CHICKEN TIKKA BURGERS

This Indian dish is traditionally cooked in a clay oven, but works on the barbecue too- try with homemade tamarind chutney and herb salad

6 small chicken breasts
6 burger buns (we used ciabatta)
2 tbsp tomato purée
200g pot Greek yogurt
thumb-sized piece ginger , very finely grated
4 garlic cloves , very finely grated or crushed
2 tbsp garam masala
½ tsp ground cinnamon
½ tsp ground cayenne pepper
juice 1 lemon , plus wedges to serve
2 tomatoes , chopped
1 small red onion , chopped
1 green chilli , chopped
1 tsp tamarind pulp
2 tbsp tomato ketchup
½ cucumber , sliced
1 Little Gem lettuce , shredded
small bunch mint , leaves picked
1 small red onion , halved and finely sliced

Steps:

  • Mix the marinade ingredients in a bowl. Open out each chicken breast and flatten slightly. Place the chicken in the marinade for at least 2-3 hrs. Meanwhile, mix the chutney ingredients together and set aside. (It will keep in the fridge overnight.)
  • Heat the BBQ until the coals are ashen, then griddle the chicken for 4-5 mins on each side until cooked through. Toss the salad ingredients and place the chicken in the buns with the salad and spoonfuls of chutney. Serve with lemon wedges.

2 to 3 Chicken Breasts
3 to 4 Burger Buns
3 tsp Tomato Puree
100 g Plain Yogurt
2 tbsp Ginger Garlic Paste
1 tbsp Garam Masala Powder
1/4 tsp Cinnamon Powder
1/4 tsp Red Chilli Powder
Juice of 1/2 Lemon
as per taste Salt
Cucumber Slices
big handful Lettuce Leaves (chopped)
handful Mint Leaves (chopped)
Onion Slices
Mayonnaise
Tomato Slices
Green Chutney or Cheese Spread (optional)

Steps:

  • Combine the tomato puree, yogurt, ginger garlic paste, salt, garam masala powder, cinnamon powder, red chilli powder and lemon juice in a bowl.
  • Mix well.
  • Cut the chicken breasts in medium size pieces (to fit into the buns) and add to the bowl.
  • Mix well until evenly coated and keep aside for 60 to 90 minutes.
  • Heat a grill pan over medium flame.
  • Cook the marinated chicken pieces for 4 to 5 minutes on each side until cooked through.
  • Halve the burger buns and lightly toast them.
  • Apply mayonnaise on half of the buns.
  • Apply the green chutney on the other half.
  • Add some lettuce leaves and arrange the chicken pieces on top.
  • Top up with mint leaves, cucumber, tomato and onion slices.
  • Cover with the other half of the burger and press lightly.
  • Serve at once.

Tasty Chicken Tikka Burgers image

These easy chicken burgers are ideal for a weekend for the whole family.

4 Chicken breasts
6 tsp Tikka seasoning
2 tsp Oil
4 Brioche buns
Lettuce
Dollop of mango chutney

Steps:

  • Cut a slice through the chicken breasts so you can flatten them out. I do this by bashing them with a rolling pin between a sheet of baking paper.
  • Sprinkle over the tikka seasoning.
  • In a large frying pan heat the oil and pan fry your chicken breasts for about 7 minutes each side on a medium heat (this will depend on how much you've flattened them so just cut one open to check it's cooked before serving).
  • Plate up your burgers. I like to toast the brioche buns. Enjoy!

600 g chicken fillets
1 egg
2 tablespoons tikka masala curry paste
1 cup fresh breadcrumb

Steps:

  • Process all together in food processor till very well combined and chicken well minced.
  • Shape into about 8 patties
  • Heat a little oil in a non stick fry pan.
  • Cook patties 5 -6 minutes till cooked through and golden brown.

3/4 teaspoon cumin seeds, toasted
3/4 teaspoon coriander seeds, toasted
2 cups whole-milk yogurt
4 garlic cloves, chopped
1 (1 1/2-inch) piece fresh ginger, peeled and chopped
3 tablespoons vegetable oil plus additional for greasing pan
2 tablespoons fresh lime juice
1 1/2 teaspoons salt
3/4 teaspoon ground turmeric
1/2 teaspoon garam masala (Indian spice mixture)
1/2 teaspoon black pepper
1/4 teaspoon cayenne
5 pounds skinless boneless chicken breasts, cut into 1 1/2-inch cubes
Accompaniments: mango and red pepper chutney and mint raita
Garnish: lime wedges

20 (12-inch) wooden skewers

Steps:

  • Purée all ingredients except chicken in a blender until spices are well ground.
  • Put chicken in a large bowl, or divide between 2 large sealable plastic bags, and add yogurt mixture, stirring or turning to coat. Marinate chicken, covered and chilled (turning occasionally if using bags), at least 4 hours.
  • Soak skewers in water 30 minutes. While skewers are soaking, bring chicken to room temperature.
  • Preheat broiler and brush a broiler pan lightly with oil.
  • Divide chicken among skewers (about 5 cubes per skewer), leaving an 1/8-inch space between cubes, and arrange about 5 skewers across pan. Broil chicken about 4 inches from heat, turning over once, until browned in spots and just cooked through, 9 to 12 minutes total.
  • Transfer cooked skewers to a large platter and, if desired, cover loosely with foil to keep warm. Broil remaining chicken in same manner. Remove chicken from skewers and serve warm or at room temperature.
