I created this recipe on the fly because I didn't have my usual ingredients for spaghetti. I was so happy with how it tasted that I decided to make this my first recipe submission. This makes a very light sauce. If you prefer a heartier sauce, add 1/2 can of tomato paste or even use crushed tomatoes instead of whole, but I encourage you to try it as written; it's so yummy! Serve over al-dente spaghetti noodles. I hope you enjoy!

1 tablespoon extra-virgin olive oil
1 pound ground chicken
1 small onion, diced
1 clove garlic, crushed
2 teaspoons dried basil
1 pinch kosher salt to taste
1 pinch ground black pepper to taste
1 (14 ounce) can whole peeled tomatoes
¼ cup grated Parmesan cheese

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Cook and stir chicken and onion together in the hot oil until the chicken is completely browned and the onions tender, 7 to 10 minutes. Stir garlic, basil, kosher salt, and black pepper into the chicken mixture; cook for 1 minute.
  • Blend the tomatoes in a blender until smooth; pour over the chicken mixture and bring to a simmer. Cook mixture at a simmer until hot and the sauce has thickened slightly, about 10 minutes.
  • Sprinkle Parmesan cheese over the mixture; stir.

This cheesy white sauce is perfect for any pasta but works best with spaghetti or cavatappi. I favor butcher bacon as it's the best bacon on the planet! Kids attacked the leftover pasta and ate the bacon and sun-dried tomatoes before I was able to get a photo!

1 (16 ounce) package spaghetti
4 (5 ounce) skinless, boneless chicken breast halves, pounded to an even thickness
1 teaspoon salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
1 tablespoon olive oil
3 slices bacon
½ (8 ounce) jar sun-dried tomatoes packed in oil, drained and chopped
4 cloves garlic, minced
1 teaspoon dried basil
1 pinch red pepper flakes, or more as needed
1 cup milk
1 tablespoon cornstarch
2 cups chicken broth
1 (8 ounce) package shredded mozzarella cheese
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil. Add spaghetti and a liberal amount of salt to the boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain pasta and transfer to a large serving bowl. Reserve 1 cup pasta water.
  • While pasta is cooking, coat chicken with salt and pepper on both sides.
  • Heat olive oil in a large pan over medium-high heat. Add chicken and cook until browned, about 3 minutes per side. Remove chicken and chop into bite-sized pieces. Set aside.
  • Add bacon to the same pan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and cut into small pieces.
  • Add sun-dried tomatoes, garlic, basil, and red pepper flakes to the bacon fat and cook for 1 minute. Add chicken and bacon and reduce heat to just above a simmer. Stir in milk and cornstarch. Add chicken broth, mozzarella cheese, and Parmesan cheese; stir and simmer until well mixed and cheeses have melted.
  • Slowly add 1/2 cup pasta water to the sauce; stir and allow the sauce to thicken up to desired consistency, adding more pasta water as needed. Pour sauce over pasta to serve.

a 14-to-16 ounce can tomatoes, chopped, including the juice
1/4 cup dry red wine
1/2 teaspoon dried orégano, crumbled
1/4 teaspoon dried basil, crumbled

3/4 pound spaghetti
1/4 cup heavy cream

Steps:

  • In a large saucepan sauté the onion, the garlic, and the bell pepper in the oil over moderately high heat, stirring, until the vegetables begin to brown. Add the chicken, the sausage, the tomatoes with the juice, the wine, the orégano, the basil, and the sugar and boil the mixture gently, stirring occasionally, for 10 minutes. While the mixture is boiling, in a kettle of boiling salted water boil the spaghetti until it is al dente and drain it well. To the tomato mixture add the cream and salt and pepper to taste and simmer the sauce for 3 minutes, or until it is thickened slightly. Divide the spaghetti between 2 plates and spoon the sauce over it.

1 yellow onion, chopped

1 celery, with leaves chopped

Steps:

  • In a large saucepan, heat oil and add onion, carrot and sauté until softened for approximately 5 minutes.
  • Add chicken and garlic and cook for 5 minutes.
  • Add wine and stir until almost all evaporated.
  • Stir in the canned tomatoes with juice, chicken stock and parsley and bring to a boil.
  • Reduce heat to simmer for approximately 30 minutes.
  • In a separate pan, cook spaghetti until al dente.

3 teaspoons refined flour
5 tablespoons butter
2 cups milk
5 tablespoons grated cheese
5 teaspoons breadcrumb

Steps:

  • Heat oil in a frying pan. Add onion and saute until translucent and fragrant. Add cooked chicken and cook until tender.
  • Add 2 tbsp butter, then add flour and stir thoroughly, then add milk. Continue stirring over low heat until the mixture thickens.
  • Add garlic, salt, pepper, and parsley. Then add mushrooms and continue to cook.
  • Add the spaghetti and mix well.
  • Transfer to a baking dish and top with grated cheese and a layer of breadcrumbs. Add remaining butter on top.

4 -5 lbs hen, deboned (or use boneless chicken)
1/2 lb spaghetti noodles
1 onion, chopped
1 green pepper, chopped
1/2 can mushroom (optional)
salt and pepper
1/2 cup butter
2/3 cup flour
1 quart milk
1/2 lb American cheese
1/2 lb old English cheese
1 teaspoon salt

Steps:

  • Stew the hen.
  • Debone and tear/cut into small pieces.
  • Cook the, onions, green peppers and spahetti (according to package directions), in the water used to boil the chicken.
  • Drain water, mix in the chunked chicken, add mushrooms if desired.
  • Cream Sauce Melt butter over low heat.
  • Mix in flour and salt.
  • Add milk, cook, stirring constantly till mixture thickens and bubbles.
  • Add cheeses, stirring till melted and blended.
  • Combine all ingredients.
  • Put in casserole dish (es) and bake at 350 for 30 minutes.

1 cup ground chicken
2 tablespoons olive oil

2 onions, chopped

7 -8 teaspoons black peppercorns, crushed

Steps:

  • Boil 6 cups of water in a large pan.
  • Add 1/2 tablespoons of oil and salt to taste.
  • Fold in spaghetti and cook until al dente.
  • Drain and keep warm once cooked.
  • Heat the remaining oil in a pan.

  • Sprinkle crushed peppercorns, parsley and cheese over it.
  • Pour chicken sauce with a spoon over it.
  • Put the platter under a hot grill for 2 minutes to melt the cheese.
  • Serve immediately.

1 tsp fresh thyme leaves
4 fresh sage leaves, chopped

1 cup heavy cream
2 roma tomatoes, chopped into 1/2-inch dice
1/2 cup black olive wedges
1/2 cup Parmesan cheese

Steps:

  • Preheat oven to 375 F. Prick spaghetti squash all over with a skewer. Place spaghetti squash in a pan and bake for 1 hour. When cool enough to handle, cut spaghetti squash in half lengthwise with a serrated knife. Scoop out the seeds, then shred pulp into spaghetti-like strands. Keep warm. Cut leek in half lengthwise and rinse thoroughly in a sink full of water, making sure to remove all dirt. Drain and cut leek into strips about 3 inches long and 1/2 inch wide, including 2 inches of the green part and the center tender leaves. Heat a large, heavy skillet over medium heat.   • Preheat a large nonstick skillet over medium-high heat with 3 tablespoons oil; add in eggplant; cook, stirring occasionally, until brown, about 5-6 minutes.
  • Remove the eggplant from the skillet to a plate and cover with foil to keep warm.
  • Return the skillet to the stove; add in the remaining 2 tablespoons oil; add in the chicken and cook to lightly brown, about 4-5 minutes.
  • Add in the onions and garlic; return the eggplant to the skillet, season with salt, pepper, and crushed red pepper flakes; continue to cook 3-4 minutes.
  • Add in white wine and chicken stock; bring to a simmer; cook for 3-4 minutes.
  • Add in the cherry tomatoes and pasta water; cook until the tomatoes begin to burst.
  • Add in the parsley and cooked pasta; toss to coat, and cook for 1-2 minutes or until the sauce tightens up around the pasta.
  • Turn off the heat; add in grated Parmigiano-Reggiano; toss to coat the spaghetti.
  • Serve warm with crusty bread.

Chicken Spaghetti in Red Sauce image

This is my Chicken Spaghetti with Red Sauce, it's Italian and has lots of delicious Spices with a slight kick There is also a shortcut quick version to this recipe if you're in a hurry, but I would say try the longer recipe when you have time. You should try this over your favorite Pasta, Enjoy Good Food

1 small hen, boiled,reserve broth
1 lb angel hair or your favorite pasta
1 lb fresh mushrooms,sliced
1/2 Tbsp olive oil
1 can(s) diced tomatoes, juice reserved
2 Tbsp olive oil
1 c chopped vidalia or yellow onion
2 tsp garlic
1 tsp kosher salt
1/4 c fresh basil,chopped fine
1 can(s) tomato sauce
1 Tbsp granulated sugar
1/4 tsp dried parsley flakes
1/4 tsp italian seasoning
1/4 tsp cajun seasoning(like slap ya mama, this is optional
2 c chicken stock from hen or boxed
2 bay leaves, dried

Steps:

  • 1. Instructions Cut the chicken into pieces and boil in salted water until meat is cooked through. Reserve 2 cups of the broth, reserve remainder for another use; set meat aside to cool. Once cooled, debone and shred the meat, discarding the bones; set aside. Prepare pasta al dente according to package directions. Drain, rinse, drizzle with olive oil and set aside.
  • 2. Meanwhile, in a skillet heat the olive oil over medium heat and add the chopped onion, garlic and salt, saute for about 5 minutes or until veggies are tender. Add the tomatoes, basil, tomato sauce, sugar, parsley flakes, Italian seasoning, Cajun seasoning, poultry seasoning; bring to a boil. Add bay leaves, reduce heat, and simmer for 1 hour or until reduced and thickened. Stir in the chicken and enough broth from the stock you reserved from the hen (or use a commercial chicken stock) until it reaches the desired consistency. Bring back to a boil, reduce heat and simmer for about 15-20 minutes or until heated through.
  • 3. Note: This is a fresh, fairly light sauce recipe. If you prefer a heavier sauce to pasta ratio, you'll need to increase the sauce portion. Shortcut this: Use a rotisserie chicken, canned diced tomatoes, and commercial broth to speed things up. Add 2 teaspoons of a chicken base, to boost the flavor. You can use canned Mushrooms too. You'll probably need at least one large can diced tomatoes (28 ounce/1 pound 12 ounce), retaining the juices.

1 small spaghetti squash, cooked
2 tablespoons olive oil or butter
1/2 cup minced onion
1 package minced mushrooms (buy sliced mushrooms and dice in food processor)
2 green onions, finely chopped
12 ounces cooked chicken (2 whole breasts) or turkey meat
2 cups crushed tomatoes
1/4 cup dry red wine
2 teaspoons capers
2 1/2 teaspoons fresh chopped oregano
1 teaspoon black pepper
3 tablespoons Italian parsley, finely chopped

Steps:

  • Prepare Spaghetti Squash- Preheat oven to 375F. Pierce uncut squash several times with meat fork, and bake on baking sheet 1 hour, or until tender. Let cool for 20 minutes. Halve, remove seeds and scrape strands. Once squash has been in oven for 30 minutes, heat the oil/butter in a skillet over medium high heat, saute onion, mushrooms and green onions for 4 minutes. Add the chicken or turkey and cook for about 3-4 minutes. Stir in tomatoes and wine and bring to a boil, then lower heat and simmer for about 20 minutes. Add remaining ingredients and simmer for another 5 minutes. Pour sauce over heated spaghetti squash and serve.

SPAGHETTI SAUCE CHICKEN AFRITADA

Afritada, a traditional chicken and vegetable stew, is a gateway dish to Filipino cuisine. Spaghetti sauce, instead of fresh tomatoes or tomato sauce, is used in this recipe for convenience and taste.

1/4 cup vegetable oil
6 cloves garlic, finely chopped
2 medium onions, halved and sliced into thin half-moons
4 pounds bone-in, skinless chicken pieces
3 large potatoes, peeled, halved lengthwise, and quartered crosswise
2 large carrots, coarsely chopped
2 cups unsalted chicken broth or water
1 (24-ounce) jar spaghetti sauce
1/2 cup soy sauce
2 teaspoons granulated sugar
1 teaspoon freshly ground black pepper
2 small bay leaves
2 red bell peppers, seeded and sliced into strips
1 green bell pepper, seeded and sliced into strips
2 tablespoons fish sauce, for serving (optional)
6-8 cups cooked white rice, for serving

Steps:

  • Preparation In a large stockpot, heat the oil over medium-high heat. Add the garlic and onions and cook for 3 minutes, until the onions are soft. Add the chicken pieces and cook for 3 to 5 minutes, turning occasionally, until the chicken is no longer raw on the outside. Stir in the potatoes, carrots, chicken broth, spaghetti sauce, soy sauce, sugar, black pepper, and bay leaves. Stir well and bring the mixture to a boil. Reduce the heat to medium and cook, uncovered, for 20 minutes. Add the bell peppers. Continue cooking for another 15 to 20 minutes, until the potatoes are fork tender. Remove the afritada from the heat. Stir in the fish sauce, if using, and serve hot with the rice. This is a recipe I have been using for all of my adult life. I cannot recall where I got it from. All children love this because you can control the amount of heat. Try not to tweak it until after you try it as stated. Hint: I pressure cook my chicken so it isnt too dry and tough. Not sure on tine to cook, the chicken you can make ahead. Serve with french bread and salad. Bon Appetit!!!

3 lbs chicken, boiled and chopped keep broth
3 tablespoons bacon grease
2 onions, chopped
3 garlic cloves, chopped
1 green sweet pepper, chopped
6 green onions, chopped (optional)
4 celery ribs, chopped
2 cups broth, use from boiled chicken
1 (10 ounce) can tomato soup
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 lb spaghetti noodles, uncooked
3 bay leaves
2 teaspoons hot sauce (optional)
2 tablespoons Worcestershire sauce

Steps:

  • Sautee Onions, Garlic, Celery, Belpepper, and Green Onions in Bacon grease until onions are clear.
  • Bring broth to a boil, add vegetables and Bay leaves, boil 20 minutes.
  • Add hot sauce and Worcestershire.
  • Cook on low to medium.
  • Add the 3 cans of Tomato products and boil 10 minutes.
  • Add diced Chicken and cooked noodles, cooking just until noodles have absorbed sauce, add extra broth as needed to keep it moist, not soupy!

1 (12 ounce) package spaghetti, cooked & drained
1 1/2 cups leftover cooked chicken or 1 1/2 cups cooked turkey, chopped
3 cups hot water
2 teaspoons chicken bouillon
12 slices American cheese
1/2 lb Velveeta reduced fat cheese product
1 tablespoon butter
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1/2 teaspoon Accent seasoning, food seasonings, to taste
1/2 teaspoon celery salt, to taste
1/2 teaspoon onion powder, to taste

Steps:

  • Dissolve the chicken bouillon and melt the cheese in the hot water.
  • Add the dry seasonings and the butter to the cheese sauce.
  • Add the chicken or the turkey.
  • Pour the cheese sauce into the boiler the spaghetti is inches
  • Let the spaghetti and the cheese sauce simmer for approximately 5-10 minutes before serving.
  • Note: If you want more cheese sauce, add 4 slices of cheese, 1 teaspoon of chicken bouillon and dry seasoning per cup of water. The cheese sauce should be an even blend of chicken and cheese.
