1 (4-pound) pork loin
Extra-virgin olive oil, as needed
3 tablespoons dry spice rub for pork
1 (10-ounce) jar seedless raspberry jam
1 (5-ounce) bottle chipotle hot pepper sauce (recommended: Tabasco)

Steps:

  • Preheat stovetop or outdoor smoker to approximately 230 degrees F.
  • Trim the white "silver skin" from the pork loin and lightly coat the entire loin with olive oil. Sprinkle the rub liberally on all sides of the loin.
  • Place pork in the smoker and smoke until internal temperature or pork reaches 150 degrees F, about 1 1/2 to 2 hours. Remove pork from smoker and wrap lightly in aluminum foil.
  • Meanwhile, preheat broiler.
  • Place the jam in a medium bowl and stir in about 1/3 of the chipotle sauce. Mix well, adding more chipotle sauce until the heat and taste reach your personal preference.
  • Unwrap the pork and cover with the glaze. Place on a broiler pan and broil until glaze is bubbling, about 3 minutes. Slice pork against the grain and serve.

Tart kiwi and sweet blueberries make a unique salsa to dress your basic pork loin. This is a leaner cut of pork, so be sure not to overcook it; you can test the meat by slicing it with a paring knife or using an instant-read thermometer, which should register 145ºF.

2 kiwis, peeled and diced
1 pint blueberries, chopped
1/2 cup cilantro leaves, chopped
1/4 cup minced red onion
2 tablespoons balsamic vinegar
1 teaspoon salt
3/4 teaspoon paprika or chipotle chile powder
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
One (2-pound) center-cut pork loin
2 tablespoons grapeseed oil, plus more for the grill

Steps:

  • To grill the pork loin, preheat a grill over high heat, or to roast, preheat the oven to 400ºF.
  • Combine the kiwis, blueberries, cilantro onion, and vinegar in a large bowl. Add 1/4 teaspoon of the salt and toss well. Set the salsa aside.
  • Place the paprika or chipotle chile powder on a plate along with the turmeric, cumin, the remaining 3/4 teaspoon salt, and the black pepper. Roll the pork loin in the spice mixture to coat. Drizzle the pork with the oil.
  • To grill:
  • Grease the grill with grapeseed oil. Adjust the grill flame setting to medium to medium-low.
  • Place the loin on the grill and cook, turning often, until no longer translucent inside and cooked through, or until it registers 145ºF on an instant-read thermometer, 20-25 minutes. Let the loin rest for 5 minutes before slicing, then serve with the salsa.
  • To roast:
  • Place the pork in a 7-by-11-inch baking dish and roast on the lower rack, uncovered, for 35-40 minutes until cooked through and no longer pink in the center, and it registers 145ºF on an instant-read thermometer. Let the loin rest for 5 minutes before slicing, then serve with the salsa.

1/2 cup tamarind paste, dissolved in water (optional)
1 1/2 cups freshly squeezed orange juice
1/4 cup molasses
1 1/2 teaspoons chile powder
1/2 cup rice vinegar
1 tablespoon olive oil
1 1/2 tablespoons chopped fresh basil
2 pounds boneless loin of pork, with the fat cap left on
2 cups dried Black Mission figs, trimmed and coarsely chopped
1 1/2 teaspoons chopped roasted garlic
1 teaspoon pureed chipotles in adobo
2 teaspoons chopped fresh thyme
2 tablespoons chopped fresh flat-leaf parsley
1/4 teaspoon salt
2 tablespoons lemon-flavored oil or 2 tablespoons virgin olive oil with 2 teaspoons minced lemon zest
1 teaspoon sherry or balsamic vinegar
1/4 cup pine nuts, toasted
Olive oil, for searing

Steps:

  • To prepare the marinade: Blend together the tamarind paste, if using, orange juice, molasses, chile powder, vinegar, oil, and basil. Pour the marinade over the pork loin in a shallow glass baking dish, cover, and marinate overnight in the refrigerator.
  • To prepare the stuffing: Place the figs, garlic, and pureed chipotles in a food processor and pulse until semi-smooth. Transfer to a bowl and fold in the remaining ingredients.
  • To prepare the pork: Remove the pork from the marinade, reserving the marinade, and blot dry. Butterfly the loin lengthwise, leaving 1/2 inch of meat attached to connect the 2 halves of the loin. Open the pork loin and cover it with plastic wrap. Pound lightly with a butcher's mallet or heavy pan to an even thickness, 1/2 to 3/4 inch. Mound the stuffing down the center of the loin and fold it closed. Tie the loin carefully at 1-inch intervals with butcher's string. The loin may be prepared to this point up to 24 hours in advance.
  • Preheat the oven to 325 degrees. Pour the marinade into a saucepan and reduce it over low heat to a glazelike consistency. Heat the olive oil in a saute pan over moderate heat and sear the meat. Transfer to a metal rack wet in a roasting pan and roast for 40 to 50 minutes, or until the internal temperature is 145 degrees. Bursh the pork liberally with the glaze during the last 5 minutes of cooking. Let the meat rest for 5 minutes or so before removing the twine. Slice and serve.
  • Serving Suggestion: Serve with sauteed chanterelle mushrooms with apple wedges.

1/4 cup orange juice
2 tablespoons pomegranate molasses
1/2 teaspoon toasted cumin seeds
2 tablespoons brown sugar
1 tablespoon minced garlic
Pinch cinnamon
1/4 teaspoon kosher salt
1/2 teaspoon white pepper
1 teaspoon orange zest
1 teaspoon balsamic vinegar
1 boneless pork loin roast, about 3 pounds (wrapped and tied with some fat left on)
2 cloves garlic, slivered
Fresh thyme sprigs, plus extra, for garnish
Kosher salt
Black pepper
Ground cumin
1 tablespoon unsalted butter
1 tablespoon olive oil
Up to 1 cup dry white wine
1 onion, thinly sliced
1/2 cup chopped, dried mission figs
1 orange, segmented
1 teaspoon minced fresh thyme
Watercress sprigs, for garnish
Orange peel curls, for garnish

Steps:

  • To Make the Sauce: Mix the chipotle chile and orange juice in a mini-food processor until pureed. Add the next 9 marinade ingredients, pulsing to combine.
  • Preheat the oven to 350 degrees F.
  • Cut small slits in the roast, cutting with the grain and insert garlic slivers and an equal number of thyme sprigs. Rub the roast liberally with salt, pepper, and ground cumin.
  • In a Dutch oven or heavy-bottomed roasting pan, combine butter and olive oil. When bubbling, add the roast to the pan and turn to brown on all sides (about 8 minutes). Add 1/2 cup wine and the onion to the pan and place in the oven. After 20 minutes, start basting the roast with the sauce. Continue to baste until the meat reaches an internal temperature of 150 degrees F, about 1 hour total.
  • Transfer the roast to a carving board, tent with foil and allow to rest for at least 10 minutes before carving.
  • Meanwhile, spoon off any excess fat from the pan then deglaze with 1/4 cup wine; when bubbling add chopped figs, orange segments, and 1 teaspoon fresh minced thyme. Simmer gently for about 10 minutes, until the figs are soft. Remove from the heat and puree using an immersion blender. There should be some chunks remaining in the "marmalade".
  • To Serve: Remove twine and slice pork 1/2-inch thick. Top slices with a generous spoonful of the marmalade and garnish with thyme sprigs, or for a buffet, present the whole roast on a nest of watercress (or arugula) and orange peel curls. Add the marmalade to each serving as your carve.
  • Cook's Note: It is very important that there is a thin layer of fat on the roast and that it is all natural?not water and nitrate "plumped".

GRILLED CHIPOTLE MARINATED PORK LOIN

We served this to our dinner group and they were licking their plates! Serve with Spanish Rice and Black Beans. I don't remember where I got this recipe, as I have had it for years and we love it. Cook times do not include marinating time.

2 tablespoons vegetable oil
3/4 cup onion, minced
2 large garlic cloves, minced
7 ounces chipotle chiles in adobo (or to taste)
1 cup black coffee
1/2 cup cider vinegar
1/2 cup apple cider or 1/2 cup apple juice
1/2 cup brown sugar, packed
3 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 -3 lbs boneless pork loin
salt

Steps:

  • Heat oil over medium heat in a large saucepan and add onion and garlic until onion is translucent.
  • Add chipotle peppers that have been removed from the sauce and finely chopped. BEWARE! Add only amount needed for your taste. Add to onions along with the adobe sauce.
  • Add coffee through Worcestershire Sauce and whisk to combine. Bring to a simmer and cook for 5 to 6 minutes. Remove from heat and refrigerate until chilled. (Can make the sauce ahead of time.).
  • Place pork loin in a deep bowl or large plastic Ziploc bag. Marinate for at least 12 hours up to 2 days. Turn the pork occasionally.
  • About 2 hours before grilling, remove pork from marinade. Bring the marinade to a boil (for a minimum of 5 minutes for food safety) until slightly thickened. Season with salt if desired or needed. Use 1/2 cup marinade to baste the pork and use remaining marinade to serve with the pork.
  • Heat grill to medium-hot and set pork, fat side down on grill. Turn and baste with the sauce until meat reaches an inernal temperature of 150 degrees F. (About 50 to 60 minutes depending on your grill) Careful not to overcook.
  • Let stand for juices to settle. Reheat sauce to serve with the meat.

Raspberry Chipotle Glaze:
1 tablespoon olive oil
1/2 cup small diced onion
2 teaspoons minced garlic
2 teaspoons chipotle chiles in adobo, chopped
2 pints fresh raspberries, rinsed
1/2 cup raspberry vinegar
3/4 cup granulated sugar
1/2 teaspoon salt
Garlic Roasted Pork Loin:
2 1/2 to 3 1/2 pound boned pork loin
8 large cloves garlic, peeled and sliced in half lengthwise
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh oregano (or cilantro)
1 tablespoon chopped fresh thyme
Olive oil
2 tablespoons kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Preheat oven to 500 degrees for pork. For the Glaze: In a medium saucepan, heat oil over medium-high heat. Add the onions and cook, stirring, until soft and slightly caramelized, 4 minutes. Add the garlic to the pan and saute for 1 minute. Add the chipotles and cook, stirring continuously, for 1 minute. Add the raspberries and cook until soft, 2 to 3 minutes. Add the vinegar and stir to deglaze the pan. Add the sugar and salt, and bring to a boil. Reduce the heat to medium and simmer until thickened and reduced by half, 8 to 10 minutes. Remove from the heat and strain through a fine mesh strainer, pressing on the solids with the back of a spoon to extract as much liquid as possible. For the Pork Loin: Preheat the oven to 500 degrees F. Place a large roasting pan over 2 burners over medium-high heat. Add oil to coat the bottom and heat. Season the pork loin with salt and pepper. Place the loin in the roasting pan and sear on all sides until golden brown, about 2 to 3 minutes per side. In a food processor, combine the garlic, rosemary, oregano/cilantro, and thyme. Process until smooth. Add enough oil to make the mixture a good, spreadable consistency. Season with salt and pepper. Remove the pork from the heat. Carefully rub the garlic/herb mixture over the pork loin. Roast until an instant read thermometer inserted into the center of the roast registers an internal temperature of 140 degrees F, 40 to 45 minutes. Five minutes before removing the roast from the oven, evenly spread the glaze over the top. Remove from the oven and tent with aluminum foil to keep warm. Let rest for 10 to 15 minutes before carving. Suggestion: Arrange on top rice and serve sliced pork loin with drizzled glaze.

CHIPOTLE PORK LOIN

I made this recipe on a whim and it was the absolute best pork loin my family has ever tasted. Has a bit of a kick, but oh so easy and so good.

4-5 lb boneless pork loin or pork shoulder
2 can(s) chipotle pepper in adobo sauce (11 oz)
2 Tbsp brown sugar
1 can(s) dr. pepper (regular 12 oz)
1 onion, peel and quartered
salt to season top of pork

Steps:

  • 1. Separate the onion wedges and place in bottom of crock pot.
  • 2. Place pork loin on top of onions (if using pork shoulder, place in crock pot fat side up).
  • 3. Pour Chipotle Peppers in Adobe over the top of roast.
  • 4. Pour 2 cans of Dr. Pepper around sides of roast (try not to wash off the Chipotles from top of roast).
  • 5. Sprinkle 2 TBL of brown sugar around sides of roast right into liquid.
  • 6. Cover and cook on high in crock pot 6-7 hours (pork should pull apart easily with a fork). NOTE: You can also cook this in the oven for same amount of time at 300 degrees.
  • 7. Take roast out and shred with forks. Skim off fat from top of aus jus and then place pork back in the juice.
  • 8. You can make sandwiches out of this, use it for burritos, or nachos. Sky is the limit!
