CHINESE HAMBURGER HASH
This is a recipe my Mom made when I was growing up and which my family enjoys now. It is quick to make and by throwing together a salad you have a full meal.

Steps:
- Preheat oven to 350.
- In large skillet brown hamburger. Remove hamburger to a plate with paper towels to remove most of grease.
- In same pan saute onions and celery until onions become transparent. Return Hamburger to pan.
- Add soups and water to pan.
- Stir in Uncooked rice, soy sauce and pepper.
- Put in greased 8x11 covered casserole.
- Bake 1 hour at 350. Uncover and sprinkle Chow Mein Noodles over top and finish baking 15 minute
- Note: Can us 1 1/4 Cup Minute Rice But shorten cooking time to 30 to 40 minute.

CHINESE HAMBURGER HASH
Steps:
- 1. Brown meat until crumbly, Add onion, celery, peas and soups. Add water to mixture. Stir in rice, soy sauce and pepper. Turn into lightly greased casserole pan, cover. Bake for 30 minutes at 350 degrees. Remove cover and bake 30 minutes longer. Top with chow mein noodles, and continue to bake 15 minutes more. Makes 6 servings.

This was my mother's recipe; I don't know where she found it but it was a staple when I was a kid. I know there are other recipes for Chinese Hamburger Hash on the 'zaar, but not with these proportions.

- Add remaining ingredients (except noodles).
- Place in greased casserole & cover.
- Bake 30 minutes at 350.
- Remove cover, bake 30 minutes more.
- Cover with noodles - bake 15 minutes more.

CHINESE HAMBURGER HASH I I
I added Cook & Lace's 'Chinese Hamburger Hash' recipe to my cookbook yesterday. I found another one today that uses brown rice. From the cookbook "Stories and Recipes of the Great Depression of the 1930's". I've not made this so let me know how it turns out.

Steps:
- Brown ground beef, onions and celery in a skillet. Drain.
- In a large mixing bowl combine soups, water rice and soy sauce mixing well.
- Add the meat mixture and mix well again.
- Put in greased 8x11 covered casserole.
- Bake at LEAST 1 hour at 350 degrees or until rice is tender.
- Uncover last half of cooking time.
