LEMON-PARMESAN BROCCOLI image

12 ounces broccoli florets (5 cups raw)
2 Tablespoons extra-virgin olive oil
2 garlic cloves, minced
1/2 teaspoon grated lemon rind
1 teaspoon fresh lemon juice
1/4 teaspoon kosher salt
3 Tablespoons shaved fresh Parmesan

Steps:

  • 1. Arrange broccoli in a steamer. Steam covered, 4 minutes or until crisp-tender. Place broccoli in a large bowl. 2. Heat a small skillet over medium-high heat. Add oil and garlic; cook 2 minutes or until garlic is fragrant. Add oil mixture, rind, juice and salt to broccoli; toss to coat. Sprinkle broccoli mixture with cheese.
