CHOCOLATE FILLED WALNUT-OATMEAL BARS
this is a great bar that will fill almost any need. Christmas cookie trays, showers, pot-luck's and family munching.

Steps:
- Heat oven to 350°F Beat butter and brown sugar in large bowl until well blended.
- Add eggs, vanilla and instant coffee and beat until fluffy.
- Stir together oats, flour, baking soda, salt and 1 cup walnuts; gradually stir into butter mixture with spoon (Dough will be thick).
- Set aside 2 cups dough.
- Press remaining dough evenly onto bottom of ungreased 15-1/2x10-1/2x1-inch jelly-roll pan.
- Prepare CHOCOLATE FILLING; spread evenly over dough.
- Crumble reserved dough evenly over filling. Sprinkle with remaining 1/2 cup walnuts. Bake 25 minutes or until top is golden brown (chocolate will be soft).
- Cool completely in pan on wire rack; cut into bars.
- About 4 dozen bars.
- CHOCOLATE FILLING: Melt butter in medium saucepan over low heat. Stir in cocoa and sugar. Add sweetened condensed milk; cook, stirring constantly, until smooth and thick. Remove from heat. Stir in vanilla.

Fudge-filled oatmeal goodness. Makes a lot so you have plenty to share. Great warm with ice cream on top (or even for breakfast since they have oatmeal :).

Steps:
- Heat oven to 350 degrees. Grease and flour a jelly roll pan (10x15 or so).
- In large mixer bowl cream margarine and brown sugar until light and fluffy. Add eggs, vanilla and instant coffee.
- Combine oats, flour, baking soda and salt. Gradually add to creamed mixture.
- Batter will be stiff, stir in last part by hand, if necessary.
- Reserve approximately 2 cups dough. Press remainder evenly over bottom of jelly roll pan.
- Prepare chocolate filling:.
- Melt margarine in medium saucepan over low heat.
- Stir in cocoa and sugar.
- Add sweetened condensed milk.
- Cook, stirring constantly, until smooth and thick.
- Remove from heat and stir in vanilla.
- Spread filling over oatmeal mixture in pan. Sprinkle reserved oatmeal mixture over chocolate.
- Bake 25 minutes or until top is golden brown. Chocolate will stay soft.
CARAMEL FILLED OATMEAL CHOCOLATE CHIP BARS
Steps:
- Preheat oven to 350 degrees. Line an 8 inch square metal pan with foil and spray foil with cooking spray or use non-stick foil. Combine caramels and cream in a small saucepan; cook over medium heat, stirring occasionally, until caramels are melted, about 5 minutes. Let cool. Stir the oats, flour, brown sugar, baking soda, and salt together in a large bowl or bowl of food processor. Blend in butter with a fork or your fingertips until mixture resembles coarse meal. I used the food processor for this step, and so as not to chop the oats too much, added them *after* I'd incorporated the butter. Press half of crumbly mixture onto bottom of lined pan. Bake on center rack for about 20 minutes. Let cool in pan on a wire rack 5 minutes. Sprinkle crust with chocolate chips; drizzle with caramel mixture. Top with remaining crumb mixture and toasted pecans. Bake until pale golden, 20 to 25 minutes. Let cool completely in pan before cutting into squares. (12)

Since I just posted something overly healthy, I figured I'd better post something not so healthy but oh so yummy :)

Steps:
- 1. Heat oven to 350. Beat butter and brown sugar until well blended. Add eggs, vanilla and instant coffee(if using), beat 'til fluffy.
- 2. Stir together oats, flour, baking soda, salt and 1 cup walnuts. Gradually stir into butter mixture, will be thick.
- 3. Set aside 2 cups of dough. Press remaining dough into a 15-1/2x10-1/2 greased jelly roll pan.
- 4. Prepare filling by melting butter in medium sauce pan over medium low heat. Stir in cocoa and sugar. Add condensed milk and continuously stir until smooth and thick. Remove from heat and stir in vanilla. Spread over dough evenly.
- 5. Crumble reserved dough over top and sprinkle with 1/2 cup walnuts. Bake for 25 mins. or until golden brown (chocolate will be soft). Allow to cool before cutting.
CHOCOLATE FILLED OATMEAL BARS

- 1. Preheat oven to 350 degrees. Grease a 9X13" pan. 2. Cream butter, brown sugar and salt. Blend in flour and oats until particles are fine. Press 2/3 of mixture into bottom of pan. 3. Heat condensed milk in saucepan, Stir in chips and nuts. Pour over mixture in pan. Sprinkle with remaining crumbs. 4. Bake for 30-35 minutes until golden brown.
