These smokey sweet meatballs will be a big hit at your party. They're glazed in a sauce made from honey, chopped chipotle chiles in adobo sauce, and cider vinegar.

1 1/2 pounds ground turkey
1/2 yellow onion, diced small
2 garlic cloves, minced
1/2 teaspoon fine salt
1/4 teaspoon ground pepper
2 tablespoons honey
1 to 2 tablespoons chopped chipotle chiles in adobo sauce
2 teaspoons cider vinegar
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 375 degrees. In a medium bowl, mix together turkey, onion, garlic, salt, and ground pepper until combined (do not overmix). Form into 16 meatballs. In a small bowl, stir together honey, chiles, and vinegar.
  • In a large ovenproof skillet, heat olive oil over medium-high. Add meatballs and cook until browned on all sides, 10 to 12 minutes. Transfer skillet to oven and bake 5 minutes. Remove from oven, pour honey mixture over meatballs, and swirl skillet to coat; bake until liquid is reduced and meatballs are glazed, 5 minutes, swirling halfway through.

1 lb ground turkey
1/2 cup plain breadcrumbs
1 egg, beaten
1 chipotle chile in adobo, chopped
1 teaspoon adobo sauce, from chipotle pepper can
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon onion powder
1/4 teaspoon chili powder
canola oil
1/4 cup sour cream
1 tablespoon mayonnaise
1 teaspoon lime juice
1 teaspoon vinegar
1 1/2 teaspoons adobo sauce, from the chipotle pepper can
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt

Steps:

  • Preheat oven to 350 degrees.
  • Combine all of the ingredients for the meatballs, except canola oil, in a bowl. Mix well. Roll into about 20 meatballs.
  • Heat a thin layer of canola oil in a pan over medium heat. Once hot, fry meatballs until browned on all sides. Fry in batches if necessary. Transfer browned meatballs to a baking dish and finish baking in the oven until cooked through. About 10 - 15 minutes.
  • While the meatballs are cooking combine all of the ingredients for the dipping sauce in a bowl. Mix well.
  • Once meatballs are cooked through, place toothpicks in the top (if desired) transfer to a serving platter and serve with dipping sauce.

About 32 frozen turkey meatballs
2 cups sour cream
1/4 cup milk
1 tablespoon mayonnaise
1 teaspoon garlic powder
2 chipotle peppers in adobo sauce
Kosher salt and freshly ground black pepper
4 tablespoons (1/2 stick) unsalted butter
1/4 cup grated Parmesan
3 tablespoons chopped fresh cilantro

Steps:

  • Heat the meatballs according to the package instructions.
  • Meanwhile, combine the sour cream, milk, mayonnaise, garlic powder and chipotle in a blender and blend until combined. Add salt and pepper to taste and blend again.
  • In a small saucepan, heat the butter over low heat until melted. Add the chipotle mixture and mix with a wooden spoon until combined. Heat until warm, then serve with the meatballs and garnish with the grated Parmesan and cilantro.

For the meatballs:
2 pounds ground turkey
1/2 medium onion, very finely diced
4 eggs
1-1/2 - 2 cups seasoned bread crumbs
1 teaspoon salt
Pepper
For the sauce:
2 cans jellied cranberry sauce
1 6-ounce can tomato paste
1/2 medium onion, finely diced
2 tablespoons apple cider vinegar
1-2 chipotle peppers (from a can of chipotle in adobo)

Steps:

  • To prepare the meatballs: Preheat oven to 350 degrees F. Combine ground turkey, onions, eggs, bread crumbs, salt and pepper until well-blended. Form into 1-inch balls. Place the meatballs on a baking sheet which has been lightly rubbed with oil. Bake for 15-18 minutes, until cooked through. To prepare the sauce: Combine all ingredients in a saucepan over medium/medium-low heat. (Use one chipotle pepper for mild/medium heat or two chipotle peppers for medium-hot.) Use a fork to smash up the cranberry sauce. Stir and cook for about 5-7 minutes until a sauce forms. Remove the sauce from heat and allow to cool slightly. Puree the mixture using a blender, immersion blender, or food processor. Pour the sauce over the cooked meatballs. Meatballs and sauce can be refrigerated or frozen until use. To reheat: Reheat the meatballs in a foil-covered baking dish in a 350 degrees oven, until the meatballs are heated through, about 25-30 minutes (frozen meatballs will take longer). Periodically stir the meatballs as they reheat. Alternately, the meatballs and sauce can be reheated in a saucepan over medium-low heat or in a slow-cooker.
