo until slightly crispy.
  • Add the onions and cook until translucent.
  • Add the beef, salt, and pepper, cooking until no pink is showing.
  • Pour in the tomato sauce, and cook until sauce thickens.
  • Add the pasta, parmesan, and basil, stirring until the pasta is evenly coated.
  • Enjoy!

1 small onion, sliced
1 cubanelle pepper, sliced
4 garlic cloves, chopped finely
1 medium zucchini, cubed
2 Roma tomatoes, cubed
1/2 C red wine
1/4 cup calamata olives sliced
Parmesan, shredded

Steps:

  • Saute onions and peppers in olive oil over high heat until begin to caramelize. Add sliced chorizo, zucchini and tomatoes and wine, cover and simmer for 40 minutes. Uncover, and simmer until not too runny. Serve over polenta or pasta sprinkled with sliced olives, drizzled with olive oil and shaved Parmesan.

I'll continue to tweak this one, I'm sure, but this is my current version. At these amounts, it makes a good bit of sauce. Number of servings listed is my guesstimate for pasta, which is what I originally came up with this for. I had some leftover in the fridge this afternoon, though, and tried it over a leftover chicken breast. Yum! Makes me wonder what else this might work on...

1 tablespoon olive oil
1 medium onion, cut in half and chopped
1 medium green pepper, chopped
2 garlic cloves, minced
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper (optional)
1 lb chorizo sausage, casings removed
2 (14 ounce) cans diced tomatoes (undrained)
1 (4 ounce) can black olives, sliced (drained)
salt and pepper, to taste

Steps:

  • Heat the oil in a large saucepan. Add -- in this order -- the green pepper, onion, and garlic, allowing each to soften a bit before adding the next. Add the cumin and cayenne pepper (if using) when you toss in the garlic.
  • Stir in the chorizo and cook over medium heat, stirring frequently, till done.
  • Add the diced tomatoes and sliced black olives. Turn down heat and simmer till desired thickness is reached (I like mine pretty thick). Season with salt and pepper to taste and served over pasta or chicken (or perhaps something else as well?).

Easy to make tasty pasta dish

Steps:

  • Slice the chorizo lengthways then into thin semi circular slices. Fry this in a pan over medium heat for 10-15 minutes, until the chorizo is crispy. No oil is needed as the oil will come out of the chorizo once hot.
  • Empty the crisped chorizo out of the pan using a slotted spoon. Leave the oil in the pan
  • Fry the onions in the chorizo oil, add a dash of Worcestershire sauce. Fry for around 15 minutes, or until soft. Add the garlic and chilli (if using this) and fry for another 5 minutes.
  • Empty the tin of chopped tomatoes into the pan. Turn the heat down. Add the Italian herbs and season well with salt & pepper. Add a little extra water if the sauce looks too thick. Leave this to cook for 15 minutes with the lid on whilst the pasta is cooking.
  • Cook the pasta as instructed on the packaging. Either add to the pan and mix with the sauce. Or spoon the sauce over the top of the pasta. Serve with a Garlic Baguette.

Steps:

  • Put the oil in the pan to heat up. Add the onion to the hot oil and fry for a couple of minutes until translucent.
  • Add the chorizo, rosemary and chilli and fry for another 2 minutes. In the meantime, put the pasta on to cook.
  • Add the passata, place a lid on the pan and turn down to a simmer.
  • Drain the pasta when it's done. Take the sauce off the heat and add the mascarpone and lemon juice and stir until the mascarpone has all melted.
  • Add the pasta to the sauce and stir. Serve with freshly grated parmesan on top.
