MIRACLE MANGO SALSA CHICKEN

6 boneless, skinless chicken thighs
1 cup long-grain white rice
One 16-ounce jar mango salsa
Kosher salt and freshly ground black pepper
Olive oil

Steps:

  • Preheat a large cast-iron skillet over medium-high heat.
  • Sprinkle the chicken thighs with salt and pepper on both sides. Add 2 tablespoons oil to the skillet and sear the chicken thighs until browned well, 2 to 3 minutes per side. Remove the chicken to a plate.
  • Add the rice, 1 1/2 cups water and 1 cup of the mango salsa. Stir and bring to a boil. Add the chicken back to the top of the rice, reduce to a simmer, cover and cook until the chicken and rice are cooked through, 17 to 20 minutes.
  • Serve up a pile of rice, topped with the chicken and garnished with additional mango salsa.

2 tablespoons lemon juice
1 tablespoon lime juice
2 teaspoons minced fresh cilantro or parsley
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
1 medium cucumber, diced
1 medium mango, peeled and diced
1 medium tomato, chopped
1/4 cup finely chopped red onion
CHICKEN:
4 boneless skinless chicken breast halves (6 ounces each)
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For dressing, in a small bowl, mix the first six ingredients. Place cucumber, mango, tomato and onion in a large bowl; toss with dressing., Brush chicken with oil; sprinkle with seasonings. Grill chicken, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 165°. Serve with salsa.

I always pick up fresh herbs, garlic, cucumbers, and hot peppers-as well as honey and onions when I can- at my local farmers market. 6 boneless skinless chicken breast halves (6 ounces each)
1/3 cup minced fresh basil
1/4 cup minced fresh cilantro
1 tablespoon olive oil
2 teaspoons minced garlic, divided
1/3 cup reduced-sodium teriyaki sauce
1 tablespoon minced fresh gingerroot
SALSA:
1 English cucumber, chopped
1 medium mango, peeled and chopped
1/4 cup finely chopped red onion
1 jalapeno or fresno pepper, seeded and minced
1 tablespoon minced fresh basil
1 tablespoon minced fresh cilantro
1 tablespoon olive oil
1 tablespoon rice vinegar
1 tablespoon balsamic vinegar
1 teaspoon minced fresh gingerroot
1 teaspoon honey

Steps:

  • Flatten chicken to 1/4-in. thickness. In a small bowl, combine the basil, cilantro, oil and 1 teaspoon garlic; spread over chicken. Roll up each from a short side and secure with toothpicks. Place seam side down in a greased 11x7-in. baking dish., Combine the teriyaki sauce, ginger and remaining garlic; pour over chicken. Bake, uncovered, at 375° for 35-40 minutes or until a thermometer reads 170°. Discard toothpicks., Meanwhile, combine the salsa ingredients. Cut chicken into slices; serve with salsa.

Number Of Ingredients 10

8 boneless, skinless, chicken thighs (or 4 skinless, boneless chicken breasts)
3 garlic cloves, minced
2 tablespoons freshly grated ginger
1/4 cup tamari sauce or soy sauce
1/4 cup freshly squeezed lime juice
2 mangos, peeled, pitted, and cut into 1/4-inch cubes
3 tablespoons freshly squeezed lime juice
1 to 2 jalapeno chilies, seeds and membranes removed, minced
3 green onions, finely sliced
2/3 cup lightly packed fresh cilantro leaves, stems discarded, coarsely chopped

Steps:

  • Rinse the chicken thoroughly under cold running water. Pat dry with a paper towel. In an oven-proof baking dish combine the remaining ingredients. Add the chicken and turn several times to mix the ingredients.
  • Cover with aluminum foil and marinate for 2 to 4 hours in refrigerator.
  • Combine all the salsa ingredients in a bowl and mix thoroughly with a fork. Reserve.
  • Preheat oven to 375 degrees F.
  • Transfer covered baking dish to oven and bake for approximately 20 minutes, or until chicken is cooked throughout.
  • To serve, spoon a generous serving of salsa onto plate and top with 2 thighs.

MANGO CUCUMBER SALSA



Mango Cucumber Salsa image

I found this recipe in a circular a long time ago and have adapted it over time. Can't remember which part of it is part of the original and what parts are my additions. This is a quick and easy side that perks up a basic grilled chicken breast or as a companion to tortilla chips. Sometimes I will top a bed of greens with leftover grilled chicken and this salsa for an easy and flavorful lunch.

1 large cucumber, peeled, seeded and diced into 1/4 cubes
1 mango, peeled and diced into 1/4 cubes
4 tablespoons red onions, finely diced
1 lime, juice of, only
1/2 teaspoon rice wine vinegar or 1/2 teaspoon white vinegar
1/2 jalapeno, very finely minced
2 -3 slices sweet red peppers, diced into 1/4 inch pieces (optional)

Steps:

  • Mix all ingredients together and let sit in fridge for an 30 minutes or more. This will keep one or two days if it lasts that long.
  • I like to add the red pepper -- mostly for color. It just looks so lovely with the bright orange of the mango.
