CHOCOLATE PUDDING TRIFLE
Here's an easy dessert that was the result of an "accident" at the bakery one day. Some small chocolate cakes refused to come out of the their pans (someone forgot to grease and flour!). Sad at the thought of throwing out all that delicious cake, Jennifer assembled layers of broken cake, pudding, whipped cream, and chocolate cookie crumbs. The results were fabulous, and many customers come back asking if any more "mistakes" have been made so they can have their terrific trifle!

Steps:
- Prepare the chocolate cake as recommended above.
- To prepare the chocolate pudding filling: In a large bowl, on the medium speed of an electric mixer, beat the instant pudding and the milk for 3 minutes. Place uncovered in the refrigerator and chill until set, about 15 minutes.
- Meanwhile, in a medium-size bowl, whip the heavy cream with the sugar and the vanilla extract until soft peaks form, being careful not to overwhip.
- To assemble the trifle: Place 1/3 of the cake in the bottom of a large glass bowl. Place over this 1/3 of the pudding mixture, spreading evenly with a rubber spatula. Spread 1/3 of the whipped cream over this. Sprinkle with 1/3 of the cookie crumbs. Proceed in this fashion until three layers have been assembled, ending with a dusting of the cookie crumbs. Refrigerate at least 2 hours, or overnight, before cutting and serving.
LAYERED CHOCOLATE BROWNIE PUDDING TRIFLE
This is a chocolate-lover's dream dessert! If you don't have a trifle dish then use a large glass bowl, I use my recipe#87925 for this, use your own favorite brownie recipe but must be baked in a 13 x 9-inch pan or use a packaged brownie mix. Plan ahead the brownies must be baked and refrigerated until completely cold before slicing, I advise to make the brownies a day in advance. Prep time does not include making the brownies. You can use all chocolate pudding if desired.

- Prepare a large glass trifle bowl or a large glass serving bowl.
- Grease a 13 x 9-inch baking dish.
- Prepare the browninie mix according to package directions.
- Bake in a 13 x 9-inch baking pan until brownies test done.
- Cool to room temperature then refrigerate until completely cold.
- When the brownies are cold cut into about 2-1/2-inch squares.
- Prepare chocolate and cream cheese pudding separately in two bowls using 2-3/4 cups milk for each.
- Line the bottom of the trifle bowl with HALF of the brownie cubes.
- Pour the prepared chocolate pudding over the brownies then sprinkle with 1/3 of the crushed cookies.
- Cover with one 8-ounce container of the Cool Whip topping.
- Layer the remaining brownie cubes over the Cool Whip, then pour the cream cheese pudding over the Cool Whip.
- Sprinkle 1/3 of the crushed cookies over the cream cheese pudding, then top with the second 8-ounce container of Cool whip topping.
- Sprinkle the remaining crushed cookies over the Cool Whip.
- Refrigerate until ready to serve.

- Let the Chocolate Croissant Bread Pudding cool to room temperature.
- Into the trifle bowl, add half of the croissant pudding. Spread it out evenly. Scoop in half of the butterscotch pudding, add a layer of banana slices and half of the chopped snickers bars. Smooth on half of the whipped topping. Repeat the layers, ending on whipped cream, top with a final sprinkling of snickers.
- 6 chocolate croissants, very coarsely chopped
- 1 1/4 cups milk
- 1/2 cup sugar
- 1 tablespoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 3 large eggs
- Preheat oven to 350 degrees F.
- Put chocolate croissant chunks in an 8-inch baking dish. In a medium bowl, whisk together milk, sugar, vanilla, cinnamon, nutmeg, and eggs. Pour mixture over croissants. Let sit for at least 10 minutes.

- 1. Preheat oven to 350 degrees F.
- 2. Put chocolate croissant chunks in an 8x8-inch baking dish. In a medium bowl, whisk together milk, sugar, vanilla, cinnamon, nutmeg and eggs. Pour mixture over croissants. Let sit for at least 10 minutes.
- 3. Bake for 40 minutes. Let cool to room temperature.
- 4. Into the trifle bowl, add half of the croissant pudding. Spread it out evenly. Scoop in half of the butterscotch pudding, add a layer of banana slices and half of the chopped Snickers bars. Smooth on half of the whipped topping. Repeat the layers, ending on whipped cream, top with a final sprinkling of Snickers. (Don't add this last topping until just before serving.)
- 5. Note: I can't find the chocolate croissants here in my little town, so I use regular, plain croissants and add about a cup of semi-sweet chocolate chips. One time I melted 2 squares of semi-sweet chocolate and mixed it in with the egg mixture before pouring over the croissants. Both work well.

- Preheat oven to 300°F In a large bowl, combine graham-cracker crumbs, coconut, pecans, and sugar. Add melted butter, stirring until well combined. Spread mixture on a rimmed sheet pan and bake for approximately 15 minutes until coconut is golden brown, stirring regularly and watching to prevent burning. - 1. Bake cake as directed on box in a 9x13 pan. Cool completely. Cut into 2 inch squares
- 2. While cake is baking, cook the pudding according to directions. Pour into a large wide bowl, cover with wax paper to prevent a "skin" on top. Let cool.
- 3. Start layering with enough pudding to cover the bottom of a trifle bowl. Cover all of the pudding with enough cake pieces. Next spread a thick layer of whipped topping. I use Lite Cool Whip. Continue layering until all the way to the top. You will have some cake left over. Shortly before serving squirt whipped cream all over the top. I crumbled some cake in the center and decorated with cherries. Serves about 12 people.
