CURRY CHICKEN SALAD BY PAULA DEEN
This is from Paula Deen's cooking show and I did not see it posted here so I hope it's not a repeat. She was not consistent in telling exactly how much of each ingredient, so some are an estimate, and I've guessed the number of servings. I made it tonight for lunch tomorrow and I really liked it, it has a very mild curry flavor. I subsituted 1/2 the mayonnaise with sour cream and dried cranberries for the grapes.

HOT SAVANNAH CHICKEN SALAD CASSEROLE (PAULA DEEN)
This sounds like a really odd combination but it is really yummy! I haven't met a Paula Deen recipe that I haven't liked yet. :) My notes are in parentheses. I've also used Recipe #278160 for the soup.

Steps:
- Lightly butter a 13x9 pan. Stir together the soup, mayonaisse, mustard, and Worcestershire sauce.
- In a medium bowl, reserve 1 cup of the potato chips and 2 tablespoons of the almonds for the topping.
- Place half of the remaining potato chips in the casserole spreading them evenly.
- Place half each of the chicken, celery, onion, eggs, and remaining almonds in the casserole, then spread half of the soup mixture on top.
- Repeat the layers, ending with the reserved potato chips and almonds. Sprinkle with cheese.
- Bake at 350 degrees for 30-40 minutes, or until heated through.
- Enjoy!

- In a medium bowl, combine chicken, mayonnaise, sour cream, almonds, parsley, honey, and salt, tossing gently to combine.
- Spread one side of each slice of bread evenly with Thousand Island dressing. Top half of bread slices evenly with chicken salad. Place 2 slices Swiss cheese over chicken. Top with remaining slices of bread.
- Spread half of butter on outside of one side of each sandwich. Place sandwiches, buttered side down, onto a griddle or skillet over medium-low heat. Cook 3 to 4 minutes, or until golden.
- Spread remaining butter on ungrilled sides of sandwiches, and cook until golden and cheese is melted. Serve immediately.

- For Dressing: Whisk together ingredients, refrigerate.
- For Chicken: Cut chicken into 1" strips. Whisk eggs with 1/4 cup water. Whisk flour with salt and pepper. Heat oil in skillet to 350. Dip chicken strips in eggs mixture, then coat with flour mixture. Fry 3-4 minutes until done. Season while hot.
- For salad: slice tomatoes and toss with greens and onion slices. Top with fried chicken strips and dressing.

- Preheat oven to 350 degrees. Spray a 13x9" baking dish with vegetable oil cooking spray. In a large mixing bowl, combine the chicken, celery, almonds, salt, pepper, lemon juice, mayo, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on topp. Bake for 20 minutes, or until bubbly.
