1 fresh pineapple
3 tablespoons brown sugar
1 tablespoon lime juice
1 tablespoon olive oil
1 tablespoon honey or agave nectar
1-1/2 teaspoons chili powder
Dash salt

Steps:

  • Peel pineapple, removing any eyes from fruit. Cut lengthwise into 6 wedges; remove core. In a small bowl, mix remaining ingredients until blended. Brush pineapple with half of the glaze; reserve remaining mixture for basting., Grill pineapple, covered, over medium heat or broil 4 in. from heat 2-4 minutes on each side or until lightly browned, basting occasionally with reserved glaze.

20 ounces sweet Italian turkey sausage (bulk, or links with casings removed)
1 medium onion, chopped to equal about 2 cups
1 (20-ounce) can pineapple tidbits in juice (divided)
2 (28-ounce) cans seasoned diced tomatoes (such as Dei Fratelli)
1 (15-ounce) can black beans, rinsed and drained
1 (6-ounce) can tomato paste
1 1/2 tablespoons chili powder
4 teaspoons ground cumin
2 cloves garlic, minced
shredded reduced-fat cheese, reduced-fat sour cream and hot sauce (such as Tapatío) for serving, if desired

Steps:

  • In a non-stick skillet over medium heat, cook sausage and onions, stirring to crumble sausage. Once sausage is cooked through, drain off any fat and transfer the sausage and onions to your slow cooker.
  • Drain the pineapple, reserving both the juice and the fruit separately. Add the juice to the slow cooker. Cover and store the fruit in the refrigerator (it will be added toward the end of cooking).
  • Add tomatoes, black beans, tomato paste, chili powder, cumin and garlic to the slow cooker.
  • Stir everything to combine.
  • Cook on low (6-8 hours), adding reserved pineapple during last hour or two of cooking, or on high (4-5 hours), adding pineapple during last 1/2 hour - hour of cooking.
  • Serve topped with cheese, sour cream and hot sauce, if desired.

La Pina (Mezcal Cocktail With Pineapple and Cilantro) image

A spicy cocktail from Amá. The mezcal gives it some edge, and the pine­apple makes it easy drinking.

Yield Makes 1 cocktail

Number Of Ingredients 8

1 large ice cube, plus more ice cubes for the cocktail shaker
1 slice serrano chile, seeded
5 or 6 fresh cilantro leaves
2 oz. [60 ml] mezcal
1 oz. [30 ml] fresh pineapple juice
3/4 oz. [22.5 ml] rich simple syrup (see note)
1/2 oz. [15 ml] fresh lime juice
1 pineapple leaf for garnish

Steps:

  • Put the large ice cube in an old-fashioned glass. Muddle the serrano chile with the cilantro leaves in a cocktail shaker. Add the mezcal, pineapple juice, simple syrup, lime juice, and ice cubes. Shake vigorously and strain over the large ice cube in the glass. Garnish with the pineapple leaf.

3 tablespoons vegetable oil
2 onions, diced
1 teaspoon salt
1 teaspoon freshly ground black pepper
3 garlic cloves, crushed
2 cups lentils, washed and picked over
3 cups water
1/2 cup canned crushed pineapple

Steps:

  • Heat the oil in a medium pot over moderate heat. Saute the onions with the salt and pepper until golden, about 10 minutes. Stir in the garlic and lentils and cook 2 minutes, stirring frequently. Pour in the water, bring to a boil, reduce to a simmer and cook, covered, 45 minutes. Stir in the pineapple, remove from the heat and serve.

4 cinnamon sticks (3 inches)
12 whole cloves

1/2 cup lemon juice
1 can (12 ounces) ginger ale, chilled
Ice cubes
Additional cinnamon sticks, optional

Steps:

  • In a small saucepan, bring water, sugar, cinnamon and cloves to a boil. Reduce heat; cover and simmer for 15 minutes. Strain. Cool to room temperature., Pour into a large pitcher; stir in juices. Refrigerate until chilled. Just before serving, stir in ginger ale. Serve over ice. Garnish with additional cinnamon sticks if desired.

1-1/4 cups sugar
1/2 cup cider vinegar
1 cinnamon stick (3 inches)
6 to 8 whole cloves

  • Drain pineapple, reserving 1 cup juice. In a saucepan, combine the sugar, vinegar, cinnamon, cloves, salt and reserved pineapple juice. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Discard cinnamon and cloves. Add pineapple. Return to a boil; cook and stir for 2-3 minutes. Serve warm with a slotted spoon.
