LINGUINE CON LE VONGOLE

1 pound dry linguine
1/4 cup extra-virgin olive oil, plus more for serving
4 garlic cloves, slivered
1/4 teaspoon red pepper flakes
2 pounds littleneck or Manila clams, scrubbed and rinsed well
3/4 cup dry white wine, such as Pinot Grigio
1 lemon, juiced
3 tablespoons unsalted butter
Sea salt and freshly ground black pepper
2 handfuls fresh flat-leaf parsley, finely chopped
2 tablespoons lightly toasted and fried bread crumbs (optional)

Steps:

  • Prepare the sauce while the pasta is cooking to ensure that the linguine will be hot and ready when the sauce is finished.
  • Bring a large pot of salted water to a boil, add the pasta and cook for 8 to 10 minutes or until tender yet firm (as they say in Italian "al dente.") Drain the pasta well.
  • Meanwhile, heat the olive oil over medium flame in a deep saute pan with a lid. Add the garlic and red pepper flakes; saute for 2 minutes. Add the clams, wine, and lemon juice. Cover and cook, shaking the pan periodically, until all the clams are opened, about 7 minutes. Discard any that have not opened.
  • Crank the flame up to medium-high heat. Add the hot, drained linguine to the pan; add the butter and season with salt and pepper. Toss the pasta with the clams to it's nicely coated. Shower with chopped parsley and toasted bread crumbs. Drizzle with a nice dose of olive oil before serving.

1/2 cup extra-virgin olive oil
6 ounces thinly sliced pancetta, cut into thin strips
1 garlic clove, thinly sliced
2 pounds cherrystone clams, scrubbed
1 cup chicken broth, homemade or low-sodium canned
1/3 cup dry white wine
4 small dried hot chiles (1-inch) or 1 teaspoon dried hot red pepper flakes
14 ounces dried thin linguine
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat 3 tablespoons oil in a deep 12-inch heavy skillet over moderately high heat until hot but not smoking, then saute pancetta, stirring occasionally, until crisp, about 6 minutes. Add garlic and saute, stirring, until golden, about 30 seconds.
  • Stir in clams, broth, wine, and chiles and boil, covered until clams open, about 4 to 5 minutes (discard any clams that do not open after 6 minutes). If using whole chiles, remove with a slotted spoon and discard.
  • While clams are cooking, cook pasta in a 6-quart pot of well-salted boiling water until al dente. Drain in a colander, then add to clams and simmer, stirring, 30 seconds.
  • Toss pasta with parsley and drizzle with remaining 5 tablespoons oil.

SPAGHETTI VONGOLE

Clams were, and still are, available in Venice by the boatload. So much so that they're even considered peasant food. Although this recipe originates from Venice, it's so delicious that it's now become a classic Italian dish. People can be picky about whether or not it should be made with tomatoes, but personally I like the subtle colour and sweetness they add to the dish. The most important thing about it is timing everything so you get perfectly steamed clams and al dente pasta. Once you've made it a couple of times your intuition will kick in and you'll be able to make it quickly and perfectly every time.

2 1/4 pounds/ 1 kg small clams, scrubbed clean
A small bunch fresh flat-leaf parsley
4 cloves garlic
10 cherry tomatoes
8 1/2 ounces/ 250 ml white wine
14 ounces/ 400 g dried spaghetti
Sea salt and freshly ground black pepper
Extra-virgin olive oil
1 to 2 dried chiles

Steps:

  • Serving suggestion: Fresh bread.
  • Put a pan of water on to boil. While that's happening, sort through your cleaned clams and if there are any that aren't tightly closed, give them a sharp tap. If they don't close, throw them away. Put a large pan with a lid on a high heat and let it heat up. Finely slice the parsley stalks, then put them to one side and roughly chop the leaves. Peel and chop the garlic, quarter the tomatoes and get your wine ready. Add the pasta to the boiling water with a good pinch of salt and cook according to packet instructions until al dente. About 5 minutes before your pasta is ready, get ready to start cooking - you'll have to be quick about this, so no mucking about! Put 4 generous lugs of extra-virgin olive oil into the hot pan and add the garlic, parsley stalks and a good pinch of salt and pepper. Crumble in the dried chile and add the chopped tomatoes. Stir everything around constantly and just as the garlic starts to colour, tip in the clams and pour in the wine. It will splutter and steam, so give everything a good shake and put the lid on the pan. After about 3 or 4 minutes the clams will start to open, so keep shuffling the pan around until all of them have opened. Take the pan off the heat. Get rid of any clams that haven't opened. By now your pasta should be just about perfect. Drain and add to the pan of clams along with the parsley leaves and an extra drizzle of extra-virgin olive oil. Stir or toss for a further minute or 2 to let the beautiful seashore juices from the clams be absorbed into the pasta. Serve right away.

2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1/8 teaspoon red pepper flakes
1/3 cup dry white wine
1 dozen littleneck clams, scrubbed
1/4 teaspoon dried oregano
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper

4 ounces linguine
1/2 cup loosely packed fresh flat-leaf parsley, chopped

Steps:

  • Heat the oil in a large saute pan with a tight-fitting lid over medium-low heat. Add the garlic and pepper flakes and saute until fragrant. Don't let the garlic brown. Add the white wine and clams, increase the heat to high and cover the pan. Cook, stirring occasionally, until all of the clams have opened, about 8 minutes. As the clams open, transfer them to a large bowl. When all of the clams are removed, reduce the heat to medium low, add the oregano and swirl in the butter. Season with salt and pepper.
  • Meanwhile, bring a pot of generously salted water to a boil. Cook the linguine according to the package direction. Using tongs, transfer the linguine to the saute pan with the clam juice and toss to coat. Turn off the heat and add the clams and any juices that have collected in the bowl. Using tongs, turn the linguine to coat it with the sauce. Top with parsley. Serve immediately.

Extra-virgin olive oil, for cooking
6 cloves garlic, smashed and minced, plus 3 cloves garlic, smashed
2 bay leaves
Pinch crushed red peppers
Small bunch fresh thyme, secured with twine
1 pound littleneck clams
Half a 750-milliliter bottle dry white wine
1 pound dried spaghetti
Kosher salt
Zest and juice of 1 lemon
4 ounces clam juice
1 stick unsalted butter, cut into 6 pats
Leaves from 1 small bunch fresh oregano, finely chopped
Leaves from 1 small bunch fresh parsley, finely chopped
1 small bunch fresh chives, finely chopped
1/2 cup grated Parmesan, plus more for garnish
1 small loaf seeded semolina bread, sliced thick on the bias

Steps:

  • Add 1/4 cup olive oil to a high-sided pan with a lid. Add the minced garlic, bay leaves, red pepper flakes and thyme bundle. Heat pan over medium heat and cook, being careful not to burn the garlic, until fragrant, 2 to 3 minutes. Add the clams and wine and turn the heat to high. Cover and steam until the clams have fully opened, 3 to 5 minutes. Transfer the clams to a glass bowl and return the liquid, thyme bundle and bay leaves back to the pan. Remove most of the clams from their shells and set aside. Reserve the remaining clams in their shells for garnish.
  • Drop the pasta in a large pot of generously salted boiling water. Cook, stirring occasionally to make sure pasta does not stick to the pot, until al dente, 7 to 8 minutes. Drain the pasta and set aside.
  • Increase the heat to medium under the sauce and add the lemon zest and juice and clam juice. Taste for seasoning and simmer. Add the drained pasta, shelled clams and 2 pats of butter. Toss to combine. Remove the bay leaves and thyme bundle. Sprinkle with the herbs, a handful of grated Parmesan and a drizzle of oil. Toss to fully coat the pasta.
  • Preheat the broiler.
  • Melt the remaining 4 pats butter in a saucepan together with the garlic. Brush the bread with the garlic butter and toast in the broiler for about 2 minutes.
  • Divide the pasta into 2 bowls and drizzle with the remaining pan sauce. Garnish with the reserved clams, a sprinkle of Parmesan and a slice of garlic bread.

4 chicken breast fillets (thin sliced or pounded 1/4-inch thick)
1 cup sliced white mushroom
3/4 cup fat-free ricotta cheese
3 1/2 ounces baby clams (drained but reserve the juice)
1/4 teaspoon pesto sauce
1 garlic clove, chopped
1/4 onion, chopped
1 dash italian seasoning
1 dash garlic salt
2 teaspoons cornstarch
1 cup light vanilla soymilk
1 cup sliced mushrooms
1/4 onion, chopped
1/2 cup clam juice
2 chicken bouillon cubes
1 dash salt
1 dash pepper
1 dash italian seasoning
1 dash garlic salt
1 dash onion salt

Steps:

  • In food processor mix all stuffing ingredients.
  • Process until smooth.
  • Add 1 T reserved clam juice.
  • Process again 15seconds.
  • Taste and season more if necessary.
  • Take 1 chicken fillet and put about 2T of filling on fillet.
  • Roll chicken and secure with wooden toothpick or skewer.
  • Repeat with other chicken breasts.
  • Sprinkle outside of chicken with salt and pepper and Italian seasoning.
  • Spray baking pan.
  • Place chicken in oven set at 400°F and cook until juices run clear.
  • While chicken is baking, prepare the sauce by combining all ingredients over medium heat constantly stirring. Will be a runny sauce, but add a tablespoon of flour or more cornstarch for a thicker sauce. Taste and season more if necessary.
  • Serve stuffed chicken with sauce on top.
