3 tablespoons unsalted butter
1 small onion, chopped
4 ounces white or cremini mushrooms, sliced (about 2 cups)
1 1/4 pounds skinless, boneless chicken thighs, cut into chunks
2 tablespoons all-purpose flour
1 teaspoon paprika, plus more for topping
Freshly ground pepper
1 cup fat-free low-sodium chicken or mushroom broth
1 tablespoon Worcestershire sauce
1/2 cup sour cream, plus more for topping
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs, then drain. Meanwhile, melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion and cook until slightly soft, about 2 minutes. Add the mushrooms and cook, stirring, until they begin to brown, about 2 minutes. Add the remaining 1 tablespoon butter, the chicken, flour, paprika, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the chicken browns, about 3 minutes. Add the chicken broth and Worcestershire sauce and bring to a gentle simmer; cook until thickened, about 5 minutes. Stir in the sour cream and season with salt and pepper. Continue simmering gently until the chicken is cooked through, about 2 more minutes. Divide the noodles among plates. Top with the chicken mixture, parsley, some sour cream and paprika.

8 ounces cremini mushrooms, sliced
Kosher salt and freshly ground black pepper
1 1/2 pounds boneless, skinless chicken breasts, cut into chunks
1 tablespoon olive oil
1 yellow onion, thinly sliced
3 tablespoons all-purpose flour
3 cups chicken broth
1 tablespoon Worcestershire sauce
1 packet French onion soup mix
1/3 cup sour cream, plus more for serving
Cooked wide egg noodles, for serving
3 tablespoons minced fresh chives

Steps:

  • In a large skillet, melt the butter over medium heat. Add the mushrooms and cook, stirring occasionally, until golden brown, 5 to 7 minutes. Season with salt and pepper. Remove from the skillet and set aside.
  • Season the chicken with salt and pepper. Return the skillet to the stove, add the olive oil and increase the heat to medium high. Add the chicken, working in batches if necessary, and cook until it begins to brown on each side, about 5 minutes. Add the onions and cook until tender, 3 to 4 minutes. Stir in the flour and cook for an additional 2 minutes. Stir in the broth, scraping up any browned bits with a wooden spoon. Stir in the Worcestershire sauce, soup mix and cooked mushrooms. Reduce the heat to low and simmer until the broth is thickened to a gravy, about 7 minutes. Stir in the sour cream.
  • Serve over egg noodles with a dollop of sour cream and garnish with fresh chives.

I wanted something like the traditional beef stroganoff and threw this one together, writing down everything as I went so I wouldn't forget. I served with noodles, but rice would be great, too. Asparagus for a vegetable and a green or fruit salad is great! Nutmeg seems to be the secret ingredient of many Stroganoff recipes.

2 cups all-purpose flour for coating
salt and pepper to taste
1 tablespoon butter
1 (10.75 ounce) can condensed cream of chicken soup
1 ¼ cups half-and-half cream
1 (1 ounce) package dry onion soup mix
2 tablespoons chopped fresh parsley
2 cloves garlic, minced
2 cups fresh sliced mushrooms
¼ teaspoon ground nutmeg

Steps:

  • In a shallow dish or bowl, season flour with salt and pepper to taste. Dredge chicken in seasoned flour to coat. In a large skillet, brown coated chicken in melted butter or margarine until golden.
  • In a medium bowl combine the soup, half-and-half, dry onion soup mix, parsley, garlic, mushrooms, nutmeg and browning sauce. Mix all together and pour mixture over chicken in skillet. Reduce heat to low and let simmer, covered, for 1 hour.
  • Stir in sour cream and heat through, but DO NOT BOIL! Top with chopped green onion and serve over noodles or rice, if desired.

4 bacon strips, diced
1 pound boneless skinless chicken breasts, cut into 1/4-inch strips
1 medium onion, chopped

A different and delicious way to enjoy chicken livers. To make this dish healthier, I like to use yolkless noodles. I have made this for many of my friends over the past 20 years, and have always received rave reviews, even from some who thought that they would not like chicken livers.

1 pound chicken livers, rinsed and trimmed
2 cups chopped onion
4 ounces sliced fresh mushrooms
1 tablespoon paprika
⅓ cup dry sherry
1 ½ cups sour cream
salt and pepper to taste
1 (12 ounce) package medium egg noodles

Steps:

  • Bring a large pot of lightly salted water to a boil. Add noodles, and cook until tender, about 8 minutes. Drain, and set aside.
  • While the noodles are getting started, heat olive oil in a large heavy skillet. Add onions, and cook, stirring until tender, about 5 minutes. Add mushrooms, and continue cooking for a few minutes, until starting to brown. Add the chicken livers, and season with paprika, salt and pepper. Cook for 8 to 10 minutes, until livers are nicely browned on the outside, but still slightly pink in the center. Do not over cook - the livers will become tough and leathery.

12 ounces egg noodles
4 tablespoons butter, cut into pieces

It wasn't the taste I was expecting (I was expecting it to be more like stroganoff) but it was still very good. The taste of the smoked paprika is what makes this dish, which is different from "normal" paprika (also known as sweet paprika).

1 lb chicken breast, cut into thin strips
2 teaspoons smoked paprika
1/4 cup olive oil (approximate)
1 onion, thinly sliced
3 garlic cloves, crushed
1 green pepper, sliced
1 cup sliced mushrooms
1 cup chicken stock
1/4 cup white wine
1/4 cup sour cream
2 1/2 ounces sugar snap peas, blanched
flat leaf parsley, chopped
150 g flour (about 5.3 oz)
1 egg
1 egg yolk
1/4 cup milk
1/4 cup water
1 teaspoon salt
1 teaspoon freshly grated nutmeg (I used 1/4 tsp and thought it was plenty)

Steps:

  • Make the Spatzle (ingredients for the spatzle start with the 150 g of flour):.
  • Mix the salt, nutmeg and flour together.
  • Beat the egg and the egg yolk together and mix with the flour mixture to make a paste.
  • Mix the milk and water together and slowly add to the flour mixture to make a thick batter.
  • Put a colander with large holes over a pan of boiling water. Pour about 1/2 the batter into the colander and press it through the colander into the water with a spatula.
  • Allow the spatzle to simmer for about 2 minutes then remove from the water with a slotted spoon and set aside to cool
  • Repeat with the other half of the batter.
  • When the chicken has finished cooking (see below), melt some butter in a separate frying pan, add the spatzle, salt, pepper, and a little olive oil. Fry the spatzle til crispy (or to taste).
  • Make the chicken:.
  • Sprinkle the 2 teaspoons of smoked paprika over the thinly sliced chicken breasts.
  • Drizzle a pan with olive oil and when hot, fry the chicken for 2 or 3 minutes or until about 3/4 cooked and golden.
  • Remove chicken to a platter and set aside.
  • Put about 1 tbsp of olive oil in the same pan and saute the onion and garlic until soft.
  • Add bell peppers and mushrooms and cook for another 3 to 4 minutes.
  • Put about 1/4 cup of wine in the pan to deglaze it. Add about 1/2 cup of chicken broth and bring to a boil.
  • Add the sour cream and mix well.
  • Add the chicken and juices from the chicken back to the pan and bring back to a boil. Add the rest of the chicken broth if it starts to dry out.
  • Finally toss in the sugar snap peas and garnish with a handful of chopped flat leaf parsley.

Our chopped challenge this week was chicken livers. We wanted to find a non-pate dish that highlighted the livers' flavor, and we thought stroganoff was the perfect choice. Chopped Basket Ingredient: chicken livers

3 tablespoons vegetable oil
1 pound chicken livers, cleaned and deveined (about 1 pint)
Kosher salt and freshly ground black pepper
5 tablespoons unsalted butter
8 ounces cremini mushrooms, sliced about 1/8-inch thick (about 4 cups)
1 small red onion, cut in 1/2-inch dice (about 1 cup)
1/4 cup cognac or dry sherry
1 cup chicken broth
1 cup whole Greek yogurt
12 ounces wide egg noodles
1/4 cup fresh flat-leaf parsley leaves, roughly chopped

Steps:

  • Bring a large stockpot of salted water to a boil (it should taste like sea water).
  • Meanwhile, heat the oil over medium-high heat in a large, straight-sided saute pan until it shimmers. Sprinkle the chicken livers liberally with salt and pepper. In two batches, add the chicken livers to the hot oil and brown on both sides, about 3 minutes per batch. Transfer the browned livers to a plate.
  • Once all of the livers have been browned, add 2 tablespoons of the butter to the pan. Add the mushrooms and cook until lightly browned, about 5 minutes, stirring occasionally. Add 2 more tablespoons of the butter and the onions, season with salt and pepper and cook until slightly softened and lightly browned, 3 to 5 minutes. Take the pan off of the heat and carefully add the cognac. Stir to combine, place the pan back on the heat and cook for 1 minute, stirring constantly. Add the chicken broth and cook until reduced by half, 3 to 5 minutes.
  • Meanwhile, slice the browned livers into long strips about 1/2-inch thick.
  • Reduce the heat to medium-low, stir the yogurt into the sauce and season with salt and pepper. Then add the livers and stir to combine. Simmer the sauce until the livers are cooked to your liking, 3 to 5 minutes for medium. Season with salt and pepper.
  • While the livers are cooking in the sauce, cook the egg noodles in the boiling water until al dente, 5 to 8 minutes. Then drain. Toss the hot egg noodles with the remaining butter and half of the parsley. Season with salt and pepper.
  • To serve, divide the egg noodles among 4 to 6 bowls and top with the chicken livers and sauce. Garnish with the remaining parsley. Alternatively, this dish can be served family-style on a large platter.

2 tablespoons flour, divided
2 teaspoons margarine or 2 teaspoons butter
3/4 cup onion, diced
1 1/2 cups mushrooms, cleaned and sliced
2 tablespoons Worcestershire sauce
2 tablespoons chili sauce
1 pinch dried thyme
1/2 cup low-fat sour cream or 1/2 cup single cream
2 teaspoons fresh parsley, chopped
salt & pepper

Steps:

  • Dry the livers on paper towels.
  • sprinkle with 1 tbsp flour.
  • Melt margarine in a fry pan, saute the onion until softened.
  • Add livers saute for about 3 minutes or until just browned.
  • Add mushrooms, worcestershire sauce, chile sauce, thyme and pepper.
  • Saute 5 minutes.
  • Combine sour cream and the remaining flour, mix well.
  • Stir into the liver mixture and bring to just boiling.
  • Remove from heat sprinkle with parsley and Serve.

HEALTHIER SLOW COOKER CHICKEN STROGANOFF
