4 skinless, boneless chicken breast halves
½ cup butter, melted
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese

Steps:

  • Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.
  • Preheat an oven to 350 degrees F (175 degrees C). Combine the butter, crackers, and poppy seeds in a bowl; set aside.
  • Blend the sour cream and cream of chicken soup in a bowl; pour half of the soup mixture into a 9x9-inch baking dish. Add the shredded chicken, then pour the remaining half of the soup mixture on top. Sprinkle with Cheddar cheese, then top with the cracker mixture.
  • Bake in the preheated oven until cheese has melted and the sauce is bubbly, 25 to 30 minutes.

6 ounces buttery round crackers, crumbled
1 cup butter, melted
2 tablespoons poppy seeds
8 skinless, boneless chicken breast halves, cooked and cut into bite-sized pieces
2 (10.75 ounce) cans condensed cream of chicken soup
8 ounces sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the cracker crumbs, melted butter, and poppy seeds in a bowl. Layer the bottom of a 9x13-inch glass baking dish with 2/3 of the cracker mix. Mix the chicken breast pieces with cream of chicken soup and sour cream until thoroughly combined, and spoon the mixture on top of the crumb crust. 1/2 pound fresh mushrooms, sliced
5 cups cubed cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted

1 jar (2 ounces) diced pimientos, drained
TOPPING:
1/2 cup butter, melted
1-1/3 cups finely crushed butter-flavored crackers

6 boneless chicken breast halves
3 green onions, sliced
1 (10 1/2 ounce) can cream of chicken soup
2 (8 ounce) cartons sour cream
3 tablespoons sherry wine
1/4 teaspoon garlic powder

3/4 cup Ritz cracker, crushed
1 tablespoon poppy seed

Steps:

  • In large pot, place chicken breast. Cover with water until covered by 2 inches. Bring to a boil, and simmer low for 20minutes. Drain and cool.
  • When chicken is cool, shred or cut chicken into small pieces.
  • In a bowl combine green onions, soup, sour cream, sherry, garlic powder, salt and pepper. Stir well.
  • In another bowl combine crushed crackers, poppy seeds and butter. Mix well.

3 boneless skinless chicken breasts, yield three cups
2 teaspoons seasoning salt
1 tablespoon cracked black pepper
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted

1 1/2 cups buttery crackers, crushed (about one sleeve)
1/2 cup parmesan cheese, divided
1/4 cup butter, melted

Steps:

2 -3 cups cooked chicken (I use the fully cooked rotisserie chicken from the store)
16 ounces sour cream
10 ounces cream of chicken soup
35 Ritz crackers (one whole package)
16 ounces wide egg noodles
1/2 cup butter
poppy seed

Steps:

  • Cook a little over half the bag of egg noodles until done.
  • In a bowl,combine the chicken, cream of chicken soup, and sour cream. Mix well.
  • In a 9x13 take a small chunk of cold butter and rub the bottom of the pan. This insures that the noodles will not stick or become crispy. (I find that this is the only way that works for me. Using spray Pam has always made my noodles on the side crispy.)
  • Spread noodles over greased pan.
  • Spread the chicken mixture on top making sure to cover all the noodles well.
  • Melt the stick of butter and crumble the whole package of Ritz crackers in it and mix until crackers are saturated. Spread on top of chicken mixture.
  • Sprinkle Poppy Seeds on top.
  • Cook uncovered at 350 for 30 minute or until hot.

2 c brown rice, raw (or you can use whole grain white) just dont use minute
salt & pepper
16 oz marble jack cheese, shredded (cheddar would be a good choice as well)
4 to 6 boneless, skinless chicken breast, cut into bit size pieces (i used 4 very lg chicken breast)
2 (10-oz) cans cream of chicken soup (non fat if you perfer)
1 c sour cream
2 1/2 to3 c chicken broth (can use stock or water)
1 tube ritz crackers, crushed (or similar off brand)
1 Tbsp poppy seed
1/2 c (1 stick) butter, melted

Steps:

  • 1. Preheat oven to 350 degrees. Grease 9 x 13-inch pan.
  • 2. Spread dry uncooked rice evenly over bottom of prepared pan. Sprinkle with a little salt and pepper if desired. NOTE 1: There is a lot of salt in both the cream of chicken soup and cheese so not much salt if any is needed. NOTE 2: White rice does not take as long to cook. You should reduce cooking time by 15 to 20 minutes if using white rice.
  • 3. Sprinkle 1/2 of the shredded cheese over rice; place chicken pieces on top of rice & cheese.
  • 4. Combine soup and sour cream; spread evenly over chicken.
  • 5. Pour chicken broth/stock or water over top. There will be a lot of liquid. Don't worry, the rice will soak up the liquid as it cooks.
  • 6. Bake in oven uncovered for 1 hour and 45 minutes. Remove from oven. Check to see if rice is tender; add more liquid IF needed. At this point the liqiud shoud be almost (but not completely) soaked up by rice with the top looking almost like a pudding or like the cream of chicken soup when you 1st spooned it over the chicken. NOTE: Remember if using white rice you will need to reduce cooking time by 15 to 20 minutes. Brown rice takes longer to cook than white rice.
  • 7. Sprinkle remaining cheese on top. Combine the crushed crackers and poppy seed. I do this in a large ziploc bag. Sprinkle mixture evenly over top. Drizzle melted butter over crumbs.
  • 8. Return to oven (uncovered) and bake for 25 minutes longer. Remove from oven, cool for about 10 minutes and serve.

  • 1. Preheat oven to bake 375 degrees F. Tip: Place cookie sheet in oven when you preheat. The casserole will cook faster.

2 cups (16 oz) light sour cream
2 Tbsp poppy seeds
1 cup chicken broth
1 sleeve buttery whole wheat crackers

Steps:

  • 1. Cook the chicken breasts and thighs using your favorite cooking method. I usually put in slow cooker with a cup of water for 4-6 hours on LOW. This also gives you your needed chicken broth. Shred or chop cooked chicken. If you are in a real rush, you can even buy a rotisserie chicken and shred that. 2. In large bowl, mix: soup, sour cream, poppy, seeds, and chicken broth. Mix in shredded chicken. 3. Spread chicken mixture into 9 x 13 casserole coated with cooking spray. 4. Top with crushed crackers. Spray top with cooking spray. I cannot bring myself to melt a stick of butter and pour it over the crackers, like many recipes suggest. I'll take my butter in a slice of pound cake for dessert. Trust me, the crackers will brown into a nice crunchy topping. 5. Cover with foil. Bake 30 min at 350 degrees. Remove cover and bake an additional 10 minutes until crust is brown and casserole is bubbly.

Easiest dish to make not to mention how good it taste! Always requested at family gatherings. This has been a favorite for over 30 years now. My former mother in law shared this recipe with me. She was and is an awesome cook!

6 chicken breast, cooked (6 small/med breast or 3 large)
2 can(s) cream of chicken soup
8 oz carton sour cream
1 pkg ritz cracker, from 3 pkg box
1 Tbsp popppy seed
1 stick butter, melted (i originally used 1 1/2 stks butter but i've found that 1 stk is perfect)
salt and pepper, to taste
rice, cooked and hot

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cut into bite size pieces; place in a buttered casserole dish. NOTE: I use an 8 X 11 X 3-inch corningware casserole dish.
  • 3. Mix the soup and sour cream and pour over the chicken.
  • 4. Crush Ritz cracker, combine with poppy seed and sprinkle evenly over soup mixture.
  • 5. Melt margarine, and drizzle over crackers.
  • 6. Bake at 350 degrees for 30 to 40 minutes until bubbly.
  • 7. Serve over hot rice. Enjoy!

This is one of my favorite dishes that I grew up eating. Even though I am grown and married and live far from mom, I still request this dish every time I go home. This is a very easy dish to change to suit your tastes -- use cream of mushroom or cream of celery -- whatever you have on hand. I also sometimes add a can of sliced mushrooms, or broccoli, or cheese, corn, peas, etc.

2 1/2 lbs chopped or shredded cooked chicken
2 (10 1/2 ounce) cans cream of chicken soup
1 (8 ounce) carton sour cream
1 cup crushed Ritz cracker (which is about 1 sleeve)
1/2 cup melted butter
2 tablespoons poppy seeds

Steps:

  • Preheat oven to 350 degrees.
  • Mix together soup and sour cream.
  • Add chicken to soup mixture and mix thoroughly.
  • Pour into 1 1/2 to 2 quart baking dish.
  • Mix crushed Ritz crakers with the melted butter and poppyseeds and spread over the top of casserole.
  • Bake for 20 - 30 minutes or until bubbly.
