6 WEEK CHOCOLATE CHIP BRAN MUFFINS

6 Week Chocolate Chip Bran Muffins image

A wonderful mom from my school gave me this recipe years ago. When I lost it, I called her up and asked her for it again. She laughed and supplied it immediately. I tell kids these are chocolate chip muffins and never mention the bran and oatmeal. It makes a huge batch be prepared. It is supposed to last in the refrigerator for at least 6 weeks - but I always go through it faster than that.

CHOCOLATE BRAN MUFFINS (DAIRY- AND SOY-FREE)

Chocolate Bran Muffins (Dairy- and Soy-Free) image

I keep trying to make bran muffins more interesting... Obviously, you could use dairy and/or soy products instead. The almonds are there because I like a little texture and protein. You could just use another 1/4 c of flour or bran. The original bran muffin recipe called for 1/4 of honey or molasses, but I like to cut down on sugar so I use the applesauce instead. Enjoy Life brand makes dairy- and soy-free chocolate chips if you don't like carob.
