1 cup tightly-packed pitted dates
1 ¼ cups finely chopped cashews
1 teaspoon vanilla extract
½ teaspoon salt
2 tablespoons chocolate chips, or more to taste

Steps:

  • Place dates in a bowl and cover with several inches of cool water until soft, 30 to 60 minutes. Drain, squeeze out extra liquid, and reserve. Chop dates into a thick paste.
  • Combine dates with cashews, vanilla extract, and salt in a bowl. Fold in chocolate chips. Press mixture firmly into a parchment paper-lined 8-inch baking pan until compact. Refrigerate until set, 1 hour to overnight.
  • Cut into bars.

1 pkg pitted dates
1 1/4 t. baking soda
1 1/4 c. water
1 c. sugar
2 eggs
1 1/4 c. flour
1 t. vanilla
1/2 c. oatmeal
6 ounces miniature choc chips
6 ounces miniature choc chips (again)
1 T. sugar
3/4 c. walnuts, chopped

Steps:

  • 1) Boil/cool dates, soda, & water. 2) Cream together sugar & butter. 3) Add eggs, flour, & salt. 4) Add cooled date mixture. 5) Stir in vanilla, oatmeal, & 6 ounces choc. chips. 6) Pour into greased 9 X 13 baking pan. Mix together 1 T sugar, walnuts and 6 oz chocolate chips, and sprinkle on top of batter. 7) Bake in 350 degree oven for 35 minutes.
