CHILLED CORN SOUP WITH LOBSTER SALAD



Chilled Corn Soup with Lobster Salad image

Corn soup:
3 tablespoons unsalted butter
2 tablespoons olive oil
1 large onion, chopped
1 garlic clove, finely chopped
6 cups corn kernels (from 6 ears)
Kosher salt, freshly ground pepper
2 sprigs thyme
Lobster salad and assembly:
Kosher salt
2 1 1/4-pound live lobsters
1/2 small shallot, finely chopped
2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
2 tablespoons extra-virgin olive oil plus more for drizzling
Freshly ground black pepper
3 tablespoons coarsely chopped celery leaves plus more for garnish
1 tablespoon coarsely chopped fresh tarragon plus leaves for garnish
Flaky sea salt (such as Maldon)

Steps:

  • For corn soup:
  • Heat butter and oil in a large pot over medium-high heat. Add onion and garlic and cook, stirring often, until softened and beginning to brown, about 5 minutes. Add corn; season with salt and pepper. Cook, stirring occasionally, until corn is softened and beginning to brown, 6-8 minutes.
  • Add thyme sprigs and 5 cups water to pot. Bring corn mixture to a boil, reduce heat, and simmer until corn is very soft, 6-8 minutes longer; discard thyme sprigs.
  • Working in batches, purée corn mixture in a blender until smooth (or use an immersion blender in the pot). Strain through a fine-mesh sieve into a large bowl, pressing on solids; discard solids. Transfer soup to a large bowl, cover, and chill until cold, at least 2 hours.
  • For lobster salad and assembly:
  • Pour water into a large pot to a depth of 1"; bring to a boil and salt generously. Add lobsters, cover, and cook until bright red, 8-10 minutes. Transfer lobsters to a rimmed baking sheet and let cool.
  • Crack lobster shells, pick meat from tail and claws, and cut into bite-size pieces (you should have about 2 cups meat).
  • Whisk shallot, lemon juice, and mustard in a medium bowl. Gradually whisk in 2 tablespoons oil; season dressing with kosher salt and pepper. Add lobster meat, 3 tablespoons celery leaves, and 1 tablespoon tarragon; toss gently to coat. Cover and chill until cold, about 1 hour.
  • Divide soup among bowls and top with lobster salad and tarragon and celery leaves. Drizzle with oil and season with sea salt and pepper.
  • DO AHEAD: Lobster can be cooked and picked 1 day ahead. Cover and chill. Soup and lobster salad can be made 8 hours ahead. Keep chilled. Toss lobster meat with celery leaves, tarragon, and dressing just before serving.

1 cup cognac
2 pounds onion, diced
1 pound carrot, diced
1 pound celery, diced
8 lobster carcasses
6 leeks, washed and diced
2 bulbs fennel, diced
2 quarts heavy cream
2 pounds cooked lobster meat, cut into bite-size pieces
1 cup creme fraiche
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh tarragon
2 lemons, zested and juiced
2 1/2 tablespoons black caviar, for garnish

Steps:

  • For the veloute: In a stockpot, combine cognac, onions, carrots, celery, lobster carcasses, leeks and fennel. Add 1 gallon water and bring to a simmer. Add the cream and simmer until thickened. Press through a fine-mesh sieve. Chill until ready to serve.
  • For the lobster salad: Combine the lobster meat, creme fraiche, chives, parsley, tarragon, and lemon zest and juice in a bowl and chill.
  • Serve the veloute in soup bowls, topped with some of the lobster salad and garnished with a teaspoon of caviar.

1 ounce fresh squeezed orange juice
1 ounce fresh squeezed lemon juice
2 ounces canned pineapple juice
2 ounces 10 percent blended olive oil, plus 2 ounces
Salt and freshly ground black pepper
Sugar
1 medium beet
2 ounces water
4 ounces micro-greens
1 1/2 pounds cooked and chilled lobster meat
1/4 cup chopped chives
16 orange segments

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine orange juice, lemon juice, and pineapple juice, in a blender. With the blender running, slowly add 2 ounces of the olive oil to emulsify. Add pepper, salt, and sugar, to taste. Set aside.
  • Roast 1 whole beet with the skin on, until tender, about 1 hour. Remove the beet from the oven and let cool. Peel the skin off the beet and trim the ends. Cut the beet into quarters and puree in a blender with the remaining 2 ounces of olive oil and 2 ounces of water. Season with salt and pepper, to taste. Put beet oil in a squirt bottle and set aside.
  • Toss micro-greens in some of the citrus vinaigrette and place in the center of a plate. Toss chopped lobster meat and some of the chopped chives in remaining citrus vinaigrette and season with salt and pepper. Place 3 ounces of the lobster meat mixture in front of the micro greens. A ramekin or circular mold may be used to form the salad. Drizzle roasted beet oil on either side of the salad. Place orange segments and remaining chives on top of the lobster meat.

2 tablespoons fresh lime juice
1 tablespoon balsamic vinegar

1/3 cup finely chopped green onion

  • In food processor bowl, add 1/2 cup tomato and next 4 ingredients.
  • Process until smooth.
  • Pour mixture into a medium bowl; stir in 1 1/2 cups tomato and next 5 ingredients; set aside.
  • Cut whole kernels from ears or corn to measure 2 cups.
  • Combine corn, lettuce and watercress in a large bowl; toss well.
  • Add tomato mixture, and toss gently to coat.
  • Divide evenly among 4 serving plates; top each with lobster.

Vegetable oil for greasing the molds
2 pounds boneless pike
3 egg whites
2 tablespoons Cognac
2 tablespoons chopped chives
1/4cup minced shallots
1 lemon, juiced
1/2 teaspoon freshly grated nutmeg
Salt
Freshly ground white pepper
2 to 3 cups heavy cream
2 lobster tails, about 6 to 8 ounces each
1/2 cup green peas
12 baby carrots, blanched and halved
Drizzle of truffle oil
1/4 cup fresh chervil sprigs
Parsley

Steps:

  • Preheat the oven 375 degrees F. Oil 12 (4-ounce) ring molds.
  • In a food processor, fitted with a metal blade, combine the fish, egg whites, Cognac, chives, shallots, lemon juice and nutmeg. Puree until smooth.
  • Add enough cream so the mixture is smooth but slightly thick. Season with salt and pepper.
  • To test the seasoning, bring a small pot of water to a simmer. Add a teaspoon of the mouse to the water and poach for about 2 minutes. Remove and taste. Adjust the seasoning according to taste.
  • Fill each mold with the fish mixture.
  • Place the molds in a baking dish and fill with water, enough to come up 1-inch of the mold. Place in the oven and cook for about 12 to 15 minutes or until firm. Remove from the oven and cool completely.
  • Refrigerate until chilled. Slice the lobster tails, 1//4-inch thick. In a mixing bowl, combine the lobster, peas, and carrots. Toss with a drizzle of truffle oil. Season with salt and pepper. Add the chervil and toss well.
  • To serve, unmold the mousse and place in the center of each plate. Fill the center of each mousse with the lobster salad. Garnish with parsley.
