Simple to make with only three ingredients with a variety of uses. Great to use over Bundt cake because it sets up nicely. The extra sauce may be refrigerated and reheated to serve over ice cream or your favorite dessert. I came up with this once when I didn't have any confectioner's sugar to make a glaze for a Bundt cake.

1 cup semisweet chocolate chips
1 teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat, combine the sweetened condensed milk and chocolate chips. Cook, stirring constantly, until the chips are melted and the mixture is smooth. Do not allow it to bubble. Remove from the heat and stir in vanilla. Cool slightly before drizzling over a cake. If you want to make this ahead, it can be cooled and reheated in the microwave.

1 (4 ounce) package instant chocolate pudding mix
2 cups semi-sweet chocolate chips
1 3/4 cups water

1 cup powdered sugar (10X)
2 -3 tablespoons hot water

Steps:

  • Cake: Preheat oven to 350°.
  • Grease and flour bundt pan, set aside.
  • In large mixing bowl, combine cake mix, pudding mix and chocolate chips.
  • In another bowl, combine water, eggs, and vanilla mixing well.
  • Add egg mixture to dry mixture and mix with spoon until just blended.
  • Pour into prepared pan.
  • Bake for 50 to 55 minutes or until cake tests done when wooden pick in center comes out clean.
  • Cool 15 to 20 minutes before removing cake from pan.
  • When completely cool, drizzle cake with Chocolate Glaze.
  • Chocolate Glaze: Combine all ingredients in bowl.
  • Mix with spoon until smooth.

2 tablespoons flour
1 teaspoon cocoa
1 (18 ounce) box devil's food cake mix
1 (4 ounce) box instant chocolate pudding mix
1 cup vegetable oil
4 eggs
1/2 cup hot water
1 cup sour cream
1 teaspoon vanilla extract
1 cup chocolate chips
1 1/2 cups powdered sugar
1/2 teaspoon peppermint extract or 1/2 teaspoon peppermint extract, to taste
2 tablespoons crushed candy canes (optional)

Steps:

  • Preheat oven to 350 degrees (175 degrees C).
  • Grease and flour a Bundt pan- mix the cocoa with the flour so it doesn't leave a white coating on the cake.
  • Combine cake mix, pudding mix, oil, eggs, water, sour cream, and vanilla.
  • Beat until smooth.
  • Stir in chocolate chips by hand.
  • Pour batter into prepared pan.
  • Bake for 1 hour- but check it after 55 minutes just in case.
  • Allow to cool.
  • In a medium bowl, mix powdered sugar with peppermint extract (to taste- adjust as necessary), then mix a few drops of hot water.
  • Stir stir stir.
  • If it's too thick, add another couple drops of water.
  • Drizzle over turned out cake.
  • Sprinkle with crushed candy canes, if you got`em.

2 lemons, sliced into 1/4-inch-thick rounds
Nonstick vegetable oil spray
1 cup (2 sticks) unsalted butter, room temperature
2 cups sugar
4 eggs, room temperature
1 cup buttermilk, room temperature
1 teaspoon pure vanilla extract
Zest of 2 lemons
1/4 cup fresh lemon juice (about 2 lemons)
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/2 cup bittersweet chocolate chips
1/2 cup whipping cream

Steps:

  • For the candied lemon: Combine the sugar and water in a small saucepan and bring to a boil over medium heat, stirring to dissolve the sugar. Add the lemon slices and simmer until tender, 5 to 8 minutes. Transfer to a wire rack to drain. Let cool to room temperature, about 15 minutes. Finely chop the candied lemon slices. Set aside.
  • For the cake: Preheat the oven to 350 degrees F. Lightly spray a nonstick Bundt pan with vegetable spray.
  • In a stand mixer fitted with a paddle attachment or using a hand mixer, beat together the butter and sugar on medium speed until light and fluffy, about 3 minutes. Mix in the eggs, one at a time, scraping down the sides of the bowl as needed. On low speed, slowly add the buttermilk and the vanilla. Stop the mixer, add the lemon zest and juice, and mix to incorporate. With the mixer on low, add the flour, one cup at a time, until combined. Finally, add the baking powder, baking soda and salt. Raise to medium speed and mix for 1 minute, until the batter is fluffy and smooth. Mix in the chopped candied lemons.   • For the glaze: Place the chocolate chips in a medium bowl. Bring the cream to a simmer in a small saucepan over medium-high heat. Once bubbles have formed around the edges of the cream, pour it over the chocolate. Whisk the cream and chocolate together until smooth. Pour the glaze over the Bundt cake, using a spatula or spoon to push the glaze down the sides and center of the cake.

It is great for last minute company or when you need a dessert quickly. This makes a yellow cake with chocolate chips and then can use optional chocolate glaze.

8 ounces sour cream
4 eggs

8 ounces mini chocolate chips (semi-sweet is what I use, but could use milk or dark chocolate chips)
1/2 cup mini chocolate chip (4 ounces)
1 1/2 tablespoons butter
1 1/2 tablespoons light corn syrup (if still too thick, add another 1/2 TBS)

Steps:

  • Preheat oven to 350 degrees and grease your bundt pan.
  • For the cake, mix all ingredients (except chocolate chips) together.
  • Fold in the chocolate chips, pour into bundt pan.
  • Bake for 45-60 minutes. (oven temperatures vary, check at 45 mins.).
  • Allow cake to cool completly.
  • For optional glaze, put butter, chips and light corn syrup in microwave safe container (I use 1 cup glass measuring cup) and cook on high for 20 second . Stir and if all chips and butter are melted, glaze is smooth, then drizzle over cake, if not, microwave 10 seconds longer and stir. Allow glaze to cool and harden before covering cake with plastic wrap.

Generously coat a 9- to 10-inch (12 cup) Bundt pan with baking spray (the kind that includes flour). 2.Using a box grater or food processor, grate the zucchini (you should end up with approximately 3 cups). Stir in 2 tablespoons sugar and place in a large colander set over a bowl. As you prepare the rest of the batter ingredients, the sugar will draw the moisture out of the zucchini. Occasionally press down on it to squeeze more water into the bowl. 3.Finely chop unsweetened chocolate, place in a bowl, and heat in the microwave for 30 seconds; stir. Heat in additional 15-second increments, stirring after each one, until chocolate is completely melted and smooth. Allow to cool. 4.In a medium bowl, whisk together whole wheat pastry flour, cocoa powder, baking soda, and salt. In a large bowl, use an electric mixer to blend together eggs, sugar, melted chocolate, melted butter, applesauce, and vanilla until smooth. Mix in drained zucchini. Turn mixer down to low and stir in half of the flour mixture, followed by all of the sour cream and then the remaining flour mixture. In a small bowl, toss mini chocolate chips with tablespoon of flour. Add to batter and mix until just incorporated, taking care not to overbeat. 5.Evenly pour/spread batter into prepared pan, place in preheated oven, and bake for 1 hour, or until a toothpick inserted in center comes out clean. Remove cake from the oven and allow it to rest on a cooling rack for 10 minutes before turning it out onto the rack to finish cooling. For the glaze: 6. In a small pot, melt butter over low heat. Remove pot from heat and add chocolate chips, stirring until they are melted and combined with butter. Stir in corn syrup and vanilla until smooth. Immediately pour glaze over warm cake, gently spreading it so that it trickles down sides. Allow cake and glaze to cool completely before slicing.

When I saw this cake on Pinterest I knew I had to make it. It looks like a zebra print when sliced, really very unique. We took this cake to our dentist office on Valentine's Day as a special treat for them. They do a great job in taking care of us and we wanted to let them know how much we appreciate them. They dug into it...

3 c cake flour
2 tsp baking powder
1/2 tsp salt
2 1/2 c sugar
1/2 c cocoa powder
6 Tbsp water
1 c butter (2 sticks) melted
1/2 c crisco shortening (solid) melted
1 1/2 tsp vanilla extract
5 large eggs, room temperture
1/2 c milk
GLAZE
2 oz semi-sweet baking chocolate, chopped fine
1 Tbsp corn syrup, light
1/4 c heavy cream
1 Tbsp sugar

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour bundt pan. NOTE: I used a 10 to 15 cup bundt pan.
  • 2. Combine cake flour, baking powder and salt in a bowl. Whisk to mix together; set aside.
  • 3. In another bowl or large mixing cup; combine 1/2 cup sugar, 1/2 cup cocoa and 6 tablespoons water. stir to make paste; set aside.
  • 4. Melt butter and crisco together; cool.
  • 5. In the bowl of your mixer, cream the cooled butter/crisco mixer with remaining 2 cups of sugar. Add vanilla.
  • 6. Add eggs one at a time, beating well (but not over beating) after each addition. NOTE: Overbeating eggs can lead to a dry cake.
  • 7. Turn mixer to low and add 1/3 of the flour mixture and then 1/2 of the milk. Repeat until all flour and milk have been incorporated ending with the flour mixture.
  • 8. Remove 2 heaping cups of the batter and mix into the chocolate mixture.
  • 9. To get the zebra effect; using a cookie scoop, start with 1 scoop of the white batter and then add 1 scoop of the chocolate into the middle of the white batter. Repeat layering, always placing the next scoop batter into the middle of the last scoop of batter. Keep layering until you have used up all the batter.
  • 10. Bake for 50 to 60 minutes at 350 degrees. Test with a toothpick or cake tester to ensure it's done. Insert tester in center of cake, it's done when the tester comes out clean.
  • 11. Remove from oven; cool. Invert onto plate and add glaze.
  • 12. GLAZE: Place the chocolate and corn syrup in a medium bowl; set aside.
  • 13. In a small sauce pan combine the heavy cream and sugar; cook over medium heat, stirring constantly until very hot (but not boiling) and sugar has dissolved. Remove from heat and pour over the chocolate. Whisk until chocolate has melted and mixture begins to thicken. Drizzle over cake. Add candy sprinkles if desired.

5 ounces bittersweet chocolate, chopped
3/4 cup canola oil
1 cup sugar
1 large egg
2 cups all-purpose flour
1/2 cup Dutch-process cocoa powder
1 tablespoon baking soda
3/4 teaspoon salt
1 cup strong-brewed coffee
1 cup buttermilk
1/3 cup heavy cream
1/2 tablespoon corn syrup
1/2 tablespoon unsalted butter

Steps:

  • Directions Preheat the oven to 350°. Spray a 12-cup Bundt pan with vegetable oil spray. In a small saucepan, melt 2 ounces of the chopped chocolate over low heat, stirring constantly. Scrape the chocolate into a medium bowl and let cool slightly. Whisk in the oil and sugar until smooth, then whisk in the egg. In a small bowl, whisk the flour, cocoa powder, baking soda and salt. Add half of the dry ingredients to the chocolate mixture along with 1/2 cup of the coffee and 1/2 cup of the buttermilk; whisk until smooth. Add the remaining dry ingredients, coffee and buttermilk and whisk until smooth. Pour the batter into the prepared pan and bake in the lower third of the oven for about 45 minutes, or until a toothpick inserted in the center of the cake comes out with a few moist crumbs attached. Let the cake cool on a rack for 10 minutes, then turn it out and let cool completely. In a small saucepan, bring the cream to a boil. In a heatproof bowl, combine the remaining 3 ounces of chopped chocolate with the corn syrup and butter. Pour the hot cream over the chocolate and let stand until melted, about 5 minutes. Whisk until smooth. Let the ganache glaze cool until thick but still pourable, about 5 minutes. Pour the ganache over the cooled cake.Let the cake stand until the glaze is set, at least 30 minutes, before serving. Make Ahead The glazed cake can be stored in an airtight container for 3 days.
