Lois McAtee of Oceanside, California gives leftover chicken an unexpected treatment in this memorable main-dish pie. A creamy chicken salad mixture chock-full of celery, walnuts and pineapple looks special enough for company when chilled in a flaky pie crust.

1 unbaked pastry shell (9 inches)
2/3 cup shredded cheddar cheese, divided
1 cup sour cream
2/3 cup mayonnaise
2 boneless skinless chicken breast halves, cooked and cubed (about 1-1/2 cups)
1 cup pineapple tidbits
1 cup plus 2 tablespoons chopped walnuts, divided
1/2 cup chopped celery

Steps:

  • Prick the bottom and sides of pastry shell several times with a fork. Sprinkle with 1/3 cup cheese. Bake at 375° for 15-16 minutes or until the crust is lightly browned. Cool on a wire rack. , Meanwhile, combine sour cream and mayonnaise in a bowl. Stir in the chicken, pineapple, 1 cup walnuts and celery. Pour into cooled crust. Top with remaining cheese and walnuts. Refrigerate for 1 hour before cutting.

2 tablespoons unsalted butter
1 small red onion, cut into 1/2-inch dice (a heaping 1/2 cup)
2 sprigs thyme
Kosher salt and freshly ground black pepper
1 small carrot, peeled and cut into 1/2-inch dice (about 1/2 cup)
1/2 cup dry white wine
1/4 cup half-and-half
1/2 rotisserie chicken, skin and bones discarded, meat shredded (about 3 cups meat)

1/3 cup mayonnaise
1/4 cup fresh flat-leaf parsley, roughly chopped
2 ounces sugar snap peas, cut into 1/4-inch pieces (about 1/2 cup)
1 stalk celery, cut into 1/3-inch pieces (about 1/3 cup)
6 store-bought biscuits, split

Steps:

  • Melt the butter in a large skillet over medium heat. Add the onions, thyme, a large pinch of salt and a few grinds of pepper, and cook, stirring occasionally, 5 minutes; add the carrots, and continue to cook until the onions are softened and browned in spots, 3 to 5 minutes more. Add the wine, increase the heat to medium-high, bring the wine to a boil and cook until reduced by half, 2 to 4 minutes. Turn off the heat, stir in the half-and-half and mix in the chicken. Transfer the mixture to a large mixing bowl and refrigerate until cool, about 30 minutes.
  • Discard the thyme. Stir in the mayonnaise, parsley, snap peas and celery and season with salt and pepper. Divide the chicken mixture among the biscuits and serve immediately.

2 packages (6 oz each) refrigerated cooked chicken breast strips
1/2 cup Caesar dressing
2 tablespoons cooked real bacon pieces (from 2.8-oz package)
2 tablespoons shredded Parmesan cheese (1/2 oz)
2 cups sliced romaine lettuce
1/2 cup halved grape or cherry tomatoes

Steps:

  • Heat oven to 400°F. Remove pie crust from pouch; unroll crust onto ungreased large cookie sheet. Roll or press into 12-inch round.
  • Arrange chicken over dough to within 1 1/2 inches of edge. Drizzle 2 tablespoons of the dressing over chicken; sprinkle with bacon. Fold 1 1/2-inch edge of crust up over chicken, pleating crust as necessary. Sprinkle 2 teaspoons of the cheese over crust edge.
  • Bake 20 to 25 minutes or until crust is golden brown. Cool on cookie sheet 10 minutes. With metal spatula, gently lift edge; slide pie onto serving plate. Sprinkle with lettuce and tomatoes; drizzle with remaining dressing. Sprinkle with remaining cheese. Cut into wedges to serve.

Steps:

  • Position a rack in the middle of the oven. Preheat the oven to 375°F Have ready a 9x2 inch round baking dish or glass pie dish.
  • Filling:.
  • In a large bowl mix the filling ingredients together just to distribute them evenly and coat the chicken pieces with mayonnaise.
  • Spoon the filling into the baking dish, spreading it evenly.
  • Topping:.
  • Lay out the phyllo pastry sheets in a stack.
  • Immediately cover them completely with a damp dish towel.
  • Spread 1 sheet of phyllo on the counter and use a pastry brush to brush it lightly with butter, then sprinkle it lightly with salt.
  • Crumple it up lightly into a loose ball and place it on the filling. If any phyllo breaks off, just put it back on the ball of pastry.
  • Repeat with the remaining 5 sheets, arranging it to cover the filling. You will have 6 bundles of phyllo covering the filling.

1 9 in. unbaked pastry shell
2/3 cup cheddar cheese, shredded
1 cup sour cream
2/3 cup mayonnaise
2 cups cooked chicken, chopped
1/2 cup pineapple tidbits, drained
1/2 cup slivered almonds, toasted
1/2 cup celery, chopped
1/2 cup grapes, halved
salt
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Prick bottom and sides of pie crust with fork.
  • Press 1/2 the cheese into bottom of crust.
  • Bake about 10 minutes or until lightly browned. Cool.
  • Combine sour cream, mayonnaise and salt and pepper to taste in a bowl.
  • Stir in chicken, pineapple, almonds, celery and grapes.
  • Pour into cooled pie crust.
  • Sprinkle remainder of cheese over top and refrigerate at least 1 hour before cutting and serving.

1 egg white lightly beaten
3 cups chicken breasts cubed cooked
1 1/2 cups celery sliced
1 cup green bell pepper finely diced
1/4 cup onion minced
1/4 cup pimiento diced
1/2 cup mayonnaise real
1/2 cup sour cream
1 tablespoon lemon juice fresh
1/2 teaspoon salt
black pepper Freshly ground
1 cup potato chip crushed
1/2 cup sharp cheddar cheese shredded (2 oz.)

Steps:

  • Preheat oven to 400° F. Brush pie shell with egg white set aside.In a medium bowl mix chicken, celery, green pepper, onion and pimiento.In a small bowl mix mayonnaise, sour cream, lemon juice, salt and pepper. Stir into chicken mixture and blend thoroughly. Pour into pie shell.In a small bowl mix potato chips and cheese. Sprinkle over top of pie. Bake for 20 minutes or until heated through. If crust browns too quickly, cover with foil for final minutes of baking.
