Oh my! This is so good, I just can't stop eating it! The perfect treat for a special party or on a warm summer afternoon.

26 Oreo cookies, crushed
1/3 c butter, softened
1/2 gal mint chocolate chip ice cream
1 small jar fudge topping
1 pkg Cool Whip, 8 oz.

Steps:

  • 1. Mix cookies and butter together and pat into glass baking pan 9 x 12 inch.
  • 2. Spread 1/2 gal. ice cream on cookie mixture.
  • 3. Spread with fudge topping and then Cool Whip. Sprinkle 2 crushed Oreo's on whipped cream.
  • 4. Freeze 2 hours.

1-1/2 cups cold milk
1 package (3.9 ounces) instant chocolate pudding mix
1/2 cup miniature semisweet chocolate chips
1 cup heavy whipping cream
1/4 teaspoon peppermint extract

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes; let stand for 2 minutes or until soft-set. Stir in chocolate chips. In a small bowl, beat cream until it begins to thicken. Add peppermint extract; beat until soft peaks form. Fold into pudding., Transfer to an ungreased 8-in. square dish. Cover and freeze for 2 hours or until firm. Remove from the freezer 15 minutes before cutting.
