CHOCOLATE-KAHLUA SNOWBALL COOKIES

1/3 cup Kahlua coffee liqueur
2 tablespoons light corn syrup
1 teaspoon instant coffee granules
One 9-ounce package chocolate wafer cookies, finely crushed
1/4 cup sifted powdered sugar
3/4 cup almonds, toasted and chopped
Additional powdered sugar

Steps:

  • In medium bowl, mix Kahlua, corn syrup and instant coffee granules until well blended.
  • In medium bowl, combine cookie crumbs, powdered sugar and almonds. Mix well.
  • Pour coffee mixture over crumb mixture, blending well.
  • Shape dough into 1-inch balls.
  • Roll each ball in powdered sugar two times, making certain to coat each cookie well.
  • Cookies can be stored in an airtight covered container for up to 1 week.

2 tablespoons sugar
2 tablespoons Dutch-processed cocoa
1/4 teaspoon ground cinnamon
Dash ground nutmeg
2 cups 2% milk
2 to 4 tablespoons Kahlua (coffee liqueur)
Optional toppings: marshmallows and miniature marshmallows, salted caramel sauce and chocolate syrup

Steps:

  • In a small saucepan, whisk sugar, cocoa, cinnamon and nutmeg. Gradually whisk in milk; cook and stir until heated through. Remove from heat; stir in Kahlua. Ladle into mugs; serve with toppings as desired.

3/4 cup butter, softened
3/4 cup packed brown sugar
1 large egg, room temperature
1/4 cup 2% milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add the egg, milk and vanilla; mix well. Combine the flour, cocoa, baking powder, salt and baking soda; gradually add to creamed mixture. Cover and refrigerate overnight. , Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake at 350° until tops are crackled, 7-8 minutes. Remove to wire racks to cool completely. Roll in confectioners' sugar.

1/3 cup Kahlua
2 tablespoons light corn syrup
1 teaspoon instant coffee granules
1 (10 ounce) package nabisco chocolate wafer cookies, finely crushed
3/4 cup sifted powdered sugar
3/4 cup chopped almonds, toasted
sifted powdered sugar

Steps:

  • Combine first 3 ingredients; let stand 5 minutes. Stir until coffee granules dissolve.
  • Combine cookie crumbs, 3/4 cup powdered sugar, and almonds; stir well. Pour coffee mixture over crumb mixture, stirring well.
  • Shape into 1-inch balls; roll in powdered sugar twice to coat well. Store in airtight container up to 1 week.

CHOCOLATE WALNUT KAHLUA BALLS (NO BAKE)

I have made these using dark rum, Grand Marnier and Bailey's Irish Cream, you can use any three with success.. I usually make these treats around the holiday season, but of coarse you can make them at any time. I make one batch using semisweet chocolate and one with white chocolate, these really should chill overnight before serving them, you'll be lucky if they make until the next day LOL! Yield is only estimated depending on the size of the balls --- you will LOVE these! :)

1 cup semi-sweet chocolate chips (or use white chocolate chips)
1/2 cup sugar
3 tablespoons light corn syrup
1/2 cup Kahlua (or 1/2 cup dark rum)
2 1/2 cups finely crushed vanilla wafer cookies (measure 2-1/2 cups after crushing, about 10 ounces)
1 1/2 cups walnuts, finely chopped
1/2 cup powdered sugar (can use regular sugar for coating also)

Steps:

  • Stir the chocolate over simmering water in a double boiler until melted and smooth; remove from heat.
  • Whisk in 1/2 cup sugar and corn syrup then the Kahlua.
  • In a small bowl mix together the chopped walnuts and crushed wafers; add in the chocolate mixture and mix well.
  • Shape into small balls.
  • Place powdered sugar in a shallow bowl.
  • Roll each ball in the powdered sugar to coat.
  • Place in an air-tight container and refrigerate overnight.
