CHILI SCALLOPS

1 pound sea scallops, rubbery appendage from the side of each sea scallop removed cornstarch for dusting scallops
1 tablespoon each of Oriental sesame oil and vegetable oil
1 tablespoon rice vinegar
1 tablespoon chili paste with garlic
2 teaspoons soy sauce
2 tablespoons snipped chives

Steps:

  • Heat the sesame and vegetable oils in a skillet over moderate heat. Very lightly dust the scallops with cornstarch and saute them, on one side only until quite crusty on one side. When crusty, put a lid on the skillet and finish steaming the scallops by steaming them without overcooking them.
  • Remove them from skillet and transfer them, browned side on top of the lentils. To the skillet add the rice vinegar, chili paste and 2 teaspoons soy sauce and reduce until syrupy, spoon over the chili scallops and dust with chives.

600 g fresh scallops
2 tablespoons finely chopped lemongrass
1 Thai chile, finely chopped
60 ml lime juice
1 spring onion, finely chopped
1 garlic clove, finely chopped
1 teaspoon dried coriander
1 teaspoon ground cumin
60 g butter

Steps:

  • sauté the chilli, garlic, cumin and coriander in a hot skillet add the lemongrass and the spring onion until they have softened, but not browned.
  • Add the scallops and sauté for one minute or until they turn from translucent to opaque.
  • Place one cup of cooked basmati rice in the centre of a plate and arrange the scallops around it, deglaze the pan with the lime juice and drizzle over the scallops.
  • Garnish with fresh coriander and serve.

1 tablespoon butter
1 tablespoon peanut oil
11/2 teaspoon garlic, crushed
11/2 teaspoon ginger, fresh, grated
5 scallions, fresh, finely sliced
1 lime, finely grated rind
1 - 2 birds eye chili, fresh, red, hot, very finely chopped
3 - 4 tablespoons lime juice, fresh
1 tablespoon brown sugar (optional)
4 cups rice, steamed, jasmine
4 lime wedges (garnish)

Steps:

  • 1. Wash and pat dry your scallops.
  • 2. Slice each scallop in half horizontally.
  • 3. Heat the butter and oil in a pan and add the garlic and ginger and fry for 1 minute.
  • 4. Next add the scallions and fry for 1 minute, you do not want to brown.
  • 5. Now add the scallops and fry over high heat for 5 minutes, stir in the lime rind, chili, lime juice and sugar and cook for another minute.

13 ounces Peas, frozen
6 ounces Mascarpone
6 pieces Prosciutto, thin slices

3 tablespoons Butter, unsalted
1 piece Jalapeno, finely chopped
1 piece Lime, zest and juice

  • Preheat oven to 375.
  • Pea Puree:
  • Place peas in small saucepan with enough water to just cover them.
  • Bring to boil and then simmer 3-5 minutes, until hot and tender.
  • Drain and place in food processor with mint and mascarpone.
  • Pulse until smooth, but still has a bit of texture.
  • Season to taste with KSP.
  • Crispy Prosciutto:
  • Lay Prosciutto out on a baking sheet covered in parchment in a preheated over for 10-12 minutes or until crispy and brown.
  • Remove to paper-lined plates and break apart into shreds.
  • Jalapeno-Lime Butter:
  • Melt butter and then add chili, lime juice and zest.
  • Salt to tast.
  • To serve:
  • Place a dollop of pea puree on each plate and top with scallops.
  • Drizzle a spoonful of the butter and crumble prosciutto on top of each scallop.

Steps:

  • Pat the scallops dry and season with salt and pepper. Add butter to the pan and sear the scallops two minutes each side until golden brown. Remove to a dish.
  • Add the garlic, basil and chili paste and cook 1 minute. Be careful not to burn the garlic. Add the lemon juice and remove from heat. Serve the scallops on top of the sauce and garnish with micro greens.

3 ounces pork, chorizo
2 ounces black beans (canned, reserve some of the liquid)
1 teaspoon minced garlic
1 teaspoon minced onion
2 teaspoons sweet potatoes (cooked, cut into small cubes)
2 tablespoons chopped tomatoes
2 teaspoons bell peppers (cut into small cubes)
2 teaspoons pureed mangoes
1 teaspoon chili paste
2 teaspoons butter
1 tablespoon lemon juice
6 diver scallops
6 medium shrimp (deveined & shelled)
1/8 teaspoon salt
1/8 teaspoon ground pepper
2 ounces white wine

Steps:

  • In a saute' pan cook chorizo until it begins to get firm.
  • Add remaining vegetables and black beans. Use some of the bean liquid to thin out the mixture. You want to have a pourable consistency. This should take about 5 minutes.
  • Add mango puree and asian chili paste.
  • In a separate pan, melt butter, then add scallops. Do not shake pan. The scallops must develop a crust before turning over. About 2-3 minutes.
  • Add shrimp. When it's time to turn the scallops over, it'll be time for the shrimp to be turned as well. You want the shrimp to be orange with slight charring.
  • Carefully add the wine. It should sizzle, then bubble and mix with the flavors of the scallops and shrimp.
  • Press on scallops to check doneness. It should be slightly resistant.
  • Take a tablespoon and scoop out about 3 ounces of the chili mixture onto each plate.
  • Top with micro mint greens.
  • Add 3 Scallops in a triangle pattern.
  • Intermix with 3 shrimp. Drizzle juices from seafood pan over the diah.

12 pieces 2-inch by 2-inch by 1-inch thick slices of braised pork belly, recipe follows
2 tablespoons canola oil, divided
3 tablespoons chile garlic oil, garnish, recipe follows
1 tablespoon pomegranate molasses, garnish
1 bunch micro greens/herbs, garnish
1 salt and pepper, as needed
1 pound uncut bacon slab
1 cup water
1/4 cup soy sauce
1/4 cup aji mirin
2 tablespoons rice wine vinegar
2 tablespoons brown sugar
2 pieces star anise
1 piece cinnamon stick
2 pieces bay leaves
1 teaspoon whole peppercorns
1 stalk lemongrass
1/2 cup canola oil
1 tablespoon sesame oil
3 pieces garlic cloves, finely chopped
2 tablespoons green onions, minced
1 tablespoon fish sauce
5 pieces red Fresno chilies, stems removed and coarsely pureed in a food processor

Steps:

  • * The abductor muscle is also called the foot. It is a small rectangular tab of fibrous muscle attached to the side of some scallops.
  • OVERVIEW -- Season scallops with salt and pepper. Set aside. In a sauté pan over medium heat add 1 tablespoon oil and heat until just shimmering. Add scallops and sear for 2 minutes or until golden brown. Flip and sear for an additional minute or until slightly opaque in the center. Set scallops aside. In a clean saute pan over medium high heat add oil and sear chilled pork belly for 1 to 2 minutes on each side or until crispy and heated through. To serve alternate scallops and pork belly on a serving platter, drizzle with garlic chile oil and pomegranate molasses. Garnish with micro greens.
  • BRAISED PORK BELLY -- Preheat oven to 250 degrees F. Place bacon slab in a dutch oven or roasting pan. Add water, soy, aji mirin and vinegar. Sprinkle in the brown sugar, peppercorns, star anise, cinnamon stick and bay leaf. Cover tightly (use a couple layers of tinfoil if you don't have a heavy lid for your dish) and roast in the oven 3-4 hours. Remove from oven, uncover and let cool in the liquid until it reaches room temperature. Once cool, put it in a Ziploc bag and refrigerate overnight.
  • CHILE GARLIC DRIZZLE -- Peel outer 2 layers of lemongrass. Trim top two-thirds (skinny part) and discard. Trim very bottom root end. Cut lemongrass in half lengthwise and then finely slice lemongrass into very thin half moons. Place canola and sesame oil together in small saucepan over low heat. Add lemongrass. Cook on low for 15-20 minutes or until small bubbles from the lemongrass subside. Remove from heat and cool for 10 minutes. Add garlic, green onion, fish sauce and chilies. Stir well and allow to sit 30 minutes. Transfer to a small mason jar with a tight fitting lid and use as needed.

2 lbs. Bay Scallops

1/2 cup fresh cranberries
2 tablespoons vegetable broth
3/4 teaspoon chili powder
2 tablespoons orange juice
1/4 teaspoon cumin
1 tablespoon fresh cilantro coarsely chopped, plus additional for garnish

Steps:

  • 1. Preheat oven to 450 degrees. Prick sweet potatoes with a knife and bake in the center of the oven for 1 hour or until tender. When potatoes are cool enough to handle, scoop out flesh into a large bowl. Add melted butter, chipotle chili and the adobo sauce. Using an electric mixer, whip potatoes until smooth. Cover and keep warm while preparing scallops. 2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. When hot, add enough scallops to fit in a single layer in the pan. Season to taste with the salt and pepper. Sauté, turning once, until lightly browned and cooked through, 3 to 4 minutes or more-being careful not to overcook. Remove to a platter to keep warm and continue cooking remaining scallops, adding more oil if necessary. 3. Remove pan from heat and add the 4 tablespoons of white wine to the pan. Return to heat and cook until reduced by half. Add the ½ cup of fresh cranberries and cook just until they pop. 4. In a medium bowl combine the cranberry mixture, the vegetable broth, chili powder, orange juice, cumin and 1 tablespoon of the cilantro. 5. To serve arrange the sweet potatoes in the center of a heated serving plate; surround potatoes with the scallops. Drizzle scallops with the vinaigrette and garnish with the fresh cilantro,sprinkling all over serving plate.

  • To make the sauce: cut the carrot into ¼-inch slices; add to a saucepan with 1 cup water, soy sauce, sriracha, and cumin.
  • Bring to a boil; decrease heat to a simmer and cook until the carrots are just tender, about 15 minutes.
  • Puree the mixture in a food processor, adding the vinegar, olive oil, and mint as the processor is running.
  • The sauce should have the consistency of ketchup; if too thick, add a bit of water; if too thin, simmer a few minutes to reduce it; set aside.
  • Wash the scallops and remove the small, tough, side muscle; put scallops in a bowl.

1/2 cup(s) each water, rice vinegar and sugar
1 tablespoon(s) red chili flakes
3 clove(s) garlic minced
1 tablespoon(s) cornstarch

12 large sea scallops
salt and pepper
1/4 cup(s) olive oil

Steps:

  • Place the pineapple and water in a food processor and blend until smooth. Transfer to a saucepan. Add the sugar vinegar, chile flake and garlic. Bring to a boil and simmer for 5 minutes. Mix the cornstarch and water together and add to sauce and cook 5 more minutes to thicken. Set aside and keep warm.
  • Add the olive oil to a skillet. Pat the scallop dry and season with salt and pepper. Once the oil is smoking working in batches to not over crowd pan sear the scallops for 2 minutes each side.
  • Serve with the sauce.

2 tablespoons fresh lime juice
1 teaspoon grated lime zest
1-tablespoon fish sauce
1 teaspoon grated ginger
1 1/2 pounds sea scallops
2 tablespoons vegetable oil
1/4 cup sweet chili sauce
2 tablespoons chicken broth
2 teaspoons fish sauce
Hot steamed rice
1/4 cup coarsely chopped cilantro

Steps:

  • Combine marinade ingredients in a medium bowl. Add scallops and stir to coat. Let stand for 10 minutes. Drain scallops and pat dry with paper towels. Heat a wide nonstick frying pan over medium-high heat until hot. Add oil, swirling to coat the bottom. When oil is hot, add scallops, and pan-fry, turning once, until golden brown, about 2 minutes on each side. Combine sweet chili sauce, broth, and fish sauce in a small saucepan; heat to simmering. 1 medium carrot
2 teaspoons soy sauce

1 tablespoon extra-virgin olive oil

1 1/4 pounds large sea scallops (20 scallops)

  • TO MAKE THE SAUCE: Cut the carrot into 1/4-inch slices. Place in a small saucepan along with 1 cup water, the soy sauce, sriracha, and cumin. Bring the mixture to a boil. Lower the heat to a simmer and cook until the carrots are just tender, about 15 minutes. Purée the mixture in a food processor, adding the vinegar, olive oil, and mint as the motor is running. The sauce should have the consistency of ketchup. If the sauce seems too thick, add a bit of water. If it seems too thin, simmer the sauce for a few more minutes to reduce it. Set aside. Wash the scallops and remove the small, tough side muscle (see REFERANCE & APPENDIX, _Sage Advice About Grilling Scallops). Place in a medium bowl. Add enough olive oil to lightly coat. Season with salt and pepper. Place the scallops on the grate 1 to 2 inches apart.   • Dust scallops with small amount of flour.
  • Cook two minutes.
  • Turn scallops and cook additional 2 minutes.
  • Add chili sauce mix.
  • Reduce heat to simmer and cook 3 additional minutes.
  • Serve over angel hair pasta.
