1/3 cup sour cream
1/3 cup mayonnaise
4 teaspoons lemon juice
1 teaspoon salt
1/4 teaspoon pepper
4 celery ribs, thinly sliced
1 cup chopped fresh mushrooms
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
3 cups cubed cooked chicken
4 bacon strips, cooked and crumbled
1/2 cup chopped pecans, toasted
20 miniature croissants, split
Lettuce leaves

Steps:

  • In a large bowl, mix first five ingredients; stir in vegetables. Add chicken; toss to combine. Refrigerate, covered, at least 4 hours., Stir in bacon and pecans. Line croissants with lettuce; fill each with 1/4 cup chicken mixture.

2 cups cubed cooked chicken
12 seedless red or green grapes, halved
1 medium apple, chopped
1/2 cup mayonnaise
1/3 cup chopped walnuts, toasted
1/4 cup plain yogurt
3 tablespoons cider vinegar
1/8 teaspoon salt
Dash pepper
16 miniature croissants or rolls, split
4 to 6 lettuce leaves, torn
16 frilled toothpicks, optional

Steps:

  • In a small bowl, combine the first nine ingredients. Spoon about 1/4 cup onto the bottom of each croissant; top with lettuce. Replace croissant tops. Insert toothpicks into sandwiches if desired.

1/3 cup mayonnaise
4 teaspoons lemon juice
1 teaspoon salt
1/4 teaspoon pepper

4 slices bacon, cooked and crumbled
1/2 cup chopped pecans, toasted

4 celery ribs, thinly sliced
1 c fresh mushrooms, chopped (optional)
1/4 c green pepper, chopped
1/4 c red pepper, chopped
4 bacon strips, cooked and crumbled
1/2 c chopped pecans, toasted
20 lettuce leaves
20 mini croissants, split

Steps:

  • 1. In a small bowl, combine sour cream, mayo, lemon juice, salt, and pepper.
  • 2. In a large bowl, combine chicken, celery, mushrooms, and peppers. Stir sour cream mixture into chicken mixture until combined. Cover and refrigerate for at least 4 hours.
  • 3. Just before serving, stir in bacon and pecans. Spoon 1/4 cup chicken salad onto each lettuce-lined croissant.
