Yield 80 Meringue kisses

4 egg whites
1/4 teaspoon salt
1/4 teaspoon cider vinegar
1/4 teaspoon peppermint extract
1-1/3 cups sugar
1 cup milk chocolate pieces
1 teaspoon shortening
1-1/4 cups crushed striped round peppermint candies* (about 50 candies)

Steps:

  • 1. Place egg whites in a large bowl. Let stand at room temperature for 30 minutes. Preheat oven to 300 degrees F. Line two very large baking sheets with parchment paper or foil; set aside. 2. For meringue: Add salt, vinegar, and peppermint extract to egg whites. Beat with an electric mixer on medium speed until soft peaks form (tips curl). Gradually add sugar, 1 tablespoon at a time, beating on high speed until stiff peaks form (tips stand straight) and sugar is nearly dissolved. 3. Transfer meringue to a decorating bag fitted with a 1/2-inch star tip. Pipe 1-inch kisses 1 inch apart onto the prepared baking sheets. Bake all of the meringue kisses at the same time on separate oven racks for 7 minutes. Turn off oven; let meringues dry in oven with door closed for 1 hour. Lift meringues off paper or foil. Transfer to wire racks; cool completely. 4. In a small saucepan, combine chocolate pieces and shortening. Cook and stir over low heat just until melted. Remove from heat. Spread crushed candy in a shallow dish. Dip bottoms of meringues in chocolate, then dip in crushed candies. Place on waxed paper and let stand until chocolate is set. Makes about 192 meringue kisses. 5. Tip: To crush the peppermint candies, place the unwrapped candies in a resealable plastic bag; seal bag. Using a meat mallet, pound lightly to crush the candies.

6 large egg whites
1 1/4 cups superfine sugar
2 cups (1 twelve-ounce bag) semisweet chocolate chips
Confectioners' sugar, for dusting
Cocoa powder, for dusting

Steps:

  • Preheat oven to 175 degrees. Line several baking sheets with Silpats or parchment paper, and set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat the egg whites on medium speed until they form soft peaks. Sprinkle a few spoonfuls of superfine sugar over the beaten egg whites, and whisk in on low speed to combine.
  • Increase speed of mixer, and continue adding superfine sugar a spoonful at a time, whisking constantly, until all has been incorporated and mixture is firm enough to hold stiff and glossy peaks. Fold in the chocolate chips.
  • Pipe or spoon small mounds of meringue mixture onto baking sheets, spacing mounds about 1 inch apart. Bake meringues until completely dry to the touch, about 3 hours.
  • Transfer sheets to a wire rack to cool completely. Store in an airtight container for up to 3 days. Before serving, dust meringues with confectioners' sugar and cocoa powder.

1 cup confectioners' sugar
Fine salt
1/2 teaspoon pure vanilla extract
2 ounces roasted salted peanuts, finely chopped (1/2 cup)
1/3 cup miniature chocolate chips

Steps:

  • Preheat oven to 350 degrees. In a medium heatproof bowl, combine egg whites, confectioners' sugar, and pinch of salt. Set bowl over (not in) a pot of barely simmering water and cook, whisking constantly, until mixture is warm and frothy and sugar is dissolved, 1 to 2 minutes. Remove bowl from heat and, using an electric mixer, beat mixture on high until stiff, glossy peaks form, about 3 minutes. Beat in vanilla, then fold in peanuts and chocolate. Transfer mixture to a quart-size zip-top bag; with scissors, cut a 3/4-inch hole in one corner.
  • Pipe 30 mounds (1 inch tall and 1 1/2 inches wide), 1 inch apart, on a parchment-lined rimmed baking sheet. Bake, using the handle of a wooden spoon to keep oven door slightly ajar, until dry to the touch, about 20 minutes, rotating halfway through. Let cool completely on sheet on a wire rack before peeling off parchment.

1 tablespoon cocoa powder (sifted)
1 ounce unsweetened chocolate square (melted and cooled)
4 large egg whites
1 pinch salt
1 cup granulated sugar
1 teaspoon vanilla
cocoa powder (for dusting cookie sheets)

Steps:

  • Preheat oven to 300 degrees.
  • Grease three cookies sheets and dust with cocoa powder.
  • Melt the chocolate square and set aside to cool.
  • Beat the egg whites with salt until soft peaks form.
  • Add sugar slowly and beat until mixture very stiff and shiny.
  • Fold in vanilla, melted chocolate, and the 1 tbsp cocoa powder.
  • Drop by heaping teaspoonfulls (2 inches apart) onto prepared cookie sheets.
  • They will have the shape of chocolate kisses.
  • Bake 30 to 40 minutes.
  • Remove cookies from sheets immediately.
  • Cool completely and store in an airtight container.

  • Directions Heat oven to 225° F. With an electric mixer, beat the egg whites and cream of tartar on medium until foamy. Increase speed to high and gradually add the sugar, 1 tablespoon at a time; continue to beat until stiff and glossy, 2 to 3 minutes. Fold in the chocolate chips. Drop mounds of the meringue mixture (each equal to 2 tablespoons) onto parchment-lined baking sheets, spacing them 1 inch apart. Bake until firm and dry, 75 to 90 minutes. 125 grams (1 cup) all-purpose flour, plus more for dusting
100 grams (3.5 ounces) unsalted butter, cold
45 grams (1/3 cup) powdered sugar
Pinch salt
1 egg yolk, lightly beaten
2 egg whites
1/2 teaspoon white wine vinegar
Pinch cream of tartar
110 grams (1/2 cup) superfine sugar
Pink gel food coloring
200 grams (7 ounces) 70% chocolate, chopped
30 grams (1 ounce) unsalted butter
4 tablespoons heavy cream
1 teaspoon sugar
Sliced raspberries, for decorating
Fresh basil or mint leaves, for decorating

Steps:

  • For the pastry: Add the flour, butter, sugar and salt to a stand mixer fitted with the paddle attachment and mix on low speed until the mixture resembles breadcrumbs and the butter pieces are in small chunks. Add the egg yolk and mix until just combined and beginning to stick together, 15 seconds maximum.
  • Remove the dough from the mixer and shape it into a disc. Wrap in plastic wrap and chill in the fridge for at least 1 hour and up to 2 days.
  • Roll out the chilled dough on a floured surface until it is about 1/8 inch thick. Cut out 2 round discs about 5 inches each and lay them over two 4 1/2-inch mini fluted tart tins. Press the dough into the edges, trim off the excess, prick the bottoms in several places with a fork and place in the fridge for 20 minutes.
  • Preheat the oven to 175 degrees C/350 degrees F. Line the pastry with parchment and fill with dried beans. Bake until the pastry edges are golden brown, about 15 minutes. Remove the parchment and beans, brush the pastry with the egg yolk and bake until the base of the pastry is golden brown, about 5 minutes more. Let cool.
  • For the meringue kisses: Preheat the oven to 100 degrees C/210 degrees F.
  • Add the egg whites, vinegar and cream of tartar to a stand mixer fitted with a whisk attachment. Whisk on medium speed until they begin to get frothy, 1 to 2 minutes. As soon as they are frothy, increase the speed to high and slowly add the sugar a teaspoon a time. Keep whisking until you have added all the sugar and the meringue is stiff and glossy, 1 to 2 minutes more.
  • Add some food coloring to the end of a toothpick and run it along the inside of a piping bag fitted with a round tip.
  • Place the meringue in the piping bag and pipe small dollops roughly 1/2 inch in diameter onto a baking sheet lined with parchment. Bake the meringues until they are no longer glossy, have a matte finish and feel light and airy, about 40 minutes. Turn the oven off and allow the meringues to cool inside with the door closed for 20 minutes. (Makes 30 to 40 meringues.)
  • For the chocolate filling: Add the chocolate, butter, cream and sugar to a heat-proof bowl and place it over (but not in) a saucepan pan of simmer water. Gently stir together until melted, 1 to 2 minutes.
  • Pour the mixture into the cooked pastry shells and chill in the fridge for 40 minutes.
  • For the assembly: Place 8 to 10 meringues on top of each chocolate tart. Reserve the remaining for another use. Decorate with some sliced raspberries and basil leaves.
  • If left to chill in the fridge overnight, allow the tarts to sit at room temperature for 20 to 30 minutes before serving.

A variation of meringue cookies especially for Valentine's Day! I bought the freeze dried strawberries from Amazon and used the few I needed. My DGD discovered them and polished off the rest of the bag!! They're kind of like the Red Berries in Special K cereal!

1/8 tsp salt
1/4 tsp cream of tarter
1/4 - 1/3 c sugar (ultra-fine is best)
1/4 tsp strawberry extract
1 Tbsp crushed freeze dried strawberries (available on-line)
red food color, to tint, if desired
1/4 c mini chocolate chips

Steps:

  • 1. Preheat oven to 200ºF.
  • 2. In a glass or metal bowl, whip the egg whites until they're frothy. Add salt and cream of tartar
  • 3. Add sugar, one tablespoon at a time, until stiff peaks form and the meringue looks glossy.
  • 4. Add the extract, the crushed strawberries and a few drops of food color until it looks slightly pink. Add mini-chocolate chips.
  • 5. Scoop into a zip lock bag. Cut off the corner and squeeze kisses onto 2 parchment covered cookie sheets. Bake in oven for 2 hours. Remove and let cool on cookie sheets.

RASPBERRY CHOCOLATE CHIP MERINGUE KISSES



Raspberry Chocolate Chip Meringue Kisses image

I made these and put in party favors bags for a Valentine's Day luncheon a few years ago, then forgot all about the recipe until just today. You could use a piping bag with a decorative tip to make them prettier - but I just dropped them by teaspoons full onto the parchment paper. They weren't so pretty, but nobody complained. You could change up the Jell-O flavors and colors to make them Lime green on St. Pat's Day, or Lemon yellow for Easter. NOTE: Cook Time does not include the 1 hour the kisses need to set up in the oven after baking.

- 3 ½ teaspoons raspberry gelatin (half a small box)
- ¾ cup sugar
- 1 teaspoon vinegar
- drop or two of red food coloring (optional)

Steps:

  • Preheat the oven to 250° F. Line at least two baking sheets with parchment paper.
  • Use a mixer to beat the egg whites with the salt until foamy; adding in the raspberry gelatin and sugar gradually. Beat until stiff peaks form and the sugar is dissolved. Add and beat in food coloring until depth of color desired, is reached. Gently stir in the vinegar. Fold in the chocolate bits.
  • Drop the by teaspoons full onto the baking sheets. Bake for 25 minutes.
  • Turn the oven off but leave the kisses in the oven, without opening the door for 60 minutes longer.
  • Remove from the oven and loosen from the parchment paper.
  • Store in air tight containers or place in cellophane gift bags to hand out at parties.

BITTERSWEET CHOCOLATE WALNUT MERINGUE KISSES

Got this from Better Homes and Gardens. Awesome! Tip: Use a metal, glass or stoneware bowl to mix meringues. Avoid plastic. Key to success is to watch the 'look' of the egg whites. When they have a satin sheen, it's time to add more sugar. If they become lumpy or grainy,you've beated to long. Toss and start over.

  • Heat the oven to 250°F. Line a baking sheet with parchment paper. In a large bowl, with an electric mixer at high speed, beat the egg whites and cream of tartar until soft peaks form, about 5 minutes. Add the sugar substitute, 1 tablespoon at a time, beating until stiff peaks form. Do not underbeat. Whisk in the cocoa powder and vanilla until blended. Fit a large star nozzle onto a pastry bag. Fill the pastry bag with the meringue. Pipe 20 meringues onto the baking sheet. Bake for 30 minutes, or until the meringues are crisp and dry. Turn the oven off and let them cool in the oven for 30 minutes. Remove from the baking sheet. Sandwich pairs of cooled meringues together with 1 teaspoon whipped topping to make a kiss.

ORANGE AND CHOCOLATE MERINGUE KISSES

This was an experiment to use up some egg whites left over from Christmas cookie baking - I love orange and chocolate together. I did not want to make them too colorful, but more coloring can be added if desired.

  • 4. Add the grated orange peel and a few drops of food color until it looks slightly orange. (If the color is too pink, you can always call them Blood Orange and Chocolate Meringue Kisses!)
  • 5. Add mini-chocolate chips.
  • 6. Scoop into a zip lock bag. Cut off the corner and squeeze kisses onto 2 parchment covered cookie sheets.
  • 7. Bake in oven for 2 hours. Remove and let cool on cookie sheets.
