Ruth Peterson from Jenison, Michigan uses up leftover chicken to create a creamy spread from open-faced sandwiches. "They're delicious, satisfying and inexpensive," she notes. "You can tuck the filling into buns instead, wrap them in foil and heat them in the oven for a few minutes."

Number Of Ingredients 6

1-1/2 cups finely chopped cooked chicken
1/2 cup mayonnaise
4 ounces process cheese (Velveeta), cubed
2 tablespoons each chopped green pepper, onion and ripe olives
2 tablespoons sweet pickle relish
4 sandwich rolls

Steps:

  • In a bowl, combine the chicken, mayonnaise, cheese, green pepper, onion, olives and relish. Split rolls in half; place cut side up on a greased baking sheet. Spoon about 1/4 cup chicken salad on each roll half. Broil 4 in. from the heat for 5-6 minutes or until cheese is melted.

2 c shredded skinless, boneless rotisserie chicken breast
1/4 c plain fat-free greek yogurt
1/4 c hellmans mayonaisse
2 tsp chopped fresh dill
1/4 tsp salt
1/4 tsp black pepper
3 green onions, thinly sliced
6 whole wheat english muffins, split toasted
3 oz sharp chedder cheese shreaded
3/4 c thinly sliced apple
6 bibb lettuce leaves

Steps:

  • 1. Preheat broiler to high. combine first 7 ingrediances in a med bowl; stir well. place 1/3 cup chicken mixture on bottom half of each muffin. top evenly with cheese an broil until cheese melts. top sandwiches evenly with apple, letttuce and top halve muffins. serve
