¾ cup white sugar
2 tablespoons self-rising flour
1 tablespoon cocoa powder, or more to taste
2 cups whole milk
2 eggs, separated
1 teaspoon vanilla extract
1 pre-baked pie shell
1 pinch white sugar, or to taste
1 dash vanilla extract, or to taste

Steps:

  • Mix sugar, flour, and cocoa powder together in a bowl until well combined.
  • Mix milk, egg yolks, and vanilla extract together in a separate large bowl. Add flour mixture and blend custard until smooth.
  • Pour custard into a cast iron skillet over medium heat. Cook, stirring continually, until slightly boiling but not popping, about 5 minutes. Cook just until reasonably thickened, 3 to 5 minutes more, and remove from heat immediately. Stir hot custard to smooth out any lumps and pour into the pre-baked pie shell.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Beat egg whites, sugar, and vanilla extract together in a small bowl until peaks start to form. Spread the thick meringue mixture on top of the custard.
  • Cook under the preheated broiler just until the peaks start to turn light brown, 1 to 2 minutes, being very careful not to let the meringue burn.
  • Place the custard pie in the fridge or on Grandma's porch on a cool night until the custard congeals, about 2 hours.

  • Beat eggs and vanilla extract together in a medium bowl until combined; set aside.

1/2 vanilla bean, split lengthwise, seeds scraped
4 large egg yolks
2 tablespoons granulated sugar
3 ounces best-quality white chocolate, finely chopped
1 1/2 cups heavy cream
1/4 cup crushed cacao nibs
2 tablespoons crushed espresso beans
2 tablespoons high-quality Dutch processed cocoa powder, such as Valrhona or Callebaut
2 tablespoons confectioners' sugar, plus more for serving
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/2 cup high-quality Dutch processed cocoa powder, such as Valrhona or Callebaut
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon fine sea salt
3 large eggs, separated
1/4 cup lightly packed brown sugar
2 cups buttermilk
1/4 cup canola oil
1 teaspoon vanilla extract
4 tablespoons unsalted butter, melted, plus more for the waffle iron
3 ounces bittersweet chocolate, finely chopped

Steps:

  • For the white chocolate custard sauce: Combine the half-and-half and vanilla bean and seeds in a small saucepan over medium heat and bring to a simmer. Remove from the heat and let cool slightly.
  • Whisk together the egg yolks and granulated sugar in a medium bowl until pale yellow. Slowly whisk in some of the warm half-and-half mixture until smooth. Pour the mixture back into the saucepan and cook over medium heat, stirring with a wooden spoon, until it thickens slightly and coats the back of the spoon. Do not boil. Remove from the heat, add the white chocolate and whisk until smooth. Strain into a bowl, cover, and chill until cold.
  • For the chocolate-espresso whipped cream: Combine the cream, cocoa nibs and espresso beans in a small saucepan and bring to simmer. Immediately remove from the heat and refrigerate until cold. Strain the cream into a chilled bowl, add the cocoa powder, confectioners' sugar and vanilla and whip to soft peaks.
  • For the dark chocolate waffles: Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Whisk together the egg yolks and brown sugar until smooth. Add the buttermilk, oil and vanilla and whisk until combined. Add the wet mixture to the dry mixture and mix until just combined. Fold in the butter and chocolate.
  • Whip the egg whites in a medium bowl until soft peaks form. Fold the whites into the batter.
  • Heat a waffle iron according to the manufacturer's instructions. Brush the grates with butter and ladle 1/4 cup of batter in each grate, close, and cook until crisp and browned and steam stops coming from the waffle iron, 4 to 5 minutes. Repeat with the remaining batter. Serve with the custard sauce, whipped cream, some strawberries and a dusting of confectioners' sugar.

1 teaspoon pure vanilla extract
3 large egg yolks
1/4 cup sugar
Pinch of salt
3 ounces semisweet chocolate, melted

Steps:

  • Preheat oven to 325 degrees. Bring a kettle of water to a boil. In a medium saucepan, bring half-and-half and vanilla just to a boil. Remove from heat.
  • Place egg yolks, sugar, and salt in a medium bowl. Beat until light, then whisk in chocolate. Whisking constantly, gradually add hot half-and-half mixture. Skim any foam from surface.
  • Divide mixture among four (6-ounce) custard cups, and place in a baking dish just large enough to hold them. Place in oven, and pour enough boiling water in dish to come halfway up sides of cups. Drape a sheet of aluminum foil over top of baking dish (do not seal).
  • Bake custards until just set but still slightly wobbly, 40 to 45 minutes. Remove cups from dish; refrigerate until chilled, at least 2 hours.

3 ounces best-quality semisweet chocolate, chopped coarse
3/4 cup heavy cream
1 1/4 cups milk
6 tablespoons sugar
1 1/2 teaspoons instant espresso powder
6 large egg yolks
1 large whole egg
whipped cream (optional)

Steps:

  • Preheat oven to 320 degrees F.
  • Melt chocolate over low heat.
  • In a saucepan, combine cream, milk and 2 tblsps sugar and bring to bare simmer, stirring occasionally.
  • In a small bowl combine 2 tblsps of the milk mixture with the espresso powder and stir into the milk mixture with the chocolate.
  • In a large bowl, whisk together the egg yolks, egg, and remaining ¼ cup sugar for 1 minute, or until the mixture is blended well.
  • Add milk mixture in a stream, whisking, and strain through a fine sieve into a large measuring cup.
  • Spoon off the froth and pour into six 5-ounce custard cups.
  • Cover cups with foil.
  • Arrange cups in a baking pan and pour hot water around them to reach halfway up sides.
  • Bake for 20-25 minutes, or until just set.
  • Remove from oven, let cups sit in hot water for 10 minutes, remove, and let cool completely.
  • Chill 3 hours and garnish with a dollop of whipped cream, if desired.

  • Preheat oven to 325°. Grease and flour a 10-in. plain or fluted tube pan. In another bowl, beat sugar, oil and butter until well blended.   • For sauce:
  • Whisk egg yolks and 2 tablespoons sugar in medium bowl to blend well. Combine milk, cream, tea leaves, and remaining 1/2 cup sugar in heavy medium saucepan. Bring to simmer over medium heat, stirring until sugar dissolves. Gradually whisk hot milk mixture into egg yolk mixture; return to same saucepan. Stir over medium-low heat until custard thickens enough to leave path on spoon when finger is drawn across, about 8 minutes (do not boil). Immediately strain sauce into small bowl. Refrigerate uncovered until cold, at least 4 hours. (Can be made 1 day ahead. Cover and keep refrigerated.)
  • For soufflé:
  • Preheat oven to 375°F. Generously butter 6-cup soufflé dish; coat dish with sugar. Combine milk and 5 tablespoons sugar in heavy medium saucepan. Stir over medium-low heat until sugar dissolves and milk comes to simmer. Remove from heat; add both chocolates and stir until melted and smooth. Whisk in egg yolks.
  • Using electric mixer, beat whites in medium bowl until soft peaks form. Gradually add 3 tablespoons sugar, beating until stiff but not dry. Fold whites into warm chocolate mixture in 3 additions. Transfer mixture to prepared dish.
  • Bake soufflé until just set in center and top is puffed and cracked all over, about 32 minutes. Serve soufflé immediately with custard sauce.

Steps:

  • Heat oven to 325°F. Line 8-inch square pan with cooking parchment paper, and grease with butter or cooking spray.
  • In medium bowl, mix flour, cocoa powder, espresso powder and ground cinnamon with whisk. Set aside.
  • In large bowl, beat egg whites to stiff peaks. Set aside.
  • In another bowl, beat egg yolks and powdered sugar until pale and smooth. Add butter and vanilla; beat until combined. Add dry ingredients; beat until just combined. Mixture will be very thick.
  • With mixer on low speed, slowly add milk. Mix until smooth. With whisk, add egg whites in 3 additions, beating with whisk just until no large lumps remain. Mixture may appear slightly curdled. Pour into pan.
  • Bake 50 to 60 minutes or until cake appears dry on top and slightly jiggles when shaken. Cool completely, 2 to 3 hours; refrigerate until ready to serve. To serve, sprinkle with powdered sugar, and top with whipped cream and berries.

GRAHAM CRACKER CRUST:
1 1/2 c graham cracker crumbs or zwiebach cookie crumbs
1/4 c confectioner's sugar
6 Tbsp melted butter
1 tsp cinnamon, ground
SOAK AND SET ASIDE:
1 Tbsp gelatine (knox)
1/4 c water
FOR MAKING CUSTARD:
SCALD:
2 c milk
SEPARATELY COMBINE:
1/2 c sugar
4 tsp cornstarch
SEPARATELY BEAT UNTIL LIGHT:
4 whole eggs
AFTER CUSTARD IS MADE, AND ONE CUP IS REMOVED, ADD:
1 1/2 squares of unsweetened chocolate
1/2 tsp vanilla
FOR TOP LAYER OF CUSTARD:
1 Tbsp rum extract
3 beaten egg whites
1/4 tsp salt
1/4 tsp cream of tartar
1/4 c sugar
GARNISH:
1 1/2 c whipped cream, sweetened
1/4 c shaved milk chocolate

Steps:

  • 1. GRAHAM CRACKER CRUST: Combine all 4 crust ingredients and press into 8 or 9 inch pie plate
  • 2. MAKE CUSTARD: Stir the scaled milk slowly into the beaten eggs then stir in the sugar mixture and cook in double boiler over hot water stirring occasionally for about 20 minutes or until custard coats the spoon
  • 3. REMOVE one cup of hot custard and set aside for the top layer
  • 4. To remaining hot custard still in the pan add 1 1/2 squares of dark baking chocolate (can use sweetened or milk chocolate if prefer) -- beat until well blended, then let cool
  • 5. Add 1/2 tsp vanilla and pour choc custard into the pie shell
  • 6. SECOND OR TOP LAYER OF CUSTARD: add dissolved gelatine to 1C of plain custard that was set aside before -- then add 1T of rum extract and mix well
  • 7. In a separate bowl, beat the egg whites until stiff, adding the salt, cream of tartar, and sugar, one teaspoon full at a time until all is incorporated.
  • 8. Fold the egg-white mixture into the custard-with-rum mixture and pour it on top of the chocolate layer and place in refrigerator to cool
  • 9. After the pie has set up, cover the top with whipped cream and shaved chocolate just before serving.

  • Preheat oven to 425° F. Butter four 3/4-cup custard cups. Dust with flour; shake out excess. Combine chocolate, butter and salt in top of double boiler set over simmering water. Stir until chocolate is melted and mixture is smooth. Remove from over water. Cool 10 minutes.
  • Beat egg yolks and 3 tablespoons sugar in large bowl until thick and light, about 2 minutes. Fold in chocolate mixture. Using electric mixer fitted with clean, dry beaters, beat egg whites and 1 tablespoon sugar in medium bowl until stiff but not dry. Gently fold whites into chocolate mixture in 3 additions. Divide batter among prepared cups.
  • Place custard cups on baking sheet. Bake until cakes are puffed but still soft in center, about 11 minutes. Transfer baking sheet to rack; cool cakes 1 minute.
  • Using small knife, cut around sides of cakes to loosen. Place plates on top of cups. Invert cakes onto plates; remove cups. Spoon Coffee Custard Sauce around cakes. Top with whipped cream, if desired.

5 egg yolks

2/3 cup sifted all-purpose flour
2 tablespoons butter

Steps:

  • Prepare basic cream puff recipe as above. Let cool.
  • Heat milk in large heavy saucepan until bubbles appear around edge. Beat egg yolks and sugar in a large bowl with wire whisk or mixer until pale yellow and thick. Beat in flour until well mixed. Gradually beat in hot milk; pour all back into saucepan. Cook, stirring constantly, over moderately high heat until mixture thickens and comes to boiling, lower heat. Mixture will be lumpy in the beginning, but lumps disappear during cooking and stirring. Continue cooking 2 to 3 minutes, over low heat, stirring constantly. Mixture will be quite thick.
  • Remove from heat. Stir in butter and vanilla. Place a piece of wax paper directly on surface of filling to prevent skin from forming.
  • Chill at least 2 hours. If filling becomes too stiff after it's chilled, gradually stir in 2 to 4 tablespoons cream or milk, 1 tablespoon at a time.
  • To make chocolate filling following the directions for Vanilla Custard Filling, adding 1tbs + 1tsp chocolate coco powder stirring until combine. Continue with rest of recipe. Fill puffs just before serving.

1/4 teaspoon cream of tartar
1 1/4 cups milk
1/3 cup chocolate flavored syrup
1/4 cup all-purpose flour
3/4 teaspoon vanilla extract

  • In small mixing bowl at high speed, beat egg whites with cream of tartar until stiff but not dry, just until whites no longer slip when bowl is tilted.
  • In small mixing bowl, at high speed, blend or beat yolks, milk, syrup, flour, and vanilla until smooth.
  • Gently, but thoroughly, fold into beaten whites.
  • Place 6 (6 ounces) lightly greased custard cups in large baking pan.

1/4 cup sugar
1/4 cup unsweetened cocoa
1/8 teaspoon salt
1 1/2 cups milk, very hot (or regular soy milk)
1 teaspoon vanilla extract

Steps:

  • Lightly grease a 1 quart baking dish or 4 ramekins.
  • Preaheat oven to 325 degrees F.
  • Fill a 9x13 pan with 1 inch hot water and put it in the oven.
  • Beat the eggs just enough to blend.
  • Stir in the sugar, cocoa, and salt.
  • Slowly add the hot milk, stirring constantly.
  • Stir in the vanilla.
  • Pour into the baking dish or ramekins and place in the pan with hot water.
  • Bake 55-60 minutes until a knife comes out clean.
  • It will firm up as it cools.

This is a variation of a well-known Greek dessert which is very economical to make with a layer of soaked crispbreads in syrup, a custard layer and topped with jelly (jello). It takes a little time to make but is great in summer as it is very refreshing.

12 -14 melba crackers (mine were about 6x9cm)
1 cup water
1 cup sugar
1 tablespoon chocolate liqueur (can use brandy , other liqueur or omit)
6 cups milk
10 -12 tablespoons sugar
120 g custard powder
1 teaspoon vanilla essence
2 tablespoons butter (separated)
50 g chocolate couverture
1 tablespoon cocoa powder
2 (85 g) banana jelly
2 cups boiling water
2 cups cold water

Steps:

  • First make the base. Arrange the crispbreads on the bottom of a rectangular baking dish or plastic tupperware container cutting some in half so that the entire base is covered.
  • Add water and sugar to a small saucepan and boil for 5 minutes. Take off heat and add liqueur. Allow to cool slightly.
  • Using a tablespoon, gently pour a small amount of syrup over each crispbread until it is totally covered. Leave for 5 minutes and repeat process. There may be some syrup left over depending on how thick your crispbread is.
  • Next prepare the jelly. Empty 2 packets into a bowl and add boiling water. Stir until the jelly crystals have dissolved, and then add the cold water.
  • Leave the jelly out of the refrigerator to slowly cool down while you make the custard.
  • Heat 4 cups of milk in a saucepan until quite warm.
  • In a separate bowl add the custard powder to the remaining 2 cups of milk and dissolve well.
  • Add custard-milk mixture into hot milk and stir immediately.
  • Add the sugar while continuously mixing.
  • When the custard thickens add the butter and mix well.
  • Tip about half the custard into another bowl and add the vanilla essence.
  • In the original saucepan add the couverture and cocoa powder and stir until well combined and smooth. (You can add an extra tablespoon of sugar if you like).
  • Pour chocolate custard over soaked crispbreads spreading it out evenly. Put into the fridge to cool.
  • Cover the vanilla custard with cling wrap so that it doesn't get a skin.
  • Once cool, cover the chocolate layer with the vanilla custard and put back into the fridge.
  • Once the custard is cool, very gently add the jelly layer over the top. The jelly should have cooled down and slightly thickened. Start by adding a ladle full in one corner. The jelly should not penetrate the custard layer, if it does start to run into the custard put it back into the fridge and wait until it cools further.
  • Slowly add all the jelly until a yellow layer has formed over the custard covering it completely.
  • Refrigerate for 4 hours or preferably overnight.
  • Slice and serve.

1 1/3 cups ground chocolate wafer cookies
1/4 cup (1/2 stick) butter, melted
For Filling:
2/3 cup dried currants
3 tablespoons plus 1 teaspoon bourbon
1/3 cup dark corn syrup
3 large egg yolks
3/4 cup half and half
9 ounces bittersweet (not unsweetened) chocolate, finely chopped
1/4 teaspoon ground nutmeg
1/2 cup chilled whipping cream
Bittersweet chocolate curls
Powdered sugar
For Orange Custard Sauce:
1 1/2 cups half and half
6 tablespoons sugar
6 large egg yolks
1 teaspoon grated orange peel

Steps:

  • For Crust:
  • Preheat oven to 350° F. Spray vegetable oil spray on 9-inch-diameter tart pan with removable bottom. Combine ground cookies and butter in processor; blend until very moist crumbs form. Using plastic wrap as aid, press crumbs firmly onto sides, then bottom of prepared pan. Chill 15 minutes. Bake until set, about 8 minutes. Cool.
  • For Filling:
  • Mix currants and bourbon in heavy small saucepan. Bring to simmer over low heat. Cover and set aside. Whisk corn syrup and egg yolks in medium bowl. Bring half and half to simmer in another heavy small saucepan. Gradually whisk half and half into yolk mixture. Return mixture to same saucepan and stir over medium-low heat until custard thicken and leaves path on back of spoon when finger is drawn across, about 4 minutes (do not boil). Pour into large bowl. Add chopped bittersweet chocolate and nutmeg, whisk until melted and smooth. Mix in currants and bourbon. Chill just until cool, stirring occasionally, about 15 minutes. Whip cream in medium bowl to stiff peaks. Fold cream into chocolate mixture. Transfer filling to crust. Chill until firm, at least 4 hours or overnight.
  • Gently press up tart pan bottom to loosen tart. Remove pan sides. Transfer tart to platter. Top with chocolate curls. Sift powdered sugar over. Serve with Orange Custard Sauce.
  • For Orange Custard Sauce:
  • Bring half and half to simmer in heavy medium saucepan. Whisk sugar and yolks in small bowl. Gradually whisk in hot half and half. Return mixture to saucepan and stir over medium-low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 3 minutes (do not boil). Strain into bowl. Mix in peel. Cover and refrigerate until cold. (Can be prepared 2 days ahead. Keep refrigerated.) Makes about 1 1/2 cups.

300g stoned date , chopped
6 large eggs , separated
350g light muscovado sugar
200g wholemeal flour
2 tsp baking powder
100g cocoa
5 tbsp custard powder
5 tbsp light muscovado sugar
50g cocoa powder
1.2l skimmed milk

Steps:

  • Cover the dates with boiling water and set aside to soften for 30 mins.
  • Heat oven to 160C/140C fan/gas 3 and line a 20 x 30cm baking tin with baking parchment. Drain the dates, reserving the liquid, then whizz the dates to a purée with 100ml of the soaking liquid.
  • Beat the egg whites in a large bowl with an electric whisk until stiff peaks hold on the end of your whisk. Add half the sugar and beat until thick and glossy.
  • In another bowl, beat the yolks and remaining sugar until pale. Whisk in the mashed date mixture, then fold into the egg white mixture until well combined. Mix the flour, baking powder and cocoa with a pinch of salt. Sprinkle over the wet mixture and very gently fold in until well combined. Gently scrape into the tin and spread to the edges. Bake for 35-40 mins until a skewer poked in comes out clean.
  • Meanwhile, mix the custard powder, sugar and cocoa together in a saucepan. Stir in dribbles of milk until you get a smooth paste. Gradually add more milk until it's all incorporated with no lumps. Put over a medium heat and warm, stirring constantly, until thick and just bubbling.
  • Cut the warm cake into slabs and pour over the hot chocolate custard to serve.

¼ cup sifted cocoa powder
¼ teaspoon salt
¼ teaspoon ground cinnamon
6 large eggs, at room temperature

1 cup whole milk
½ cup heavy cream

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Use 1 tablespoon butter to grease a 9x13-inch pan.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a double boiler, heat together the milk and chocolate until chocolate is melted.
  • In a 10x16 inch oven baking bag, combine 1/4 cup sugar, cinnamon and nutmeg. Mix in the bread and nuts.
