Steps:

  • Chop the chocolate confectioners' coating and place into a heatproof bowl over simmering water. Cook, stirring occasionally until melted and smooth. Remove from heat and stir in the chow mein noodles so they are evenly distributed. Spoon out to desired size onto waxed paper. Let cool completely before storing or serving.

I love chocolate chip cookies, so when I was baking for Halloween I turned the chocolate chips into little spiders. I only drew 3 legs on each side, there wasn't room for 4, so my spiders were little 6-legged creatures.

2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
1 cup unsalted butter, at room temperature
¾ cup white sugar
¾ cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 ½ cups semisweet chocolate chips, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine flour, baking soda, salt, and baking powder in a large bowl and stir with a fork to mix ingredients well.
  • Combine butter, white sugar, and brown sugar in a large bowl; beat with an electric mixer until smooth and creamy. Add eggs and vanilla extract and beat until smooth and fluffy. Add in flour mixture, 1 cup at a time, and mix in with a spatula until well incorporated. Fold in 1 1/2 cups chocolate chips until well combined.
  • Drop cookies onto ungreased baking sheets. Pour 1/2 cup chocolate chips into a bowl. Push about 3 to 4 chocolate chips onto each cookie, tip-side down, to make the spider bodies.
  • Bake in the the preheated oven until edges are golden, 10 to 15 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack.
  • Melt remaining 1/2 cup chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes. Spoon melted chocolate into a piping bag with a small tip and draw little legs on each side of the spider bodies to create spider legs.

2 tablespoons peanut butter
200 g baking chocolate

Steps:

  • Microwave chocolate and peanut butter in a microwave safe mixing bowl for about 30 seconds on high.
  • If not melted and then microwave again in 5 second intervals.
  • Mix well until it is a smooth paste.
  • Add noodles and coat them well.
  • Spoon the mixture in dessertspoon sized blobs onto greaseproof paper or into patty papers.
  • Place in fridge until the chocolate sets.
  • You can also give these spiders eyes by sticking chocolate chips onto them.

Creepy Spiders Filled with Apricot Jam and Chocolate Almond Croquant image

1 pound 4 ounces dried apricots
1 1/4 cups Sauternes, or another white wine such as Riesling or muscat
1 cup granulated sugar
1 vanilla bean, split and scraped
Grated zest from 1 lemon, plus 2 tablespoons lemon juice
2 pounds finely chopped semisweet or bittersweet chocolate
3 3/4 ounces almond butter
2 ounces dark chocolate (65-percent), melted
1/2 cup plus 3 tablespoons granulated sugar
2 tablespoons unsalted butter

Steps:

  • For the apricot jam: In a medium saucepan, soak the apricots in the Sauternes until softened, about 30 minutes.
  • Add the granulated sugar, the vanilla bean seeds, the scraped vanilla bean pod and 2 1/2 cups of water to the saucepan. Bring to a boil over medium heat. Lower to a simmer and continue to cook slowly until the apricots are very soft and the mixture is slightly caramelized, 1 hour or more.
  • Add the lemon juice and lemon zest and simmer for 10 minutes more. Remove the saucepan from the heat and allow the mixture to cool.
  • When cool, remove the vanilla bean pod and place the apricot mixture in a food processor and pulse until slightly chunky. Drain off the excess liquid, if there is any. Refrigerate the apricot jam in a covered container until ready to use.
  • For the chocolate shells: Melt 24 ounces of the chocolate in a metal bowl set over a pan of simmering water fitted with a digital or chocolate tempering thermometer. Heat to 115 to 120 degrees F.
  • Remove the bowl of chocolate from the heat and add the remaining 8 ounces of chocolate. Stir until all the added chocolate has melted. The temperature of the chocolate should be below 86 degrees F. If not, allow the chocolate to continue to cool, stirring frequently, until it reaches 85 to 86 degrees F.
  • Place the bowl of chocolate over the simmering water again and reheat for a few seconds at a time, stirring well, until the temperature has risen to 87 to 91 degrees F. (Do not allow the temperature of the chocolate to exceed 91 degrees F, or you will have to repeat the procedure from the beginning.) Wipe any moisture from the underside of the bowl before proceeding.
  • Ladle the tempered chocolate into a 24-cavity half-sphere polycarbonate chocolate mold, filling the cavities completely. Tap the mold on the table or countertop several times to release air bubbles in the chocolate. Invert the mold over a large, clean bowl and allow the excess chocolate to drip out. Scrape the drips with a large thin spatula or blade and then invert the mold again. Scrape once more, making sure to leave clean edges around each cavity in the mold.
  • Scrape any leftover chocolate into one bowl. Reheat and maintain the temperature between 87 to 91 degrees F.
  • Leave the shells to set at cool room temperature, or place the mold in the refrigerator for no more than 5 minutes to help the chocolate begin to set. Reserve the remaining tempered chocolate for the spider legs.
  • For the chocolate almond croquant: In a small bowl, mix the almond butter with the dark chocolate. Set aside and keep warm.
  • Place a small saucepan over medium heat for 1 to 2 minutes. Sprinkle in 2 tablespoons of the sugar. Allow the sugar to melt without stirring. Tilt the pan if necessary to help the sugar melt evenly. Add 2 or 3 additional tablespoons of sugar and allow it to melt. The sugar may begin to caramelize at this point. Raise or lower the heat as needed to control the melting and prevent the sugar from burning. Continue to add the sugar in increasing increments until it has all been incorporated. Make sure all the sugar has melted (you may stir gently at this point) and continue to heat until a slight smoking of the caramelized sugar occurs.
  • Immediately remove the pan from the heat and add the butter. Stir the mixture until the caramel absorbs most of the butter. Reheat the caramel, if necessary, to keep it fluid.
  • Reheat the almond butter and chocolate mixture if necessary. It should feel warm to the touch. Scrape the mixture onto a nonstick silicone mat and spread to a thickness of about 1/4-inch.
  • Have ready 2 bench scrapers. Pour the caramelized sugar and butter mixture onto the top of the almond butter and chocolate mixture. Using the bench scrapers, fold the mixture over itself repeatedly. The more you mix, the smoother the texture will become. As you continue to fold, the mixture will begin to cool and will absorb any butter or chocolate that has leaked out.
  • Quickly shape the croquant mixture evenly, cover it with another silicone baking mat and use a rolling pin to roll the croquant to 3/8-inch-thickness. Remove the mixture from the silicone mats and cut it into disks slightly smaller than your hollow chocolate shells.
  • To assemble: Transfer the apricot jam to a disposable pastry bag and snip a small opening. Pipe the jam into the prepared chocolate shells, filling about halfway. Press a croquant disk into the mold, making sure to leave a slight headspace.
  • Ladle the remaining tempered chocolate onto the top of the mold, filling in the headspace of each chocolate shell. Tap the mold a few times on the table to release air bubbles. Use a spatula or blade to scrape the excess chocolate from the top of the mold. Let set at cool room temperature for a minimum of 2 hours, or preferably overnight.
  • Before unmolding the filled chocolate shells, place the mold in the refrigerator for 10 to 15 minutes. Well-tempered chocolate will contract as it sets and release cleanly. Remove from the refrigerator, flex the mold slightly, and carefully invert to release the chocolates. These will be your spider bodies.
  • Arrange the spider bodies on a clean piece of parchment or wax paper. Transfer some of the remaining tempered chocolate to a small pastry bag and pipe a small mound of chocolate that touches each spider body. This will be the spider¿s head. Allow these to set until firm.
  • Pipe spider legs onto a separate piece of parchment or waxed paper. When the legs are set, carefully remove them from the parchment paper and use the reserved tempered chocolate to attach the legs to the bodies.

DARK CHOCOLATE HAZELNUT BONBON SPIDERS

1 pound dark chocolate couverture
10 ounces heavy cream
2 ounces butter, room temperature
1 teaspoon hazelnut extract
80 polycarbonate chocolate molds
Red cocoa butter, for treating mold
Tempered Dark Chocolate Couverture, recipe follows
80 whole hazelnuts
1 pound 6 ounces dark chocolate couverture, divided

Steps:

  • For the hazelnut ganache: Put the chocolate couverture in a medium bowl and set aside. In a medium saucepan, scald the heavy cream. Pour the scalded heavy cream over the chocolate couveture and set aside for 3 to 5 minutes to allow the scalded milk to melt the chocolate. With a rubber spatula, gently stir the chocolate and heavy cream until fully blended and smooth. Add the butter and stir with a rubber spatula to incorporate. Add the hazelnut extract and stir to incorporate. Pour the mixture into a large pastry bag and set aside.
  • Pre-treat the polycarbonate chocolate mold with red (or any color desired) cocoa butter. Once the cocoa butter is set, brush each mold with a thin layer of tempered chocolate. Fill the entire mold with the fluid tempered chocolate and tap on work surface to release air bubbles. Quickly invert the mold and tap out excess chocolate. With a putty knife, scrape off the rest of the chocolate, let the mold rest upside down for 1 minute, and then scrape off surface of mold again. Let the chocolate set. Fill each mold with hazelnut ganache, 3/4 of the way full. Let the hazelnut ganache set. Pour the fluid tempered chocolate over the mold and spread thin, scraping off any excess. Tap mold on surface to release any air bubbles, and then scrape excess chocolate again. Transfer the finished mold to the freezer and let set for 2 to 3 minutes. Pull out the mold, invert, and tap on clean work surface to release finished bonbon.
  • To assemble: Dip the hazelnuts in fluid tempered chocolate and let set. Attach to finished bonbons with a small dab of tempered chocolate. With a small pastry bag, pipe the tempered chocolate on parchment paper in a 1 1/2-inch upside-down V-shape. Repeat to make 80. Once set, lift the piped tempered chocolate and attach to the bonbons with a small dab of tempered chocolate to look like the legs of a spider.
  • Over a double boiler, melt 1 pound 4 ounces chocolate to 115 to 120 degrees F. Bring the bowl with the melted chocolate to a flat, clean work surface (preferably marble or stainless steel ), wiping away any access water or steam from the bowl. With a rubber spatula, fully incorporate the remaining 2 ounces chocolate. Bring down the temperature of the chocolate to 80 to 84 degrees F by either stirring constantly in a figure 8 motion, or tabling (see Cook's Note). Once cooled, test the chocolate by dipping a small strip of parchment paper into the melted chocolate, and then lay it down on a clean work surface. If tempered, the chocolate on the parchment paper should be dry, hard, shiny, and without any streaks in 3 to 5 minutes. If any of these occur, keep stirring (agitating) the chocolate, or table it again, until a parchment paper test shows that the chocolate is tempered. When tempered, bring the chocolate back to the double boiler and reheat to NO HIGHER than 89 degrees F. (Bringing the temperature back up aids in a more fluid working consistency.) Transfer the chocolate to a chocolate warmer or set the bowl on top of a heating pad (at medium setting) to keep in temper.

8 ounces coconut puree
16 ounces dark chocolate

Steps:

  • For the filling: Place the tapioca in a pot of water and bring to a boil; cook at a boil until clear, then drain the tapioca. Add the coconut puree to desired consistency.
  • For the shell: Melt the chocolate and pour it into the chocolate molds, and then knock them carefully on a hard surface to release any air bubbles. Pour the excess chocolate back into the bowl of warmed chocolate. Scrape the flat portion of the mold to clean off the molds. Cool the shells to harden completely.
  • Pour the tapioca into the chocolate molds. Pour more chocolate over the filling, and scrape the excess again, then place the molds in the refrigerator to cool and set up completely.
  • To make the chocolate legs, drizzle some melted chocolate on wax paper in long strands, then freeze. Break the chocolate strands into pieces and stick them on the sides of the spiders using some melted chocolate as the glue.

Steps:

  • 1. Line 2 baking sheets with parchment paper. Melt chocolate chips in the microwave for 1 minute. If not fully melted, cook for 10 second bursts until fully melted.
  • 2. Stir in chow mein noodles. Drop by tablespoons onto parchment paper. Using a toothpick, gently lift up a few noodles to form "legs". Add eyes.

200 g cadbury chocolate candy bars (I like to use Hazelnut, Fruit and Nut, or plain Cadbury Milk Chocolate, usually stick with the plain)
100 g fried Chinese noodles, easy to find in the chinese section of the grocery store
2 tablespoons crunchy peanut butter

Steps:

  • Break up all of the chocolate into a microwave-safe bowl along with the peanut butter.
  • Microwave on High until the chocolate is melted.
  • Mix the melted chocolate and peanut butter thoroughly.
  • When mixed, pour the entire packet of fried noodles into the chocolate mixture and mix gently until all the noodles are well coated.
  • Scoop the mixture into cupcake patties.
  • Place in the fridge to set, about an hour.

CHOCOLATE SPIDERS BAKED IN A JAR

I found this recipe on the I am Baker site. I fell in love with it. It didn't give you mush as far as directions on how to do it so I filled in the spaces You bake this cake in wide mouth 1/2 pint mason jar or jelly jar. Then top it with a chocolate spider web. This makes a wonderfully scary party treat.

1 box(es) punpkin or orange cake mix
12 ounce(s) chocolate chips or chocolate mint chips

  • For every box of cake mix in pumpkin or orange You will need about 1/4 of the chocolate cake mix. Spray the inside of a new wide mouth 1/2 pint jars. do as many as guests. Inside make a spider or write something scary. Do this in the lower 1/2 of jar.
  • The spider: I divided my dry Chocolate cake mix into 4 and using only 1/4 of the mix, added only enough water to make it a thick paste. Then putting it in a icing bag, or a plastic baggy with a cut end, pipe a spider on the lower 1/2 of the inside of the jar after you have spayed the inside lightly with oil. Make sure the paste is thick so the spider would stay in place.
  • Make pumpkin, orange or even white cake mix as directed.
  • Pour carefully just enough cake batter to go 1/2 way up jar.
  • Put jars on a cookie sheet. Put that into a preheated 350 Degree oven for 18-22 minutes watching to see they are done but not over done.
  • In the mean time make webs from the chocolate chips and butter, melted together. I like the microwave for that. do it is 30 second cycles. Look above for the picture to do that. Place then in the fridge after making.
  • Cool cakes completely. then top with webs before serving.

3 tablespoons (1 1/2 ounces) unsalted butter, room temperature
4 1/2 tablespoons coffee liqueur (recommended: Kahlua)
1/4 cup cream
1 tablespoon light corn syrup
1 3/4 ounces unsalted butter
4 1/2 ounces white chocolate, roughly chopped
1 1/2 tablespoons pistachio compound
1 ounce pistachios, roughly chopped
2 pounds dark coating chocolate

Steps:

  • For the turtle spiders: Preheat the oven to 325 degrees F. Spread the pecans evenly on a silicone mat on a baking sheet. Place in the oven and bake until toasted, 7 to 10 minutes. Combine the sugar, brown sugar, salt, cream, light corn syrup and butter in a small saucepan and stir constantly over low heat until the sugars dissolve. Add the baking soda, and increase the heat to medium-high, stirring constantly. Cook the caramel to 244 degrees F. Immediately dip the bottom of the hot pan in an ice bath to stop the cooking of the caramel. Add the vanilla and rum. Scoop the caramel over the toasted pecans so that the caramel is splotchy all over the nuts. Let cool to room temperature. For the coffee ganache: In a small saucepan over medium heat, caramelize the sugar to a dark amber. Heat the cream, fleur de sel, and ground espresso in the microwave until it's hot to the touch, 1 to 2 minutes. Carefully add the espresso cream to the cooked sugar and bring it back to a boil. Be very careful this point because the sugar will bubble up as soon as the cream comes in contact with the sugar. Just keep pouring the cream in slowly and stirring the entire time. Place the chocolate, honey, butter, and coffee liqueur in a large bowl. Strain the caramel over the chocolate. Let sit for 30 seconds, and then whisk to combine. Let stand at room temperature until the edges start to crystallize. For the pistachio ganache: In a small saucepan, bring the cream and light corn syrup to a boil. Place the butter, white chocolate, and pistachio compound in a small bowl. Pour the hot cream over the chocolate. Let stand for 10 seconds, and then whisk to combine. Fold in the chopped pistachios. Let stand at room temperature until the edges start to crystallize. Pipe into the other half of the chocolate shell dome. For the chocolate domes: Melt the coating chocolate and pour into the mold, let it sit for 30 seconds, and pour back out. Let it completely crystallize. Repeat with all the molds. Pipe the coffee ganache into the chocolate molds. Glue the 2 halves together with melted coating chocolate.
