Delicious baked sweet potatoes with a kick, inspired by the one and only Bobby Flay. I have made these for dinenr and everybody LOVED them.

2 cups heavy cream
1 tablespoon pureed chipotle chile
3 medium sweet potatoes, peeled and sliced into 1/8-inch slices
salt & freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Whisk together the heavy cream and chipotle puree until well combined.
  • Season the sweet potatoes with salt and pepper. Layer the sweet potatoes in a 6x8-inch baking pan. Drizzle with 5 tablespoons of the chipotle-cream mixture. Repeat with the remaining sweet potatoes and cream mixture to form 3 to 4 layers. Cover with foil paper and bake for 30 minutes. Remove the foil and bake for an additional 45 minutes.

1 tablespoon butter
1 cup chopped pecans
1 tablespoon sugar
1 tablespoon adobo sauce
1/8 teaspoon ground cumin
1/8 teaspoon chipotle chili powder
2 cups heavy whipping cream
1 tablespoon chipotle peppers in adobo sauce, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
3 medium sweet potatoes, peeled and thinly sliced

Steps:

  • In a small saucepan, melt butter. Remove from the heat. Stir in the pecans, sugar, adobo sauce, cumin and chili powder until pecans are coated. Spread onto foil; set aside., In a small bowl, combine the cream, chipotle peppers, salt and pepper. Arrange a third of the sweet potatoes in a greased 8-in. square baking dish. Pour 2/3 cup cream mixture over potatoes. Repeat layers twice., Cover and bake at 375° for 45 minutes. Sprinkle with spiced pecans. Bake, uncovered, 10-15 minutes longer or until potatoes are tender.

1 heaping tablespoon chipotle pepper puree
3 medium sweet potatoes, peeled and thinly sliced 1/8-inch thick
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F. Whisk together cream and chipotle puree until smooth. In a 9 by 9-inch casserole dish, arrange the potatoes in even layers. Drizzle with 3 tablespoons of the cream mixture and season with salt and pepper. Repeat with the remaining potatoes, cream, and salt and pepper to form 10 layers. Cover and bake for 30 minutes, remove cover and continue baking for 45 minutes to 1 hour, or until the cream has been absorbed and the potatoes are cooked through and the top is browned.

2 cups heavy cream
1 cup whole milk
1 garlic clove, finely grated
2 -3 chipotles chiles in adobo seasoning, seeded and minced, plus
1 tablespoon adobo sauce
kosher salt & freshly ground black pepper
2 1/2 lbs baking potatoes, peeled
1 cup shredded monterey jack cheese (about 3 ounces)
1/4 cup finely chopped chives

Steps:

  • Preheat the oven to 400° and butter a shallow 9-by-13-inch baking dish. In a medium saucepan, bring the heavy cream and milk to a simmer. Whisk in the garlic, chipotles and adobo sauce and season with salt and pepper. Keep warm.
  • Using a mandoline, slice the potatoes crosswise 1/8 inch thick. Arrange one-fourth of the potato slices in the prepared baking dish, overlapping them slightly. Sprinkle 1/4 cup of the cheese and 1 tablespoon of the chives over the potato slices. Repeat the layering two more times. Top with a final layer of potatoes and the remaining 1/4 cup of cheese. Pour the cream mixture over and around the potatoes.
  • Bake for about 25 minutes, until the potatoes are tender and bubbling and the top is golden brown. Let stand for 15 minutes. Sprinkle with the remaining 1 tablespoon of chives and serve.
  • Make Ahead The unbaked gratin can be refrigerated overnight. Return to room temperature before baking.

2 1/2 cups whipping cream
3 lb. russet potatoes, peeled and cut into 1/8-inch slices
1 cup shredded sharp white Cheddar cheese
4 cooked bacon slices, crumbled

Steps:

  • 1. Preheat oven to 400F. Process first 6 ingredients in a blender or food processor until smooth. Transfer mixture to a medium bowl, and stir in whipping cream. 2. Lightly grease a 13x9-inch baking dish with cooking spray. Spread one-fourth of potatoes in a single layer in prepared dish; top with one-fourth of cream mixture. Repeat layers three more times with remaining potatoes and cream mixture. 3. Bake, covered, at 400F for 50 minutes. Uncover and sprinkle with cheese and bacon.
