CHOCOLATE CHIP AND WALNUT BANANA BREAD MUFFINS
These muffins are so moist and delicious there are never any leftovers. I am a person that does not like an overabundance of banana flavour so these were just right. You can also make this into a banana loaf as well. Adapted from a recipe I found on the Food Network.

Steps:
- Sift the flour, baking soda and salt into a bowl. Set aside.
- Whisk the eggs and the vanilla together. Set aside.
- Preheat oven to 350°F.
- Cream together the butter and sugar until light and fluffy (I use a Kitchen Aid stand mixer for this).
- Gradually pour the egg mixture into the butter while mixing until incorporated.
- Add the bananas and stir until incorporated.
- Mix in the flour mixture until just incorporated with a spatula.
- Pour in the walnuts and chocolate chips and gently fold into mixture.
- Place mixture in a paper-line muffin tray and bake for about 20 minutes or until a toothpick comes out clean. (All tray sizes and ovens are different so keep an eye on them).

Steps:
- Preheat oven to 350°F. Butter and flour 9x5x2 1/2-inch metal loaf pan. Whisk first 4 ingredients in medium bowl to blend. Combine chocolate chips and walnuts in small bowl; add 1 tablespoon flour mixture and toss to coat.
- Beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs 1 at a time. Beat in mashed bananas, lemon juice and vanilla extract. Beat in flour mixture. Spoon 1/3 of batter into prepared pan. Sprinkle with half of nut mixture. Spoon 1/3 of batter over. Sprinkle with remaining nut mixture. Cover with remaining batter. Run knife through batter in zigzag pattern.
- Bake bread until tester inserted into center comes out clean, about 1 hour 5 minutes. Turn out onto rack and cool.
BANANA AND CHOCOLATE BREAD PUDDING
Steps:
- Place bread into a bowl and drizzle with melted butter, mix well to coat.
- In another bowl, whisk eggs, sugar, milk, nutmeg and vanilla together. In another bowl mash up 1 banana and add to custard, pour over the bread and allow to soak for 15 minutes. Dice up the other banana and fold into bread pudding mixture. Grease 6 (2 1/2-inch by 2?inch) tall ring mold and wrap the bottom with foil. Spoon bread pudding mixture into mold 1/2 way then press 1 chunk of chocolate into the center then continue to fill to the top. Bake in a 325 degree oven until it is set and brown, about 35 to 40 minutes. Serve with Dark Rum Creme Anglaise.
- To a saucepan add milk, scrape vanilla bean seeds into milk and add the pod. Bring almost to a boil. Remove from heat and allow bean to infuse for 10 minutes, then remove the bean. In a bowl whisk egg yolks and sugar until thick and light in color, then temper with hot milk. Pour mixture back into the pot and gently stirring constantly with a wooden spoon until custard thickens slightly. Remove from heat and strain through a fine sieve into a bowl over ice. Stir in rum and cover tightly so skin does not form while it is cooling.

- For the banana bread: Preheat the oven to 350 degrees F. Line a 12-count muffin tin with cupcake liners.
- Sift the flour, baking soda and salt into a medium bowl. Whisk the vanilla and eggs together in a liquid measuring cup with a spout. Set aside.
- In a stand mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the sugar and butter until light and fluffy. Gradually pour in the egg mixture while beating; beat until incorporated. Mix in the bananas (the batter will appear curdled, but don't worry), then remove the bowl from the mixer. With a rubber spatula, fold in the flour mixture until just incorporated. Fold in the walnuts, then the Mexican chocolate.
- For the cinnamon crumble topping: In a small bowl, mix together the flour, brown sugar and cinnamon. Cut in the butter with 2 knives until uniform.
- Fill the cups of the muffin tin about halfway with the batter. Spoon the cinnamon crumble topping over the muffins, pressing it lightly into the batter. Bake until the topping is golden and a toothpick inserted in the center of the muffins comes out clean, 20 to 25 minutes. Let cool before serving. These muffins are great with a smear of butter.

- Melt the chocolate, butter, and 1 teaspoon coconut oil in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove from heat and stir in cinnamon.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan with 1 teaspoon coconut oil.
- Sift coconut flour, baking soda, and salt together in a bowl. Place mashed bananas in a large bowl; fold flour mixture into bananas with a rubber spatula.

- Make the banana bread: Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan or three 6-by-3-inch mini loaf pans.
- Whisk the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a large bowl. Add the chocolate chips.
- Whisk the eggs, melted butter, yogurt, vanilla and orange zest (if using) in a medium bowl. Stir in the mashed banana. Fold the banana mixture into the flour mixture until just combined.

- move oven rack to lowest position so top of pan is in the center of oven. heat oven to 350. grease or spray a 9X13 pan.
- mix sugar and butter in large bowl. stir in eggs until well blended. add bananas, buttermilk and vanilla. beat until smooth. stir in flour baking soda and salt just until moistened. stir in nuts. ( i sometimes add 1 cup chocolate chips and 1 cup butterscotch chips for a nice twist)

- Turn your oven on to 180 degrees celsius for a fan oven or 200 degrees celsius for a conventional oven. Line a 1kg (or 2lb) loaf tin with baking parchment. Place a large glass bowl in a saucepan containing a cup of water. The bowl should be above the water, not touching it. When the water is simmering, place the chocolate, chopped into small pieces, in the bowl to melt. Stir frequently with a wooden spoon. Once the chocolate has melted take off the heat and place to one side to cool.
- Peel the skins off of the bananas and mash them. I mash them on a plate using a fork. Place the butter or margarine and sugar into a bowl and cream together. I use a wooden spoon. Once you have creamed the butter or margarine and sugar, beat in the eggs one at a time.
- After you have beaten the eggs into the mixture, add the bananas and then the melted chocolate- be sure the chocolate is cool. Now sift the flour and bicarbonate of soda into the bowl and fold into the mixture. Your mixture should be relatively smooth- the only lumps should be the banana. It might seem a little sloppy- that's ok.
- Place in the oven and bake for 1 hour to 1 hour and 15 minutes. It shouldn't take longer than that. The mixture should be coming away from the sides a little and a cake tester in the middle of the cake should come out clean. Allow to cool for a while in the tin, then remove and place on a cooling rack.

- Set a rack in the center of the oven, and preheat to 350F. Grease a 9 by 5 loaf pan with cooking spray or butter. In a small bowl, microwave the butter until just melted. (Be careful and do this over medium power in short burst because it can explode or splatter and that is a big mess.) Or melt it in the preheating oven. Set aside to cool slightly. In a large bowl, whisk together the flour, sugar, baking soda, and salt. Add the chocolate chips and crystallized ginger and whisk well to combine. Set aside. In a medium bowl, lightly beat the eggs with a fork. Add the mashed banana, yogurt, melted butter, and vanilla and stir to mix well. Pour the banana mixture into the dry ingredients, and stir gently with a rubber spatula, scraping down the sides as needed, until just combined. Do not overmix. The batter with be thick and somewhat lumpy, just make sure all the flour has been incorporated. Scrape the batter into the loaf pan and smooth the top. Bake into the loaf is a deep shade of golden brown and a toothpick inserted into the center comes out clean, 50 mins to an hour. If the loaf seems to be browning too quickly, tent with foil. Cool the loaf in the pan on a wire rack for 5 mins. Then tip out onto the rack, and let it cool completely before slicing (if you can wait that long). The loaf freezes well wrapped in plastic wrap and again in foil to protect from freezer burn. Try it cold, sliced fresh out of the freezer with a glass of milk or a cup of tea. Divine.

- Pour into prepared tin and sprinkle Demerara sugar on the top
- Bake for 45 mins until a skewer comes out clean
