CHINESE HAMBURGER HASH
This is a recipe my Mom made when I was growing up and which my family enjoys now. It is quick to make and by throwing together a salad you have a full meal.

Steps:
- Preheat oven to 350.
- In large skillet brown hamburger. Remove hamburger to a plate with paper towels to remove most of grease.
- In same pan saute onions and celery until onions become transparent. Return Hamburger to pan.
- Add soups and water to pan.
- Stir in Uncooked rice, soy sauce and pepper.
- Put in greased 8x11 covered casserole.
- Bake 1 hour at 350. Uncover and sprinkle Chow Mein Noodles over top and finish baking 15 minute
- Note: Can us 1 1/4 Cup Minute Rice But shorten cooking time to 30 to 40 minute.

CHINESE HAMBURGER HASH
Steps:
- 1. Brown meat until crumbly, Add onion, celery, peas and soups. Add water to mixture. Stir in rice, soy sauce and pepper. Turn into lightly greased casserole pan, cover. Bake for 30 minutes at 350 degrees. Remove cover and bake 30 minutes longer. Top with chow mein noodles, and continue to bake 15 minutes more. Makes 6 servings.

Steps:
- 1. Except for won ton wrappers, combine all the ingredients into a mixing bowl and incorporate very well.
- 2. Place a spoonful of the mixture onto the center of the pi, bring up the sides to form a little cup around the filling, do not seal the top (photo).
- 3. Place the dumplings in a bamboo steamer over boiling water and steam for a full 30 minutes.
- 4. Turn off the heat and remove the pork hash from the steamer, be careful, it's hot!
- 5. CHINESE HOT MUSTARD SAUCE: Chinese mustard powder, water and soy sauce. Use 1 tsp of the powder and mix with 1 tsp of water, mix till paste is smooth then add 1 tsp of soy sauce or more for your taste.
CHINESE HASH
This isn't really 'typical' Chinese food... but it has Chinese elements! *LOL* We used to eat this growing up ... I have recently been reintroduced to it through my sister, and boy am I ever glad! :-) It looks a bit , ummm... nasty when mixing *LOL* but it is very good! :)

- Brown hamburger and onions.
- Add celery, rice, soups, water and sauces.
- Pour into a sprayed 13x9 pan.
- Bake at 350°F for an hour, stirring a couple of times during cooking.
- Top with chow mein noodles and bake 10-15 minutes longer.

CHINESE HAMBURGER HASH I I
I added Cook & Lace's 'Chinese Hamburger Hash' recipe to my cookbook yesterday. I found another one today that uses brown rice. From the cookbook "Stories and Recipes of the Great Depression of the 1930's". I've not made this so let me know how it turns out.

Steps:
- Brown ground beef, onions and celery in a skillet. Drain.
- In a large mixing bowl combine soups, water rice and soy sauce mixing well.
- Add the meat mixture and mix well again.
- Put in greased 8x11 covered casserole.
- Bake at LEAST 1 hour at 350 degrees or until rice is tender.
- Uncover last half of cooking time.

POTATO & CHINESE SAUSAGE HASH
I like potatoes and I like Chinese sausage, so here is something I just threw together as I always seem to have the main ingredients on hand, hash with an Asian twist. The sausage is a sweet variety and gives the hash a different flavor. Overall, easy and tasty dish.

Steps:
- 1. Potatoes scrubbed and ready for dicing. I totally forgot to add the onion and bell pepper to the board for the photo. oh well, not a show stopper. Now the sausage is air dried but not safe for consumption yet.
- 2. Chinese sausage is stable at room temp before opening the package and refrigerated after that. This is a hard sausage, and a trick to get it soft is to steam it first before adding to a dish. The steaming also cooks it mostly through. The 3 sausages added to my hot steamer (rice cooker).
- 3. Steam for 20 minutes. Here you can see the sausage has swelled up a bit. After 20 minutes, remove them to a cutting board and dice them.
- 4. While the sausage is steaming, heat some lard or cooking oil, maybe 2-3 tablespoons, in a large non stick pan on medium heat. While the pan is heating, dice the potatoes and add them to the hot pan and give a good shake or two of pepper if you like.
- 5. Then add the bell pepper and onion and mix into the potatoes.
- 6. When the sausage is ready, dice that and add to the pan.
- 7. Continue cooking until the potatoes are browning up and tender.
- 8. Serve with sides of your choice.
