- In blender, place milk and syrup. Cover and blend on high speed 2 seconds.

CHOCOLATE MILKSHAKES WITH NO ICE CREAM!
Ok, I know it's an oxymoron to say 'frozen' and then 'hot' but this tastes like hot chocolate, except it's icey like a milkshake. I make this, and variables of this shake constantly for my family. This is a delicious, lower fat way to cool off on a hot day, or really wake your mouth up in the morning! Also a wonderful alternative to soda, Kool-aid, etc for the kids!

- Place all ingredients in blender and blend on high until there are no chunks of ice left. ** but make sure you're using ONE OR THE OTHER of either cocoa powder OR chocolate milk mix, NOT BOTH.
- (My blender makes a grumbling sound and then the sound changes when there are no more ice chunks.)** You can change this recipe so many ways to create your own-- add an 1/8 tsp of peppermint extract for a chocolate mint milkshake.
- Add some coffee or 1/2 teaspoon instant espresso powder to make a "Mocha" flavor.
- Omit the chocolate and powdered coffee creamer altogether to make vanilla.
- With a vanilla base, add any kind of berries-- or replace the milk with 1-1/2 cups orange juice & 1/2 cup water to make the best orange julius just like you get in the mall!
- (I don't advise using milk and orange juice together as the acid in the juice will curdle the milk in your stomach!) Play with the amount of sugar, cocoa, etc to create the best taste for you and your family.
DOUBLE CHOCOLATE-MARSHMALLOW MILKSHAKES
Steps:
- Whisk 1/2 cup heavy cream (ideally extra-cold), 1/4 cup marshmallow fluff and 1/8 teaspoon vanilla extract until stiff peaks form; set aside. Combine 1 cup cold whole milk and 1/4 cup chocolate sauce in a blender. Add 3 cups chocolate ice cream; blend until smooth. Fill 4 glasses one-quarter of the way with the shake; add some marshmallow cream, then more milkshake, then cream, then milkshake. Finish with a dollop of marshmallow cream and garnish with grated bittersweet chocolate.

- Break 200g plain chocolate (I used 70% cocoa) into cubes and put into a pan with 600ml full-fat milk. Gently heat until the chocolate melts, then bring almost to the boil, whisking regularly until even and smooth. Can be made ahead, then chilled for up to 2 days.
- Re-heat if necessary, whisking, then ladle or pour into heatproof glasses or mugs. Top with scoops vanilla ice cream and mini marshmallows. Add a nip of rum or brandy for the adults, if you like.

- In a 6-cup capacity blender, combine the chocolate ice cream, milk and cayenne pepper.
- Blend for 15 to 20 seconds until smooth.

VANILLA-BOURBON MILKSHAKES WITH SPICY CHOCOLATE PRETZEL RODS

- Place four 10-ounce glasses in the freezer and line a baking sheet with wax paper. Make the pretzels: Put the chocolate in a microwave-safe bowl; microwave, stirring every 30 seconds, until melted. Let cool until thick but still pourable, then pour into a short, narrow glass and mix in the vegetable oil. Dip the pretzel rods in the chocolate, tilting the glass and twirling the rods to coat. Transfer to the baking sheet and sprinkle with cayenne. Refrigerate until set, at least 20 minutes.
- Make the caramel sauce: Melt the butter with the brown sugar in a small saucepan over medium-high heat and cook, whisking, until the sugar melts. Add the half-and-half and vanilla and bring to a boil; cook until thickened, about 3 minutes. Season with kosher salt and let cool.
- Make the milkshakes: Combine the ice cream, 1/2 cup bourbon, the vanilla and a sprinkle of Maldon salt in a blender. Blend until smooth, adding up to ½ cup more bourbon if desired.
- Pour into the chilled glasses. Drizzle with the caramel sauce, sprinkle with more Maldon salt and garnish with the pretzel rods.
VANILLA-BOURBON MILKSHAKES WITH SPICY CHOCOLATE-DIPPED PRETZEL RODS

- For the pretzel rods: Place four 10-ounce glasses in the freezer and line a baking sheet with wax paper. In a short, very narrow glass or tumbler, stir together the chocolate and vegetable oil. Dip the pretzel rods in the chocolate, tilting the glass and twirling the rods to coat. Transfer to the prepared baking sheet and sprinkle with cayenne. Place in the refrigerator until set, at least 20 minutes.
- For the caramel sauce: Melt the brown sugar and butter in a small saucepan over medium-high heat, whisking until the sugar melts. Add the half-and-half and vanilla and bring to a boil; cool until thickened, 3 minutes. Season with some salt and let cool.
- For the milkshakes: In the bowl of a blender, combine the ice cream, bourbon, vanilla and a sprinkle of Maldon salt. Blend until smooth and frothy, adding milk if necessary to thin. Pour into the chilled glasses.
- Drizzle each milkshake with the caramel sauce, sprinkle with some Maldon, and garnish with a pretzel rod. Serve immediately.

The Swiss are known for chocolate, cream, cheese, jams and kirsh! Liqueur can be a choice of what you enjoy. pick from kirsh, Premium Cresta Swiss Chocolate Liqueur, Absinthe, Goldschläger, Williams, a fruit brandy made from pears, Pflümli aSwiss fruit brandy made from fermented plums, or Himbeergeist a Schnapps made from Swiss ripe raspberries macerated, distilled, and aged in cellars. It is extremely fruity, and it is served as a digestif. Do take note these are all optional. Serve with booze to those of drinking age. I can't wait to see what mixes you create.

- CHOCOLATE SAUCE 1. In a medium saucepan, combine 1 cup water with the sugar and corn syrup. Bring the mixture to a boil, stirring occasionally. Turn off the heat. 2. Stir in the cocoa powder and chopped chocolate. Remove from heat and allow the chocolate to melt completely, whisking occasionally as it cools. 3. Strain the sauce and cool.
