CHILE-LIME RUB



Chile-Lime Rub image

Number Of Ingredients 7

1 tablespoon chile powder
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 teaspoon ground coriander
1/4 teaspoon sugar
Zest of 1 lime

Steps:

  • Mix together the chile powder, salt, cumin, cayenne, coriander, sugar and lime zest in a bowl. This spice mix not only goes great with chicken and pork, but also to rim a spicy margarita.

MINT-CHILI SAUCE

Yield Makes about 2/3 cup

Number Of Ingredients 8

1/3 cup (packed) fresh mint leaves
1/4 cup rice vinegar
3 tablespoons light corn syrup
2 garlic cloves, minced
2 tablespoons water
1 tablespoon soy sauce
1 tablespoon oriental sesame oil
Generous pinch of dried crushed red pepper

Steps:

  • Purée all ingredients in blender. Transfer to bowl. Let stand 1 hour at room temperature. (Can be made 1 day ahead. Cover and chill. Bring to room temperature.)

This is a good general barbeque rub! Sprinkle or rub onto ribs, tri-tips, steaks, chicken or whatever meat you desire! Let rubbed meat sit at least an hour before cooking.

2 1/2 lbs leg of lamb
1/2 cup cooking oil
1 tablespoon crushed garlic
1/2-1 tablespoon hot chili paste (to taste)
1/2 teaspoon fresh ground black pepper
1 cup loose packed fresh mint leaves

Steps:

  • Leave lamb to get to room temperature.
  • place all other items in food blender to create a paste. spread half of mixture over lamb, alow to stand for 2 hours.
  • Place in foil tray and cover with rest of mixture. Cover tray with foil( TIGHTLY ).
  • cook for 1 hour in covered bbq. Remove foil and cook a further 30 minutes, or until done to your taste.
  • Mint leaves to be loose packed.
