Shanghai Shrimp Stir-fry - You Bao Xia (油爆虾) image

Shanghai-style shrimp stir-fry or you bao xia (油爆虾) is a classic Shanghainese dish that uses whole shrimp. Wok fried until they are crispy and then soaked in a savory sauce, this Shrimp stir fry dish is also a favorite Shanghai Chinese New Year dish.

Number Of Ingredients 10

1 pound medium shrimp ((450g, size: 21/30))
1 cup oil ((for frying))
2 scallions ((white portion only, save the green portion for another day))
3 slices ginger
1 tablespoon Shaoxing wine
1/2 cup chicken broth
1 teaspoon sugar
1/4 teaspoon Chinese black vinegar
1 teaspoon sesame oil
Salt ((to taste))

Steps:

  • Start by preparing the shrimp. Using kitchen shears, trim off the legs and the sharp pointy part at the top of the head. Then devein the shrimp by using a toothpick to carefully expose and pull it out, without damaging the shell (see the photo!). Rinse the shrimp thoroughly, drain, and pat dry with a paper towel.
  • Heat the oil in a wok over high heat until it just starts to smoke. Carefully lower the shrimp into the oil in two batches, frying gently for about 5 - 10 seconds with each batch. The shrimp will go opaque very quickly. Immediately scoop them out into a metal strainer, to drain excess oil back into the wok. Set the shrimp aside.
  • Now, let the oil heat up again until it's smoking. Lower the shrimp into the oil again (in two separate batches), and fry for another 5 - 10 seconds. The frying time varies depending on shrimp size--over frying will dry out the shrimp.
  • Turn off the heat and scoop out the oil into a heat-proof bowl, leaving about 1 tablespoon of oil in the wok. Turn the heat on to low and add in the scallion whites and ginger. Cook for 2 minutes, until fragrant. Add the Shaoxing wine, chicken broth, sugar and vinegar. Turn up the heat, so the mixture comes to a simmer. Stir for 30 seconds.
  • At this point, you can choose to remove the scallions and ginger from the wok, or simply leave them in there! Finally, add the shrimp back to the wok along with the sesame oil. Stir-fry for 5-10 seconds, until the shrimp are coated in the sauce. Add salt to taste, and serve.

3/4 pound fresh medium shrimp
1 large carrot
1 red bell pepper
6 ounces snow peas
3 1/2 tablespoons oil for stir-frying, divided, or as needed
1 teaspoon minced ginger (about 2 thin slices)
1 tablespoon curry paste
1 tablespoon Chinese rice wine or dry sherry
1/4 teaspoon granulated sugar, or to taste

Steps:

  • Soak the shrimp in warm salted water for 5 minutes. Rinse in cold water, drain and pat dry with paper towels. Shell, devein and chop.
  • Peel and slice the carrot into 1/2-inch slices on the diagonal. Cut the red bell pepper in half, remove the seeds and chop into chunks.
  • In a large pot filled with boiling water, briefly blanch (parboil) the peas and carrots until the peas turn bright green, and the vegetables are crisp but still tender. Remove, plunge briefly into ice cold water, and drain thoroughly.
  • Heat a wok over medium-high to high heat. Add 2 tablespoons oil to the heated wok. Add the ginger and stir-fry briefly until aromatic (about 30 seconds). Add the shrimp. Stir-fry until they turn pink. Remove the shrimp from the pan.
  • Heat 1 1/2 tablespoons oil to the wok. When the oil is hot, add the curry paste. Heat briefly until it is aromatic (30 seconds to 1 minute). Add the carrots. Stir-fry for 1 minute, then add the red bell pepper. Add the peas. Stir-fry briefly, then add the shrimp back into the pan. Mix everything together and cook for 1 minute, then add the rice wine or sherry and the sugar. Cook for a bit longer and serve hot.

1 lb raw shrimp
1 ½ tablespoons garlic, minced
2 teaspoons ginger, minced
½ teaspoon crushed red pepper
1 tablespoon olive oil
⅓ cup honey
⅓ cup soy sauce
scallion, thinly sliced

Steps:

  • Place shrimp in a sealable bag or medium bowl.
  • In a small bowl or measuring cup, mix marinade ingredients.
  • Pour half of the marinade on the shrimp. Save the other half for later.
  • Let the shrimp marinate in the refrigerator for at least 15 minutes.
  • In a medium pan, heat oil. Add shrimp to the pan, but discard the used marinade. Cook shrimp on one side for about a minute, then flip over.
  • Pour in remaining marinade and cook until shrimp is cooked through and just firm. Remove the shrimp from the pan and let the marinade reduce.
  • Serve the shrimp with sauce and garnish with green onion.

1 lb medium shrimp, peeled and deveined
1 onion, halved and sliced thinly
2 teaspoons cornstarch
2 tablespoons water
1/2 teaspoon sugar
1 dash pepper
2 -3 tablespoons oil (your choice, I prefer coconut oil)
1/2 teaspoon salt
2 teaspoons sherry wine
2 -3 tablespoons curry powder (mild)
1/2 cup vegetable stock or 1/2 cup chicken stock

Steps:

  • Shell and devein shrimp. Cut onion in half; slice thinly.
  • Blend cornstarch, water, sugar and pepper to a paste. Set aside.
  • Heat oil. Add salt, then shrimp, and stir-fry 1 minute. Sprinkle shrimp with sherry (off flame); stir-fry until pinkish (about 1 minute more). Remove and set aside.
  • Using a clean pan, add curry powder; stir 1/2 minute over low heat. Add onion and stir-fry until curry smells pungent (about 1 minute more). Return shrimp. Stir in stock and heat quickly. Then cook, stirring, until onon softens. Stir in cornstarch paste to thicken. Serve at once over rice, if preferred.

300 g Arctic Shrimp
50 g Curry powder
20 grams of sugar
2 g Salt
¼ Red onion
1 piece of Ginger
2 cloves of Garlic
2 Tbsp Fresh milk
1 tsp Butter
2 tsp Flour

Steps:

  • Heat about 3 tablespoons of oil to 70% heat, pour into the bowl of curry powder and stir together. (This is the method how I make curry sauce for the shrimp.)
  • Dice the onion, garlic, and ginger.
  • Arctic shrimp are naturally thawed in advance, and oil is poured into the wok.It is heated to 80% heat, and the shrimp are put down and quickly fried for about 20 seconds.
  • Pour out the oil (leave a little base oil), stir-fry the onion, garlic and ginger. Then add the proper amount of curry/oil.
  • Stir all the contents together, and let simmer for a few minutes.
  • Put the fried shrimp in and add an amount of hot water to submerge the shrimps, put sugar and salt and bring to boil.
  • Then pour in the 2 tablespoons of fresh milk and boil again. Add the butter/flour melted in advanced.
  • Pour into a metal baking pan and put it in an oven, that has been preheated to 200° C, for five or six minutes. Take it out and serve!

SHRIMP IN YELLOW CURRY

Many Thai dishes are not unlike what we call curries, but although they may contain curry powder, they are more often based on a combination of herbs and aromatic vegetables, rather than dried spices. A typical curry might feature a mixture of garlic, shallots, chiles, lime leaf, sugar and galangal (or ginger). This simplified version leaves out the lime leaf and sugar, but benefits from the addition of a couple spoonfuls of fish sauce at the end of cooking. It is brightly flavored, but blessedly easy to toss together on a weeknight.

1 cup minced onion
1 tablespoon minced garlic

  • Place the oil in a large, deep skillet and turn the heat to medium. Add the onion, garlic, ginger, and chilies and cook, stirring frequently, until the vegetables are tender and the mixture pasty. Add the curry and cook, stirring, another minute.
  • Add the coconut milk and raise the heat to medium-high. Cook, stirring occasionally, until the mixture is nearly dry. Add the shrimp, a few pinches of salt and a little black pepper and cook, stirring frequently, until the shrimp release their liquid (the mixture will become quite moist again) and turn pink.
  • Add half the nam pla, stir, then taste and add the rest if necessary. Garnish with cilantro and serve with white or sticky rice.

2 teaspoons curry powder (or more, according to taste)
1/2 teaspoon sugar
1 tablespoon reduced sodium soy sauce
1 tablespoon rice wine vinegar
3/4 cup reduced-sodium fat-free chicken broth
3 teaspoons canola oil or 3 teaspoons peanut oil, divided
2 carrots, cut into 1-inch pieces
1 red bell pepper, seeded, stems removed, diced
1/4 lb fresh sugar snap pea, strings on, edges removed (about 20)

1 large garlic clove, minced

Steps:

  • In a small bowl, combine cornstarch, curry and sugar. Mix in soy sauce, vinegar and chicken broth. Set aside.
  • In wok or heavy skillet, heat 1 teaspoon oil over high heat. Add carrots, pepper, peas, ginger and garlic. Stir-fry until vegetables are brightly colored, about 1 minute. Transfer onto plate with slotted spoon.
