1 lb ground sirloin
1/2 c chopped onion
3/4 c red bell pepper
1 tsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1 tsp cumin
1/4 tsp allspice
2 can(s) chopped green chile, 4 oz each
1 1/2 c shredded sharp cheddar cheese, and a little more for the top of the casserole
1 dash(es) milk
1/2 c sour cream
1/4 c all-purpose flour
4 eggs, beaten
dash(es) Tabasco
toppings of sour cream, black sliced olives and chopped green onions

Steps:

  • 1. In a medium-sized skillet, add the olive oil and saute the onion and bell pepper with and a pinch of salt until onion is translucent.
  • 2. Then add the ground beef and season with salt and pepper, cumin, allspice, garlic powder, and cook until just browned (cooked through). It is going in the oven so don't overcook the beef.
  • 3. Set your skillet at an angle and allow all the fat to drain away from the beef mixture. Soak up the grease with a paper towel and discard.
  • 4. In a 9 x 13 x 1 1/2 inch baking dish add one can of the chiles. Spread evenly over bottom of the dish.
  • 5. Sprinkle with the sharp cheese on top of the chiles.
  • 6. Then add the drained ground beef mixture, spreading evenly.
  • 7. Add the second can of chiles over the meat.
  • 8. In a small mixing bowl add the milk, sour cream, flour, salt, pepper, beaten eggs, and a dash of Tabasco. Whisk well until smooth.
  • 9. Pour this mixture evenly over the dish.
  • 10. Bake at 350 degrees for 45 to 50 minutes until it is set.
  • 11. Add some cheese to the top about ten minutes before the dish is done. If the dish is not brown enough when cooking time ends, turn the oven on broil, watch carefully so it doesn't burn, only takes about five minutes or so.
  • 12. Cut into squares to serve and top with sour cream black olives and chopped green onions. Enjoy!

3 can(s) whole green chiles, mild or hot, 10 oz
2 can(s) diced green chiles, 4 oz
1 lb block colby jack cheese, cut into finger-size strips
12 oz shredded colby jack cheese
1 lb breakfast sausage, regular or spicy
5 large eggs
1/3 c baking mix (bisquick)
1-1 1/4 c milk
1 tsp garlic salt
1 tsp ground cumin
OPTIONAL GARNISH:
sliced black olives
chopped cilantro

Steps:

  • 1. Preheat oven to 350 degrees and spray a large rectangular glass baking dish (9×13) with cooking spray.
  • 2. In a non-stick skillet, crumble and brown the breakfast sausage. Drain and set aside.
  • 3. Open and drain each can of whole chiles. Gently stuff each chili with the finger-sized pieces of Colby Jack cheese and arrange in the bottom of the baking dish.
  • 4. Spread one can of the chopped chiles over the whole chiles.
  • 5. Sprinkle half of shredded cheddar/Colby Jack over chiles.
  • 6. Spread the breakfast sausage over the cheese.
  • 7. Spread the other can of chopped chiles over the sausage layer.
  • 8. In a separate medium-sized bowl, combine eggs, garlic salt, cumin, baking mix, and milk. Whisk until most of the clumps are gone (some may remain).
  • 9. Pour egg mixture over chiles.
  • 10. Bake covered for 40-45 minutes.
  • 11. Remove cover and add remaining cheese to the top of the casserole and return to 350-degree oven, uncovered, for an additional 10 - 20 minutes or cheese starts to turn light brown.
  • 12. Remove and allow to sit for 5 minutes before serving.

Saw a recipe for regular Chili Rellenos Casserole and got all twisty when I started making it. Didn't have beef thawed but I had chicken. Didn't have red enchilada sauce, but had salsa verdes. I used my Hatch chiles, but left the canned chiles in the recipe. It goes together super quick, and the family loved it.

1 can(s) (24 - 27 ounce) can whole green chiles, drained
1 - 2 c shredded, cooked chicken
1/2 lb grated cheddar cheese
1/2 lb grated monterrey jack cheese
8 oz crumbled chèvre
3 eggs
1 c canned milk
2 1/2 Tbsp flour
1 can(s) 10 oz, green enchilada sauce

Steps:

  • 1. Preheat oven to 350 degrees F. Grease a 9x13-inch baking dish.
  • 2. Split the chiles open, and spread half the chiles into the bottom of the prepared baking dish. Top with shredded chicken. Combine the Cheddar cheese and Jack cheese, sprinkle half the cheese over chicken and top with the rest of the canned chiles. Scatter the chèvre over the top.
  • 3. Beat the eggs, flour and milk in a bowl. Pour over chèvre covered casserole.
  • 4. Bake in the preheated oven until set, about 30 minutes; remove casserole, and top with the remaining cheese. Pour the green chili salsa over the top; return to oven, and bake until the cheese is melted, about 15 more minutes
  • 5. Serve with cilantro, lime, sour cream, and tortilla chips.

Steps:

  • Cut along one side of each chile and lay flat.

  • In a small bowl, beat the remaining ingredients except the paprika and salsa. Pour over the cheese. Sprinkle with paprika.

8 eggs, separated
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat broiler.
  • Place poblano chiles in single layer on rack of broiler pan sprayed with cooking spray. Broil, 4 inches from heat, 10 min. or until skins are covered with black blisters, turning occasionally. Place hot chiles in bowl; cover with plastic wrap. Let stand 10 min.
  • Heat oven to 375ºF. Remove and discard peels and seeds from chiles. Set chiles aside.
  • Place roasted red peppers in even layer on bottom of 13x9-inch baking dish sprayed with cooking spray; sprinkle evenly with 1/2 the shredded cheese. Top with poblano chiles and remaining shredded cheese.

2 can(s) whole green chilies - 27 oz
1 lb breakfast sauage (i use spicy)
1 lb cheddar cheese (i use sharp)
1 lb monterey jack cheese (can use pepper jack)
8 large eggs
1 c milk (or 1/2 & 1/2)
1 can(s) cheddar cheese soup undiluted (can also use nacho cheese soup)
4 Tbsp flour
1 tsp salt
1/2 tsp black pepper
1 can(s) red enchilada sauce 10 oz

Steps:

  • 1. Drain the chilies, removing the seeds, and dry on paper towels. Brown sausage. Grate the cheeses and mix together. Reserve 3/4 cup of cheese in a small bowl. This will go on top of the casserole later, so you can place it in the refrigerator for now.
  • 2. Spray 9 x 13 pan (or 3 qt casserole dish) with non-stick spray, layer 1/2 of the chilies, 1/2 of the sausage, 1/2 of the cheese, the remaining chilies, then the rest of the sausage and cheese. In medium bowl add the eggs add the milk (or 1/2 & 1/2), cheese soup, flour, salt and pepper, beating until well-mixed. Pour the egg mixture over the sausage, chilies and cheese. Bake at 300 for 1 hour. Then spread the red enchilada sauce over the top. Sprinkle with the reserved cheese you placed in the refrigerator. Bake 1/2 hour longer. Let stand for 5 minutes before serving.

Steps:

  • 1. Preheat oven to 350 degrees. Combine the two kinds of cheese. Spread 1/2 of the cheese mixture in a 13 x 9 baking dish. Sprinkle one can of chiles over the cheese. Lightly salt and pepper. Spread remaining cheese over this layer. Sprinkle with the other can of chiles.
  • 2. Spread well-beaten eggs, evenly, over the chile cheese mixture. Lightly salt and pepper again. It may seem like it is too dry, but don't worry. Bake in a 350 degree oven for approximately 30 minutes or until center is "set".

1/2 cup raisins
8 large poblano chiles, roasted, peeled, seeded and deveined
8 KRAFT Singles
4 eggs, separated
3 Tbsp. KRAFT Grated Parmesan Cheese
1/8 tsp. ground red pepper (cayenne)

Steps:

  • Heat oven to 375ºF.
  • Cook and stir onions and garlic in large nonstick skillet on medium heat 5 min. Add meat; cook 8 min. or until evenly browned, stirring occasionally. Stir in 1 can tomato sauce and A.1. Use any kind of salsa you like, I like Frontera brand salsa verde and would use an entire jar here.

2 cups monterey jack cheese, shredded

1 (15 ounce) can pinto beans, rinsed and drained (or black beans)
12 -16 ounces salsa (any kind)

  • Line a 9 x 13 baking dish with the green chiles.
