A yummy chocolate cake with a yummy chocolate frosting.

2 cups all-purpose flour
1 tablespoon baking powder
½ tablespoon baking soda
2 cups white sugar
1 egg
½ cup unsalted butter
1 cup sour cream
½ cup water
2 teaspoons vanilla extract
⅝ cup unsweetened cocoa powder
2 cups semisweet chocolate chips
1 cup semisweet chocolate chips
3 tablespoons strong brewed coffee
¾ cup butter, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans. Sift together the flour, baking powder, baking soda and cocoa, set aside.
  • In a medium bowl, beat the sugar and egg until light, add the 1/2 cup butter, beat until smooth. Stir in the sour cream, water, and vanilla. Add dry ingredients, mix slowly until flour mixture is absorbed. Fold in the 2 cups chocolate chips. Divide the mixture evenly between the two prepared pans.
  • Bake for 35 to 40 minutes until cake tests done with a toothpick. Place pans of cake on wire racks to cool for 10 minutes before removing from pans to cool completely. When cool frost with the following frosting recipe.
  • To make the frosting, melt the remaining 1 cup chocolate chips with the coffee in a small saucepan over low heat. Remove pan from heat, and beat in the 3/4 cup of butter, 1 tablespoon at a time, until smooth. Set pan in a bowl of ice and beat until icing is spreadable and holds it's shape. Cool completely before frosting cake.

1/2 cup butter, cubed
2 ounces unsweetened chocolate
1 cup sugar
1/2 cup raisins
1-1/2 cup water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Pinch salt
1-1/2 teaspoons vanilla extract
1-3/4 cups all-purpose flour
1 teaspoon baking soda
ICING:
1/2 cup confectioners' sugar
1/4 teaspoon vanilla extract
1 to 2 teaspoons milk

Steps:

  • In a large saucepan over low heat, melt butter and chocolate, stirring constantly. Add the sugar, raisins, water, cinnamon and cloves; bring to a boil. Boil for 5 minutes, stirring occasionally. , Remove from the heat; pour into a large bowl and cool for 15 minutes. Beat in salt and vanilla. Combine flour and baking soda; add to chocolate mixture until well blended. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 45 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack to cool completely. , In a small bowl, combine icing ingredients; drizzle over cooled cake.

1 (18 1/4 ounce) box chocolate cake mix
1 1/4 cups water (for cake)
1/3 cup water (for cake)
3 eggs (for cake)
2 (5 2/3 ounce) boxes chocolate instant pudding
2 (8 ounce) containers Cool Whip
2 cups mini chocolate chips

Steps:

  • Make and bake cake as directed.
  • Set aside to cool.
  • Make pudding (make as directed for pies -less milk) and chill for an hour in fridge.
  • After cake has cooled, crumble half of it in bite sized pieces in the bottom of a large, clear serving bowl.
  • Layer 1/2 half of pudding on top of cake.
  • Layer 1 tub of cool whip on top of pudding.
  • Repeat this layering process with the rest of the cake crumbled up, the rest of the pudding, and the other tub of cool whip.
  • Sprinkle with mini chocolate chips.
  • Sit back and enjoy this yummy-to-your-tummy dessert!

It's chocolate... it's rum...IT'S YUM! Don't be intimidated by the prep time, most of that is just the resting period. If the sauce is too much chocolate for you feel free to sprinkle w/ a dusting of powdered sugar instead before serving.

1 box (18.25 ounce) package chocolate cake mix
1 box (4 ounce) instant pudding, chocolate
4 eggs
1/2 c water
1/2 c vegetable oil
1/2 c light rum
1/2 c chopped walnuts
GLAZE
1 stick butter, room temperature
1/2 c sugar
1/4 c light rum
1/8 c water
GANACHE (OPTIONAL)
9 oz bittersweet chocolate chips
1 c heavy cream
1 Tbsp dark rum

Steps:

  • 1. Preheat oven to 325 degrees. Grease and flour one 10 inch Bundt pan. Sprinkle walnuts over the bottom of the pan.
  • 2. beat cake mix, pudding mix, eggs, oil, 1/2 cup of the water, and 1/2 cup of the rum on high speed for 2 minutes. Pour batter Bundt pan over the top of the chopped nuts.
  • 3. Bake at 325 degrees F for 50 to 60 minutes. Remove cake from oven once done LEAVE IN PAN! Poke holes into the cake so the glaze can soak in and set aside.
  • 4. To Make Rum Glaze: In a saucepan combine the butter or margarine, sugar, 1/4 cup of the rum, and 1/4 cup of the water. Bring mixture to a boil and cook for 2 minutes. Pour immediately over still warm cake. Allow cake to rest in pan AT LEAST 2 hrs before inverting.
  • 5. Flip Cake out onto a wire rack. (Put wax paper under rack to make for easy clean up after you pour the ganache!)
  • 6. GANACHE Place chocolate in a medium bowl. Heat cream over medium heat in a small sauce pan. Bring it to just a boil, watch carefully because if it boils for a few seconds, it will boil over! Cut off heat and whisk in rum. Pour over chocolate, whisk until smooth. Allow ganache to cool slightly before pouring over the cake. Start at the center of the cake and move out.

6 ounces chocolate chips
1 cup sweet butter
1 cup chopped pecans
1 3/4 cups sugar
4 eggs
1 cup flour
2 teaspoons vanilla extract
powdered sugar, for dusting

Steps:

  • Melt chocolate chips and butter in double boiler.
  • Add nuts and remove from heat.
  • Add sugar, flour, and 1 egg at a time.
  • Stir in vanilla extract.
  • Fill mini-muffin tins about 2/3 full.
  • Bake@ 350 degrees Farenheit for 20-25 minutes.
  • Tops will be crackly.
  • Cool on wire racks.
  • Dust with powdered sugar.

2 pkg chocolate chip muffin mix
2 c light brown sugar
1 egg
1 c butter, room temperature
2 c cooking oats
1 bag(s) semi-sweet chocolate chips
1 can(s) sweetened condensed milk
OPTIONAL
1/2-1 c chopped nuts (can be lightly toasted)
1/4-1/2 c coconut, shredded
***PREHEAT OVEN TO 350 DEGREES***

Steps:

  • 1. In a large bowl, add both packs of muffin mix, brown sugar, egg, butter and oats. Mix well. Press into a 9x13 baking dish which has been lightly sprayed with a non-stick spray. **if adding nuts and/or coconut, mix into mixture before pressing into baking dish**
  • 2. Place the semi-sweet chocolate chips and sweetened condensed milk into a sauce pan and melt on low heat constantly stirring. Take off the stove as soon as everything is melted. Evenly drizzle on top of the muffin mixture. Bake in 350 degree oven for 35 minutes. Can serve warm or at room temperature.
  • 3. Note: these can be heated in the microwave for a few seconds, if you want to eat the leftovers warm.

This pie was my Mother's take on chocolate pie -- intended to satisfy the cravings of a family full of "chocoholics." Family members have been known to slip into the kitchen at night to hide a slice so that they can have it the next day. There is usually a friendly argument over who will get the last piece. Prepare to be the referee in your family -- or just to be on the safe side, double the recipe and make 2 pies. Be sure to use evaporated milk as called for in the recipe.

1 pie shell, prebaked - 9-inch works best
3 tablespoons cocoa (I prefer Hershey's)
1 cup granulated sugar
4 tablespoons all-purpose flour
1 pinch salt
3 large eggs, separated
2 cups evaporated milk, not sweetened condensed milk (I use Carnation)
4 tablespoons unsalted butter
1 tablespoon pure vanilla extract
6 tablespoons granulated sugar (for meringue)
1/4 teaspoon cream of tartar (for meringue)
1 pinch salt (for meringue)
1/2 teaspoon pure vanilla extract (for meringue)

Steps:

  • Preheat oven to 350 degrees.
  • In a heavy-bottomed saucepan, or the top of a double boiler, sift cocoa, sugar, flour and pinch of salt together and stir until well mixed.
  • Carefully separate eggs, setting whites aside for meringue. Place yolks in small bowl, beat lightly, then add 1/2 cup evaporated milk and mix well.
  • Slowly add egg mixture to dry ingredients, whisking as you pour, then add remainder of evaporated milk and whisk together until smooth.
  • Place directly over medium heat and cook until thickened, stirring often. If using double boiler bring water in bottom to just below the boil, place top pan with mixture over and cook until thickened. Double boiler takes longer, but until you get some experience it gives you more control.
  • As mixture begins to thicken stir constantly and do not let it scorch or burn.
  • After mixture thickens, stir in butter and vanilla, stir until butter is melted, remove from heat and pour into prepared pie shell.
  • If you suspect there might be any lumps in the mixture pour and press through a fine mesh sieve for a silky smooth texture.
  • Prepare meringue by placing the 3 egg whites (at room temperature) in an immaculately clean mixing bowl (clean it with a paper towel with a bit of white vinegar if there is any question). Beat slowly at first to break up whites.
  • Add cream of tartar and small pinch of salt, increase mixer speed and beat until soft peaks form.
  • Gradually add sugar, 1 T. at at time, continuing to beat, until all sugar is added, then add 1/2 t. vanilla extract, and beat until stiff peaks form, but meringue should not be dry.
  • Spread meringue on top of pie, starting at edge of pie, being sure to press the meringue to the crust, and work toward the middle. When all meringue is on pie, shape into swirls and peaks.
  • Immediately place in preheated oven and bake for 12-15 minutes until well-browned, but not burned.

One 18.25-oz. box devil's food cake mix
One 15-oz. can pure pumpkin

Steps:

  • Preheat oven to 400 degrees. Mix the two ingredients together in a bowl. Don't add anything else that may be mentioned on the box, such as eggs, oil, or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do NOT do this! Just keep on stirring until completely mixed. Transfer batter to a 9-inch cake pan sprayed with nonstick spray, and smooth out the top with a spatula or the back of a spoon. Place pan in the oven, and bake for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool, and then cut into 12 slices. Enjoy!
