CHICKEN SCARPARIELLO

From italianfoodforever.com (adapted by me), the true name of this dish is "Pollo alla Scarpariello." This translates to "shoemaker's" style chicken, which consists of golden brown pieces of roasted chicken topped with a lemon sauce. This is one of my absolute favorite dishes, especially when paired with roasted garlic-rosemary potatoes. I wouldn't recommend this for a dinner party, unless you do ALL of the prep work ahead of time.

1 cup all-purpose flour
1 teaspoon oregano
4 boneless skinless chicken breasts (washed and patted dry)
salt & pepper, to taste
4 tablespoons olive oil
1/2 cup onion, chopped
3 garlic cloves, peeled and sliced
1/2 cup white wine
1 cup chicken broth
1 rosemary sprig, cut into 3-4 pieces
1 tablespoon flour
1 tablespoon butter, softened
1 lemon, juice of
2 tablespoons butter
1/4 cup parsley, chopped
1 lemon, juice of

Steps:

  • Preheat oven to 400 degrees.
  • Mix together the flour and oregano. Season the chicken with salt and pepper and dredge in flour mixture.
  • In a large, heavy, oven-proof skillet, heat the olive oil over medium-high heat and brown the chicken on both sides. Then remove the chicken to a plate.
  • Pour off oven pan juices to leave 2 tbsp of juice (with brown bits) in the pan. Add the onion and cook until soft, then add the garlic.
  • As soon as garlic starts to sizzle, add the wine and scrape the pan to release brown bits. Over medium heat, reduce the wine by half.
  • Add the chicken stock and bring to a bowl over high heat. Once boiling, add the chicken pieces and the rosemary to the skillet. Spoon some pan juices over the chicken, and put the skillet in the oven to bake for 20 minutes.
  • Just before cook time is over, mix the softened butter with the tablespoon of flour (to make a thickener).
  • Remove skillet from oven, and move the chicken pieces from the skillet to a warmed platter. Bring the remaining sauce to a boil.
  • Add the lemon juice and season with salt and pepper. Then add the flour-butter mixture plus the remaining two tablespoons butter. Remove rosemary and whisk the mixture until the flour-mixture is dissolved (no lumps).
  • Once the sauce thickens, stir in the parsley, and pour the sauce over the chicken on the platter. Serve immediately.

Don't let the long direction list throw you; it's not difficult at all. I make NO claims in this recipe that it is light in fat or low cal; make it knowing that please.

1 (2 1/2-3 lb) roasting chickens, Cut Into Pieces
1 cup all-purpose flour
salt & pepper
1 teaspoon oregano
4 tablespoons olive oil

1 sprig fresh rosemary (about 2 tbsps.) or 2 teaspoons dried rosemary
1 cup chicken broth
1/2 cup white wine
1 lemon, juice of
3 tablespoons unsalted butter, softened
1 tablespoon flour
1/4 cup fresh parsley, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix together the flour and oregano, and season with salt and pepper.
  • Rinse and dry the chicken pieces, and then dredge them lightly in the seaoned flour mixture.
  • In a heavy, ovenproof skillet, large enough to hold all of the chicken pieces, heat the olive oil, and then brown the chicken well on all sides over medium heat; be careful not to burn the oil by using too hot of a heat.
  • Once all of the pieces are well browned, remove them to a plate.
  • Pour out the left over oil in the pan, leaving just a tablespoon or two with the browned bits at the bottom; add the onion and cook until soft, and then add the garlic.
  • As soon as the garlic begins to sizzle, add the wine, and stir the browned bits at the bottom while you reduce the wine by half over medium high heat.
  • Add the chicken broth and bring to a boil. Break up the rosemary into pieces, and add it to the sauce.
  • Return the chicken pieces to the skillet, and spoon the sauce over top; bake the chicken until done, about 20 minutes.
  • Remove the chicken to a warmed platter, and bring the remaining sauce to a boil; add the lemon juice and season with salt and pepper to taste.
  • Mix the tablespoon of flour with 1 tablespoon of softened butter; add the remaining butter to the sauce in the skillet, and mix well.
  • Remove the rosemary pieces from the sauce; if the sauce is thin, stir in a little of the flour and butter mixture, whisking continuously to prevent lumps; once the sauce has thickened, add the chopped parsley, and pour the sauce over the chicken on the platter. Serve immediately.

1 whole 3 pound chicken, backbone removed and split down the breastbone
1 tablespoon dijon mustard
1 tablespoon lemon juice
1 tablespoon white wine
1 clove garlic, sliced
1/4 teaspoon chili pepper flakes
1 tablespoon fresh rosemary, chopped
1/2 cup olive oil
1 carrot, chopped
1 stalk celery, chopped
1 medium onion, chopped
2 rosemary sprigs
Salt and pepper to taste
2 tablespoons olive oil
1 tablespoon sliced garlic
1 cup broccoli florets, steamed
1 cup red potatoes, roasted and sliced
1/2 cup button mushrooms, Sauteed
1/4 cup white wine
1 cup chicken stock
Juice of one lemon
1 tablespoon fresh rosemary, chopped
2 tablespoons butter
Salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees. Place chicken in roasting pan and set aside. Mix mustard, lemon juice, wine, garlic, pepper, rosemary and oil in a bowl and pour over chicken halves. Marinate for at least 4 hours or overnight. After fully marinated, add carrot, celery, onion and rosemary to roasting pan evenly around and under chicken. Season with salt and pepper. Roast in oven for 45 minutes or until juices run clear when pierced with a fork. Remove from oven and let settle. Cut into 8 pieces.;
  • Heat a medium size saute pan, add olive oil and saute for 1 minute. Add broccoli, mushroom and potatoes, saute for 2 minutes. Add chicken, wine and cook until wine reduces. Add chicken stock, cover and cook on low-flame for 10 minutes. To plate, remove chicken from pan and place on large platter. Add lemon, rosemary and butter to remaining sauce. Season to taste. Pour over chicken.;

1 1/2 lbs boneless skinless chicken breasts
salt and pepper
1 teaspoon poultry seasoning
2 tablespoons olive oil
2 red bell peppers, cut in 1-inch pieces
3 hot cherry peppers, drained and chopped
4 garlic cloves, chopped
1/2 cup dry white wine
1/2 cup chicken broth
1/4 cup Italian parsley, chopped
2 tablespoons hot pepper juice, from jar

Steps:

  • Heat a large, heavy skillet over med-high. Cut chicken into large chunks and season with salt, pepper, and poultry seasoning.
  • Add 1 T oil to hot pan. Set chicken in pan, and do not turn for 2-3 minute Brown 3 minutes on each side, then remove.
  • Add bell peppers, hot peppers, and garlic to pan. Saute 5 min, tossing and turning frequently.
  • Add wine to pan and reduce 1 minute Scrape up pan drippings. Add broth and bring up to a bubble.
  • Set chicken back in pan. Toss parsley with chicken and peppers, and cook chicken through, 2-3 minute Stir pepper juice into pan.
  • Serve over orzo.

1/4 cup fresh garlic, minced
1/2 cup butter, no substitute
1/4 cup olive oil
1 cup mushroom, sliced
4 links Italian sausage, sweet or hot -- sauteed and cut into 1 (good quality)
1/2 cup pepperoncini pepper
1/2 cup roasted red pepper, cut into strips
1/2 cup Italian olives, pitted (green or black or combo, good quality)
1 1/2 tablespoons capers, drained and rinsed
salt and pepper
to taste fresh basil, cut into thin strips or dried to taste
1/2 teaspoon red pepper flakes (or to taste)
1/2 cup white wine

Steps:

  • Season chicken with salt and pepper and let sit a few minutes Heat butter and olive oil in a large frying pan on med/low heat. Add garlic and saute just until garlic softens, do not brown.
  • Add chicken and saute until lightly browned.
  • Add mushrooms and saute about 3 minutes Add all other ingredients except wine and saute about 3 or 4 minutes.
  • Add wine and simmer for about 5 minutes or until chicken is cooked through and sauce thickens slightly
