6 bone-in skinless chicken thighs, trimmed of fat
2 lbs sweet potatoes, peeled and cut into spears
1/2 lb white button mushrooms, thinly sliced
6 shallots, peeled and halved
4 garlic cloves, peeled
1 cup dry white wine
2 teaspoons fresh rosemary, chopped or 1/2 teaspoon dried rosemary, crushed
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 1/2 tablespoons white wine vinegar

Steps:

  • Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, salt and pepper in a 6 quart crock pot; stir to combine.
  • Cover and cook on low until the potatoes are tender, about 5 hours.
  • Before serving, remove bones from the chicken, if desired, and stir in vinegar.

Number Of Ingredients 15

4 boneless skinless chicken breasts, cut into bite size pieces
2 russet potatoes, peeled, and cut into 1 inch pieces
2 sweet potatoes, peeled, and cut into 1 inch pieces
2 carrots, peeled and diced
1 large onion, peeled and dice into large pieces
1 (28 ounce) can diced tomatoes
1 cup chicken broth
1 teaspoon celery seed
1 teaspoon paprika
1 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
fresh basil, chopped (optional)

Steps:

  • combine all ingredients in crock pot (except basil).
  • cover and cook 6 to 8 hours.
  • when ready to serve sprinkle with basil.
