2 cups crushed chocolate wafers
1/4 cup sugar
1/3 cup butter, melted
FILLING:
1 cup hot fudge ice cream topping
1 quart vanilla ice cream, softened
1 pint raspberry sherbet, softened
1 package (10 ounces) frozen sweetened raspberries, thawed and drained
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, combine the wafer crumbs, sugar and butter; set aside 1/4 cup. Press the remaining crumb mixture into a 13-in. x 9-in. dish. Cover and freeze 15 minutes. , Place hot fudge topping in a microwave-safe bowl; cover and microwave on high for 15-20 seconds. Spread over crust. , Spoon ice cream over fudge layer. Place spoonfuls of sherbet over ice cream; cut through sherbet with a knife to swirl. Top with raspberries. Spread with whipped topping; sprinkle with reserved crumb mixture. , Cover and freeze for 2-3 hours or overnight. Remove from the freezer 15 minutes before serving.

2/3 cup dark or Dutch baking cocoa
1/2 cup granulated sugar
2 2/3 cups low-fat evaporated milk (a little less than 2 regular sized cans)
1-2 cups fresh raspberries

Steps:

  • Whisk all ingredients except raspberries together. Chill overnight in the refrigerator.
  • Spoon mixture into ice-cream maker. Process, following manufacturer's directions. Add raspberries, about ¼ cup at a time, once the mixture starts to thicken but before it has frozen.

1 (12 fluid ounce) can frozen concentrated raspberry juice

I just recently found frozen raspberries in the local supermarket (such progress!), and this is now our new favorite dessert!

Number Of Ingredients 6

2 cups frozen raspberries, thawed
1/2 cup sugar
2 tablespoons honey
2 cups water
1/4 cup dutch process cocoa
1 ounce semisweet chocolate, chopped

Steps:

  • Push raspberries through fine metal sieve; set aside.
  • In a medium saucepan, combine sugar, honey, and 2 cups water.
  • Over medium heat, bring to a boil, stirring to dissolve sugar.
  • Add cocoa; cook stirring constantly, 2 minutes.
  • Remove from heat, whisk in chocolate and then the raspberry puree.
  • Chill in freezer 30 minutes.
  • Freeze in an ice cream freezer according to manufacturers directions.

FROZEN CHOCOLATE-RASPBERRY PIE

Rich hot fudge and a chocolate crust pair perfectly with refreshing raspberry sherbet.

1 quart (4 cups) raspberry sherbet
1 cup hot fudge topping, slightly warmed
1 creme-filled chocolate sandwich cookie crumb crust (6 oz)
1 cup Cool Whip frozen whipped topping, thawed
1/2 cup fresh raspberries

Steps:

  • Let container of sherbet stand at room temperature about 15 minutes to soften. Spoon and spread 1/2 cup of the fudge topping carefully in bottom of crumb crust; place in freezer for 15 minutes to set. Place remaining 1/2 cup fudge topping in small microwavable bowl; refrigerate until serving time.
  • Spoon and spread sherbet over fudge topping in crust. Cover with plastic wrap; freeze 3 hours.
  • To serve, microwave fudge topping on High 10 to 15 seconds or until thin enough to drizzle. Garnish individual servings with dollop of whipped topping, drizzle of fudge topping and several fresh raspberries.
