1 (3 ounce) package chicken flavored ramen noodles
¼ cup butter
½ cup sesame seeds, toasted
½ cup blanched slivered almonds
1 large head napa cabbage, shredded
6 green onions, chopped
¼ cup vegetable oil
¼ cup rice wine vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
⅛ cup white sugar

Steps:

  • Crush noodles, place them in a medium skillet and brown in butter over medium heat. Add almonds and sesame seeds. Stir often to prevent burning. Add seasoning mix from noodles and cool. Toss in a large bowl with cabbage and onions.
  • Prepare the dressing by whisking together the vegetable oil, rice vinegar, soy sauce, sesame oil and sugar. Pour over salad, toss and serve.

Napa was on sale this week so I ended up with more than I could readily include in a stir-fry. I decided to search here to see if it could be used in a cole-slaw or salad but all I came with was a dozen variations of the same recipe that called for ramen noodle. I've had that at pot luck dinners and can't stand it. So here is what I came up with. DS#1 added the pecans -- he's got good taste for a 15yo, hasn't he?

1/2 head napa cabbage
2 stalks bok choy
1 stalk celery, thinly sliced
2 apples, diced (I recommend a crisp, sweet-tart variety such as Fuji or Gala)
1/2 cup pecans, coarsely broken
1/2 cup canola oil or 1/2 cup other light-flavored oil
1/4 cup balsamic vinegar
1 pinch celery seed
1/4 teaspoon fresh ginger, very finely minced
1/2 teaspoon prepared brown mustard
1/2 teaspoon salt (to taste)
2 (1 g) packets Splenda sugar substitute

Steps:

  • Wash all produce as necessary.
  • Divide your half-head of napa lengthwise into 3 or 4 sections and knife-shred crosswise to yield strips about 1.5 inches long by 1/4 inch wide.
  • Divide your bok choy stalks lengthwise into 1in sections if necessary and slice thinly. Knife shred the green leaves to match the napa.
  • Mix dressing ingredients and let rest for 5 minutes to blend the flavors.
  • Toss together all salad ingredients with the dressing.
  • Garnish with pecan halves and thin rings of apple if desired.
  • Note -- Other artificial sweeteners, honey, sugar, etc. may be substituted for the Splenda if you prefer.
  • Note -- Can add chunks of cooked ham or other cooked meat to make into a main-dish salad.

1 medium napa cabbage head
1 bunch green onions
1/3 c butter
1 pkg ramen noodles broken
2 Tbsp sesame seeds
1 c almonds, slivered
1/4 c cider vinegar
3/4 c vegetable oil
1/2 c white sugar
2 Tbsp soy sauce

Steps:

  • 1. Slice cabbage very thin, or you can chop it but we like it sliced thin. I don't always use a whole bunch of green onions about half as we don't like that many onions. Anyway chop your onions and mix them with the cabbage and place in fridge.
  • 2. In a cake pan or like place the seeds and butter with the broken noodles and bake in oven at 350* until they are golden brown. remove from oven set aside.
  • 3. In sauce pan, put vinegar, oil, sugar and soy sauce and bring to a boil and then oil for one minute.
  • 4. Just before your ready to eat your salad, I take the seed mixture and mix in with the cabbage and then I mix my cooled dressing with a hand blender, then pour over the salad and mix well. Enjoy and this recipe is for you David .

I made this one day after picking up napa cabbage to make eggrolls with and had a lot left over. It's great for a main course salad served with pot stickers, eggrolls, or a Chinese soup.

2 tablespoons sesame oil
1 tablespoon soy sauce
1 tablespoon teriyaki sauce
2 limes, juice of
1 teaspoon ground ginger powder
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 lb flank steak
1/4 cup canola oil
2 tablespoons rice wine vinegar
2 tablespoons lime juice
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon sugar
1 tablespoon fish sauce
2 teaspoons crushed red pepper flakes or 1 teaspoon Tabasco sauce
1 (8 ounce) package rice vermicelli
1 head napa cabbage, washed and thinly sliced
1 cucumber, peeled seeded, and chopped
1 red bell pepper, washed, seeded and cut into thin strips
3 scallions, washed and cut into strips
2 tablespoons toasted sesame seeds
1/4 cup chopped fresh cilantro

Steps:

  • Marinate the flank steak in a plastic bag and refrigerate for 2 hours.
  • Prepare the dressing in a blender and refrigerate it.
  • Toast the sesame seeds in a small skillet until light brown.
  • Grill the flank steak on a high heat 3-4 minutes each side, discarding the marinade.
  • The flank steak will be medium rare, but the dressing will finish "cooking" it.
  • Place the steak on a plate and let it rest for 10 minutes. Boil the vermicelli in salted water according to package directions.
  • Rinse the pasta in cold water and drain.
  • Thinly slice the flank steak against the grain.
  • In a large salad bowl toss all the ingredients together and refrigerate for an hour or more, then serve it.

This recipe was inspired by California Pizza Kitchen's Chinese Chicken Salad. I made it gluten-free and eliminated the chicken, but if you eat chicken, you can add a barbecued chicken on top and make it a main dish. When you chop an entire napa cabbage, it may seem like a lot, but once you add the dressing, it wilts down. I used both black and white sesame seeds, but if you have only one kind, you can just double the amount. 1 napa cabbage, sliced thin
3 cups carrots, peeled and julienned
1 1/2 cups green onions, chopped
1/2 cup cilantro, chopped (optional)
12 large basil leaves, julienned (optional)
4 tablespoons sunflower seeds (optional)
2 tablespoons white sesame seeds, toasted
2 tablespoons black sesame seeds
2 garlic cloves, minced
2 tablespoons fresh ginger, minced
6 tablespoons rice vinegar
5 tablespoons tamari soy sauce
3 tablespoons Dijon mustard (or 1 Tbsp Chinese hot mustard)
2 tablespoons nut butter (I used almond butter)
2 tablespoons honey or 2 tablespoons other liquid sweetener
1 tablespoon hot chili paste
3 tablespoons sesame oil
1/2 cup extra virgin olive oil
black pepper

Steps:

  • In a very large bowl, mix all the vegetables, sunflower seeds and sesame seeds.
  • In a small bowl, mix the remaining 11 ingredients from garlic to black pepper for the dressing.
  • Pour the dressing on the salad and mix well. Set aside to let it wilt for 30 minutes.
  • Infuse love and serve!
