RED CHILE SALT & CILANTRO KETCHUP FOR FRENCH FRIES
Something a little different for your fries! You can add hot sauce or/and chile powder to the ketchup for more zing.

Steps:
- In a small bowl, mix ketchup, cilantro and vinegar.
- In another small bowl, mix salt and chile powder.
- While your fries are still hot, sprinkle them with the salt mix and use the ketchup for dunking.
- I roasted potato wedges sprayed with olive oil in a hot oven till crispy and browned.
SPICY CHILI FRENCH FRIES
These spicy baked fries are very easy to make, and a great way to kick up your burger platter.

Steps:
- Preheat an oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
- Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes.
- Whisk together the oil, vegetable juice cocktail, chili powder, ground cumin, onion granules, garlic powder, cayenne pepper, sugar, and salt in a large bowl. Drain the potatoes, and pat dry with paper towels. Toss the potatoes with the oil and spice mixture; stir until evenly coated. Arrange fries in a single layer on the prepared baking sheet.
- Bake fries in preheated oven for 20 minutes. Turn and continue to bake until browned and crispy, about 20 additional minutes.

EMERIL'S BEEF CHILI CHEESE FRIES
A great Super Bowl or teen party snack (or a hearty nosh for anyone)! Make the chili ahead of time, then just dish it up on some cheesy fries and serve! Emeril's original recipe calls for deep-frying shoestring potatoes yourself, but I use the frozen-fry shortcut! I also seemed to need more masa harina than originally called for. Can also be made with vegetarian meat crumbles. Cook time includes chili preparation.

Steps:
- Season onions with salt and cayenne and saute, stirring, until they begin to wilt, about 2 minutes.
- Add the beef, chili powder, cumin, red pepper, and oregano, season with salt and cayenne, and cook until meat is done (no pink).
- Add garlic, tomatoes, tomato paste and 2-1/2 cups beef stock, bring to boil and reduce heat to medium-low.
- Simmer uncovered about 1 hour, stirring occasionally and skimming fat that rises to the surface.
- Combine masa harina flour with remaining 1/2 cup stock.
- Slowly add to the pot, stirring to blend, which will thicken the mixture.
- Cook for 30 minutes and correct seasoning.
- From here, Emeril deep fries his own shoestring French fries, but I use frozen French fries or waffle fries to save time (and mess!).
- Prepare frozen potatoes as package directs.
- Lower oven heat to 400 degrees F, place fries in bottom of a large glass rectangular baking dish.
- Sprinkle cheeses over the fries and bake for 3 to 4 minutes.
- Remove pan from oven and spoon hot chili over the top of the fries.
- Garnish with sour cream and jalapeños and serve immediately.

SEASONING SALT FOR FRENCH FRIES, HOME FRIES, AND FRIED POTATOES
Fried potatoes are tasty in any form, but this flavorful salt will take your homemade potatoes to a new level. With the added flavor from the seasoning you might even use less salt. Note -- Stir well before each use because the ingredients will settle out in layers.

- Prepare french fries as directed on the package.
- Stir cornstarch and water in a small cup until cornstarch dissolves; set aside. Bring milk and margarine to a boil in a saucepan, stirring constantly. Reduce the heat and whisk the cornstarch mixture into the milk mixture, bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth. Add the cheese to the milk mixture and stir until the cheese has melted and is well combined.
- Prepare chili as directed on the can. Pour the cooked chili and the cheese sauce over the top of the cooked french fries.
