CHILI CHEESEBURGERS

- Divide the ground beef in half and form 6 somewhat-thin patties out of one of the halves. Sprinkle with salt and pepper. Fry the patties over medium to medium-low heat in a large skillet, 3 to 4 minutes per side. Set aside.
- In the same skillet over medium-high heat, add the rest of the ground beef, the garlic, onions and some salt and pepper and cook until browned. Drain off the grease and mix in the diced tomatoes, kidney beans, tomato paste, chili powder and cumin. Cook until nice and bubbly, about 20 minutes. Taste and adjust the seasoning.
- Lay half of each bun on 6 plates (so each plate gets half a bun.). Lay 1 patty on each bun piece, then divide the cheese among the patties. Ladle the hot chili all over the patties. Serve with Thin Fries if desired.
- Peel and rinse the potatoes, then cut them into sticks by cutting each potato into 4 or 5 vertical pieces, then cutting each piece into sticks. Put the potato sticks in a large bowl, cover with cold water and swish them around to get off the extra starch. Pour off the starchy water and add fresh water. Continue washing the potatoes until the water runs clear. Cover with water again and allow them to soak for 2 or 3 hours. (You can also stick them in the fridge and let them soak for up to 3 days.)
- When you're ready to make the fries, drain off the water and lay the potatoes sticks on baking sheets lined with paper towels. Blot them with more paper towels to dry them.
- Heat a few inches of oil in a heavy pot until a deep-fry thermometer registers 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, about 1 minute per batch. They should not be brown at all at this point! You just want to start the cooking process. Remove each batch and drain them on new/dry paper towels.
- When all the potatoes have been fried once, turn up the heat until the oil reaches 400 degrees F. Start frying the potatoes in batches again, cooking until the fries are golden and crisp, 1 to 2 minutes. Remove from the oil and drain on paper towels.
- Sprinkle the fries with sea salt and dive in!
CHILI DOG BACON CHEESEBURGERS AND FIERY FRIES

- Preheat broiler to high.
- Place bacon on slotted broiler pan. Cook bacon 10 inches from the heat and cook 3 to 4 minutes on each side until crisp then adjust oven to bake setting for temperature recommended on fries packaging.
- While bacon cooks, make the burgers. Preheat a large nonstick skillet over medium high heat. Mix beef with diced dogs, chili powder, grill seasoning, Worcestershire, 1 teaspoon of hot sauce and ketchup. Form 4 large patties. Add a drizzle of oil, 1 turn of the pan and add the patties. Cook burgers 6 minutes on each side, then top with 2 slices bacon and 1 slice of cheddar, each. Turn pan off, cover with loose foil tent and let cheese melt, 1 to 2 minutes.
- While the burgers cook, add fries to oven and cook until extra-crisp. Remove from oven. Place butter, 1 tablespoon hot sauce and garlic in a small dish and microwave on high 20 seconds then transfer fries to a large bowl. Toss fries with garlic-hot sauce butter and chives and season with salt, to taste.
- Slather chili sauce on the tops of split keiser rolls. Place bacon chili-cheese burgers on bun bottoms and top each burger with lettuce, cilantro, and lime juice. Set bun tops in place. Pile fries alongside and serve.
LOADED CHILI CHEESEBURGERS

- Prepare the onion rings as the label directs; keep warm. Meanwhile, preheat a grill to medium high. Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. During the last minute of grilling, top each patty with a slice of cheese. Remove the patties to a plate and let rest 5 minutes. Grill the buns, cut-side down, until lightly toasted, about 1 minute. Top the bun bottoms with the burger patties, chili and onion rings. Drizzle with the barbecue sauce, then cover with the bun tops.

FAVORITE CHILI CHEESEBURGERS

- In a large bowl, combine beef, chili sauce and chili powder, mixing lightly but thoroughly. Shape into eight 1/4-in.-thick patties. Place 2 tablespoons cheese onto the center of each of four patties. Top with remaining patties; press edges firmly to seal., Grill burgers, covered, over medium heat or broil 4 in. from heat 4-6 minutes on each side or until a thermometer reads 160°. Serve on buns with cheese sauce.

- Preheat the broiler to High. Cook bacon in broiler 10 inches about flame for 3-4 minutes on each side until crisp. Remove and put onto a plate.
- Adjust oven to bake, setting the temperature to the recommended temp on the package of the fries and bake the fries.
- While the fries cook, make the burgers. Preheat a non-stick skillet over medium-high heat. Mix the beef with the chopped hot dogs, chili powder, grill seasoning, and ketchup. Form 4 large patties.
- Add a drizzle of vegetable oil once around the skillet and add the patties. Cook the burgers for 6 minutes on each side, then top each with 2 slices of bacon and 1 slice of cheddar cheese. Turn the heat off, cover the pan with a loose piece of foil and let the cheese melt for 1-2 minutes.
- When the fries are extra crisp remove them from the oven. Place the butter and the garlic in a small dishand. Microwave on high for 20 seconds, and then transfer the fries to a large bowl. Toss the fries with the butter and garlic and chives and season with salt.
- Slather the chili sauce on top of the bottom Kaiser rolls. Place the burger on the bottom of the roll and set the top of roll on top. Pile fries alongside the burger and serve.

CHILI CHEESEBURGERS AND HOMEMADE BUNS
This is a combination of 2 of my recipes. I made the hamburger buns differently, and will tell ya how I made the burgers, too!

- Day 1:.
- Make my chili, recipe #50732, refrigerate or set aside if making the same day (or use your own favorite chili, of course!).
- The night before, wrap 1 loaf frozen bread dough in plastic wrap, refrigerate overnight to thaw.
- Day 2:.
- Make 4 round balls out of bread dough, place on greased cookie sheet, oil dough lightly, cover with plastic wrap and let rise till doubled.
- About 3 hours.
- Brush with melted butter and garlic powder, sprinkle with some seasoning salt.
- Bake about 22 minutes in 350º oven till golden brown. Place on rack to cool.
- Make 4 patties out of ground beef, season each side with seasoning salt and coarse ground pepper.
- Cook on the grill or in frying pan till done.
- Top with cheese.
- Warm chili in microwave till hot.
- Top burger on cut bun with chili using a slotted spoon so there isn't too much juice.
- Enjoy!

GREEN CHILI CHEESEBURGERS

- Process Hellmann's® or Best Foods® Real Mayonnaise, green chilies and garlic in food processor until smooth. Remove to medium bowl, then stir in jalapeno peppers and cilantro. Season, if desired, with salt and black pepper. Cover and refrigerate at least 30 minutes.
- Meanwhile, shape ground beef into 4 burgers. Brush each burger on both sides with oil, then season, if desired, with salt and black pepper. Grill, turning once, 8 minutes or until desired doneness. Top burgers with cheese and cook until cheese is melted. Arrange burgers on buns, then top with a dollop of green chili mayonnaise. Serve remainder of mayonnaise in small bowl for dipping.
