1 package (10 ounces) frozen chopped spinach, thawed, divided
6 ounces frozen diced cooked chicken breast, thawed
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup whole milk
3 cans (8 ounces each) tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
3/4 teaspoon garlic powder
3/4 teaspoon brown sugar
6 uncooked manicotti shells
1 cup shredded Monterey Jack cheese

Steps:

  • Divide spinach in half; refrigerate one portion for another use. In a sieve or colander, drain remaining spinach, squeezing to remove excess liquid. Pat dry; place in a small bowl. Add chicken; set aside. , In a large saucepan, melt butter. Stir in flour until smooth; gradually add broth and milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the tomato sauce, basil, oregano, garlic powder and brown sugar; cook over medium heat for 3-4 minutes or until heated through. , Meanwhile, stuff 1/4 cup chicken mixture into each uncooked manicotti shell. Spread 1/2 cup sauce into a greased 11x7-in. baking dish. Arrange manicotti over sauce; top with remaining sauce. , Cover and bake at 350° for 40-45 minutes or until manicotti shells are tender. Uncover; sprinkle with cheese. Bake 8-10 minutes longer or until cheese is melted. Let stand for 5 minutes before serving.

1 cooking spray
20 ounces ground chicken
1 medium onion, chopped
3 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
8 ounces cream cheese, softened
⅔ cup marinated artichoke hearts, drained and finely chopped
8 ounces shredded Italian cheese blend, divided
2 cups 1% milk
1 cup low-fat cottage cheese
2 tablespoons cornstarch
½ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon ground nutmeg
4 ounces shredded Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in manicotti and return to a boil. Cook pasta uncovered, stirring occasionally, until barely tender yet firm to the bite, about 5 minutes. Drain carefully and rinse with cool water.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking pan with cooking spray.
  • Cook chicken and onion in a medium-sized frying pan until chicken is no longer pink and broken into small pieces, 7 to 10 minutes. Add garlic and cook 1 minute. Add spinach, cream cheese, artichoke hearts, and 6 ounces of Italian cheese blend. Mix well and set aside.
  • Combine milk, cottage cheese, cornstarch, salt, pepper, and nutmeg in a food processor to make a smooth sauce. Pour sauce into a saucepan, add Parmesan cheese, and heat over medium heat until cheese has melted and sauce has thickened, about 5 minutes.
  • Pour enough sauce into the bottom of the prepared pan to coat the bottom. Stuff each cooked manicotti shell with chicken mixture and place into the pan on top of sauce. Pour remaining sauce over stuffed manicotti in the pan and top with remaining 2 ounces Italian cheese blend. Cover the pan with a lid or aluminum foil.

24 oz manicotti, al dente
2 cups artichoke heart, chopped
2 cups fresh spinach, chopped
1 cup chicken breast, cooked, shredded
1 ½ cups ricotta cheese
1 cup mozzarella cheese, grated, divided
1 cup grated parmesan cheese, grated, divided
2 cloves garlic, minced
salt, to taste
pepper, to taste
1 cup marinara sauce
fresh parsley, chopped, for serving

Steps:

  • Cook manicotti a couple minutes under the box instructions.
  • Drain in a colander, and cut manicotti in half.
  • Arrange manicotti tubes upright in a parchment paper-lined springform pan until the pan is packed with the tubes.
  • In a large bowl, combine artichokes, spinach, chicken, ricotta cheese, ½ of the mozzarella cheese, ½ of the parmesan cheese, garlic, salt, and pepper.
  • Preheat oven to 350°F (180˚C).
  • Transfer the spinach and artichoke mixture into a piping bag.
  • Fill each manicotti tube about ¾ of the way up with spinach and artichoke mixture.
  • Spoon tomato sauce over the filled manicotti.
  • Top with remaining mozzarella cheese, and parmesan cheese.
  • Cover with foil and bake 15 minutes. Remove foil and bake an additional 15 minutes or until cheese is melted.
  • Garnish with parsley, if desired.

12 manicotti shells, cooked according to package - drain
FILLING
1 onion, chopped
2 clove garlic, minced
1 Tbsp olive oil
1 1/2 c small diced, cooked chicken
3/4 c small diced, cooked ham
1/2 c ricotta cheese
2 oz cream cheese, softened
10 oz frozen spinach, thawed and water squeezed out , thoroughly
2 eggs, slightly beaten
1/2 c grated, parmesan cheese
1 tsp dried basil
1 tsp pepper
1/4 tsp nutmeg
SAUCE
3 c chicken broth
3/4 c flour
1/2 c heavy cream
1/2 c milk
1 tsp salt or to taste
1/2 tsp nutmeg
1/2 tsp pepper
1/4 - 1/2 tsp cayenne pepper
1/2 c grated parmesan cheese and extra for sprinkling on top
paprika for sprinkling on top

Steps:

  • 1. Cook manicotti shells according to package directions.

  • 3. Sauce: Combine flour and chicken broth in a large saucepan until smooth; gradually stir in the milk, salt, nutmeg, pepper and cayenne. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from heat, and stir in the 1/2 cup Parmesan cheese.
  • 4. Spread 1 1/2 cups sauce into a 13 x 9 baking dish coated with cooking spray.
  • 5. Stuff each pasta with chicken filling. ( An easier way to stuff is cut one edge lengthwise, open up and lay out flat. Spoon on filling, roll up and place seam side down in dish.) Sometimes I drizzle a tablespoon of cream sauce down the center before rolling. Don't worry of filling comes out the ends when placing in the dish, you can stuff it back in once placed.
  • 6. Once all are stuffed and placed side by side in dish. Cover with sauce and sprinkle with desired amount of Parmesan cheese, and sprinkle with paprika.
  • 7. Cover with foil, and place in preheated oven, for 30 - 35 minutes, until heated through and bubbly. Remove foil and continue baking for another 5 minutes to slightly brown top. If you have sauce left, save it for reheating leftovers.
  • 8. Enjoy!

A 2-pound rotisserie chicken will yield 3 generous cups of chicken.
3 cups chopped roasted herb-seasoned chicken
1 cup ricotta
½ pound fresh spinach, rinsed, cut into ¾-inch pieces
½ cup shredded Italian cheese blend
¼ cup grated Asiago
Crepes (see recipe)
2 tablespoons canola oil, divided
Alfredo Sauce (see recipe)
2 tablespoons grated Parmesan

Steps:

  • Preheat oven to 400 degrees. Lightly grease a 9-by-13-inch baking dish. In a large bowl, make filling by stirring together chicken, ricotta, spinach, Italian cheese and Asiago. Make manicotti by laying crepes on work surface, browned side down. Place 1/3 cup filling on bottom half of each crepe. Fold crepe in half and lightly push down so crepe is flat and filling is distributed to all the edges. Continue with remaining crepes and filling until all are used. In a large skillet, heat 1 tablespoon oil over medium-high heat until very hot. One at a time, lay each manicotti in the skillet and cook until brown on one side, about 2 minutes. Flip manicotti and brown second side, about 2 minutes. As each manicotti browns, move to the prepared baking dish, slightly overlapping manicotti with open sides all in the same direction. Continue until all manicotti are filled, browned and arranged, adding remaining tablespoon oil as needed. After all manicotti are browned, ladle Alfredo Sauce over all and sprinkle with Parmesan. Bake until golden brown and bubbling, about 20 minutes.

I LOVE Italian/pasta foods; however, I am NOT a fan of ricotta and cottage cheese! So, unfortunately there are times when I see something I really want to try but don't not knowing, OR knowing, what cheeses were used. So, after seeing this item at an Italian restaurant (which I didn't order because it contained ricotta cheese) I decided to create my own version by "borrowing" bits and pieces of recipes to create this dish...a DEFINITE family favorite! 2 cups shredded cooked chicken
6 ounces Baby Spinach (finely chopped)
8 ounces KRAFT Shredded Three Cheese with a Touch of PHILADELPHIA
10 ounces Philadelphia Original Cooking Creme or 10 ounces Philadelphia Savory Garlic Cooking Creme
1/4 cup shredded parmesan cheese
2 -3 stalks green onions (finely chopped)
1 teaspoon oregano
1 teaspoon basil
1 teaspoon red pepper flakes
3 garlic cloves (omit if using the Low-Fat Garlic cooking creme)
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces manicotti (14 noodles)
15 ounces classico low-fat alfredo sauce (also good with regular sauce)

Steps:

  • Preheat oven to 400°F.
  • Combine all ingredients (top 12 items) in large mixing bowl. Cook manicotti "per package directions" (I actually cook the manicotti for about a minute to a minute and a half LESS than what is directed for a firmer noodle - easier to stuff!). Drain and rinse pasta with cool water.
  • Spray 2 - 13 x 9 casseroles w/cooking spray and place well-stuffed manicotti in casseroles.
  • Coat manicotti with Alfredo sauce.
  • Garnish with additional Parmesan and red pepper flakes if desired.

My husband begged me to make Manicotti one day. I had never made it before and was kind of in the mood for alfredo. I looked up regular manicotti recipes but most had red sauces, and my husband gets horrible heart burn from tomato sauces. And I was really just craving something like the alfredo. There were several out there that looked good but didn't have all the goodness I was looking for, so I combined a few recipes and added a few things myself. At dinner time everyone including the kids and my picky MIL were raving about the great meal. This meal easily feeds our large family of 8 and usually there is some for leftovers or to freeze some back for an easy meal at a different time. I hope you enjoy it as much as we do. P.S. I apologize for not having measurements for the spices. I just add a little and taste, add a little then taste, until it tastes good. Start out with a little as you can't take it back once its in.

1 lb ricotta cheese
2 (8 ounce) packages cream cheese
1 1/2 lbs sour cream
1 1/2 cups parmesan cheese

lawreys seasoning salt

Italian spices
6 ounces fresh baby spinach leaves
4 chicken breasts
garlic
heavy whipping cream

Steps:

  • To begin I boiled water a lil lawreys seasoned salt and a couple bay leaves then added the chicken breasts.
  • After they are cooked through set aside to cool.
  • In a large bowl mix Ricotta, 1 pkg Cream Cheese, 1.5 cups Sour Cream, a handful of parm and a handful of mozzarella, italian seasonings to taste,Lawreys seasoned salt to taste, pepper, and 2 eggs.
  • Use scissors to cut the spinach and chicken or shred. Add to the cheese sauce mixture. Mix all together.
  • Put mixture in a 1 lb zip lock bag.
  • Cook the manicotti as the directions on the box indicate. Mine say 7 minute.
  • After the noodles have cooled enough to handle cut a small piece of the corner of the zip lock back. Put the cut corner in to one end of manicotti and squeeze the bag until manicotti isfull. repeat until all are full.
  • In a separate pan make your alfredo. I make mine with sauted garlic cloves heavy whipping cream, a package of cream cheese, the last of the sour cream. bring to simmer until thick and add in some more parm and mozzarella. If there is any of the sauce mixture left after filling the manicotti add it to the alfredo.
  • In a large cake pan add a bit of alfredo sauce then lay manicotti on top then pouring the remaining alfredo over the top then cover with shredded parm and mozz.
  • Bake @ 350for 30 minute.

Olive Oil
1/2 lb ground (or minced) white chicken or turkey meat
1/2 cut yellow onion, finely chopped
1 1/2 cups nonfat small-curd cottage cheese
1 teaspoon dried thyme or basil
1 egg
1/4 cup grated Parmesan cheese
salt and pepper
2 1/2 cups tomato sauce
8 dried manicott tubes

Steps:

  • In a frying pan over medium heat, warm the olive oil. Add the chicken and onion and cook, breaking up the meat with a spatula until the meat is opaque throughout, about 10 minutes. Transfer to a large bowl and let cool for 10 minutes. Put the spinach in a fine mesh sieve, press against it with the back of a spoon to remove any liquid. Add to the chicken along iwth the cottage cheese, thyme, egg, Parmesan, 1/2t sale and 1/4 t pepper. Use a wooden spoon to blend. Preheat the oven to 325F. Spread 1/3 c of the tomato sauce over the bottom of an 8X12" baking dish. Bring a large pot 3/4 full of salted water to a boil. Add the manicotti tubes and cook until almost al dente (8 min). Drain & rinse under cold water. Drain. Stuff each tube with about 1/3c of the filling. Arrange in a single layer in the baking dish and spoon the remaining sauce over the top. Cover with al foil & bake until suace bubbles around the edges of the dish and the filling is heated through. 40 minutes. Let stand, uncovered, for 5 minutes.
