CHILLY DAY CHILI
Make this easy and surprisingly hearty chili with ground chicken or turkey. Simmer 3 hours on stove top, or 8 hours in a slow cooker on Low (3 hours on High).

Steps:
- Heat vegetable oil in a soup pot over medium heat. Cook and stir ground chicken in the hot oil until no longer pink and the chicken is crumbly, about 10 minutes. Drain.
- Stir in pinto beans, onions, diced tomatoes, Mexican-style stewed tomatoes, water, brown sugar, chili powder, vinegar, mustard, salt, and black pepper; bring to a boil. Reduce heat to low, cover, and simmer chili until thickened and flavors have blended, about 3 hours. Stir occasionally and add extra water if needed.

Steps:
- In a large skillet, saute onions and bell pepper in vegetable oil for 1-2 minutes; add ground beef and cook until browned; drain fat.
- Stir in tomatoes, tomato sauce, ketchup, chili powder, salt, and pepper; simmer, uncovered for 30 minutes, stirring occasionally.
- Add beans and continue simmering for 15 minutes longer.

- Preparation Time: Approximately 15 minutes Cook Time: Approximately 35 minutes Preparation: Heat the oil in a large saucepan or Dutch oven over a medium-high heat. Add the onions and green pepper, and cook and stir until soft. Add the turkey, chili powder, garlic, cumin and oregano, and cook, stirring to break up the meat for 5 minutes or until cooked through. Add the vegetable juice, tomatoes and chiles, chicken broth and barley, and increase heat to medium-high. Bring to a boil, then reduce heat to medium-low. Cover and simmer gently, stirring occasionally, for 15 minutes until the barley is almost tender. Add the beans, cover the pan and cook for 10 minutes. Steps:
- 1. In a large skillet with one tablespoon oil, sweat onions,green peppers and garlic put in small bowl. add ground beef in skillet and brown then drain.
- 2. In large stock pot add the tomatoes and drained beans ,add the onions mixture,ketchup and worch.sauce and the spices and the coffee .
- 3. add the brown sugar and the ground beef add the salt and pepper . let simmer for at least 30 minutes.
- 4. this is good with a spoon of sour cream
