Spicy, sweet, and easy to make, these chili lime peanuts are the perfect snack for anytime!

Number Of Ingredients 8

2 tsp vegetable oil
Juice and zest of 2 limes
1 tsp fine salt
2 tsp granulated sugar
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp cayenne pepper
2 cups peanuts, raw and unsalted

Steps:

  • Preheat your oven to 300°F.
  • Mix together oil, lime juice, zest, salt, sugar, chili powder, garlic powder, and cayenne pepper in a small bowl. Spread peanuts in an even layer onto a rimmed baking sheet. Pour over spice mix and toss to coat peanuts thoroughly in seasoning.
  • Bake peanuts in preheated oven for 30-40 minutes, stirring two or three times during cooking, until nuts are golden brown, and almost dry to the touch. Let cool completely before serving.

1/4 cup peanut oil
3 garlic cloves, thinly sliced
1 lb unsalted peanuts, roasted
4 tablespoons dried ancho chile powder (or any chili powder)
1/2 teaspoon cayenne pepper
2 -3 teaspoons salt

Steps:

  • Heat oil in a large skillet over very low heat. Add garlic and cook until crisp and brown, stirring occasionally (15-20 minutes). DO NOT BURN. Discard garlic.
  • Add peanuts to skillet, increase heat to medium high and shake pan until oil is absorbed by peanuts and peanut aroma is strong (5 minutes); remove from heat.
  • Stir in chili powder and cayenne pepper and season with salt.

I found several spiced nut recipes on the internet some time ago. This was one in a group I saved, but the source did not transfer with the recipes. I made these peanuts for Christmas for a friend & she loved them. I did have to sample them before I packaged them & decided it was a good thing I was giving them away or I would have eaten them all myself! Update: I forgot to mention that I also zested the limes before juicing them & tossed the zest with the spices & peanuts. I just couldn't see wasting all that wonderful flavour.

6 cups unsalted cocktail peanuts (I used blanched unsalted peanuts)
6 tablespoons fresh squeezed lime juice
6 tablespoons chili powder
1/2 teaspoon cayenne pepper
4 teaspoons sea salt (or kosher salt)

Steps:

  • Mix juice & seasonings in a large mixing bowl.
  • Add nuts & toss well to coat.
  • Spread on 2 parchment lined rimmed baking sheets.
  • Bake at 250F for about 45 minutes, stir every 15 minutes.
  • Nuts should be dry.
  • Cool & store in airtight container.

After popcorn,peanuts are my favorite snack and I'm always looking for new recipes to try. Use more chilis or garlic if you want. There's a 24 hour waiting period before you can dig in!

5 small dried red chilies
3 garlic cloves
2 teaspoons olive oil
2 lbs blanched unsalted peanuts
1 teaspoon coarse salt
1/4-1/2 teaspoon chili powder

Steps:

  • Heat chilies, garlic, and oil in a heavy skillet until garlic turns golden.
  • Stir frequently.
  • Remove chilies and garlic, and pour peanuts into oil.
  • Stir over medium heat about 5 minutes until slightly browned.
  • Sprinkle with salt and chili powder and stir well.
  • Remove from heat and store in a covered jar or tin.
  • Store at least 24 hours before serving.
  • These improve with age.
  • Chiles and garlic can be returned to peanut mix if desired for color and flavor.

1 tablespoon olive oil
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons sugar
1 teaspoon curry powder
1 teaspoon garlic powder
1/4 teaspoon cayenne powder
2 1/2 cups dry roasted peanuts

Steps:

  • Preheat oven to 300°F. Heat 1 tablespoons olive oil in heavy large skillet over medium heat. Add chili powder, cumin, sugar, curry powder, garlic powder and cayenne pepper and stir until fragrant, about 30 seconds. Add peanuts and stir until coated, about 2 minutes. Transfer to large rimmed baking sheet.
  • Bake peanuts until golden brown and almost dry, stirring occasionally, about 15 minutes. Season with salt. Transfer to paper towels; drain. Cool. (Peanuts can be made 3 days ahead. Store in airtight container at room temperature.)

This recipe is adapted from "Simply Mexican" by the chef and cookbook author Lourdes Castro. With a twist of lime juice and cayenne pepper, these nuts have a distinctly Latin flavor. They will keep guests happy as hosts finish dinner in the kitchen.

1 cup roasted, unsalted peanuts
3 tablespoons sugar
1 teaspoon cayenne pepper
1 teaspoon coarse salt or kosher salt
1 lime, quartered

Steps:

  • In a nonstick pan over high heat, toast peanuts for 2 to 3 minutes, shaking pan or stirring often until nuts begin to smell toasty. Pour into a bowl and set aside.
  • Decrease heat under pan to medium and sprinkle sugar, cayenne pepper and salt evenly into it. Melt mixture slowly, stirring a bit with a heat-proof silicone spatula. When sugar has melted, add peanuts to pan and coat well. Mixture might clump a bit.
  • Pour nuts onto parchment paper. As soon as mixture is cool enough to handle, break apart any clumps of peanuts. Serve with wedges of lime. Squeeze lime over nuts right before eating.
