Steps:
- Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.
- Preheat an oven to 350 degrees F (175 degrees C). Combine the butter, crackers, and poppy seeds in a bowl; set aside.
- Blend the sour cream and cream of chicken soup in a bowl; pour half of the soup mixture into a 9x9-inch baking dish. Add the shredded chicken, then pour the remaining half of the soup mixture on top. Sprinkle with Cheddar cheese, then top with the cracker mixture.
- Bake in the preheated oven until cheese has melted and the sauce is bubbly, 25 to 30 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix together the cracker crumbs, melted butter, and poppy seeds in a bowl. Layer the bottom of a 9x13-inch glass baking dish with 2/3 of the cracker mix. Mix the chicken breast pieces with cream of chicken soup and sour cream until thoroughly combined, and spoon the mixture on top of the crumb crust. Sprinkle remaining 1/3 of the cracker mix over the top of the chicken mixture.
- Bake in the preheated oven until the casserole is hot and bubbling, about 1 hour.

I cannot remember for sure where this recipe came from, however it may have been a Southern Living Magazine. It is fast easy and always pleases the family. A nice do ahead meal that I have used for buffets or just having friends over for a quick get together.

Steps:
- In large pot, place chicken breast. Cover with water until covered by 2 inches. Bring to a boil, and simmer low for 20minutes. Drain and cool.
- When chicken is cool, shred or cut chicken into small pieces.
- In a bowl combine green onions, soup, sour cream, sherry, garlic powder, salt and pepper. Stir well.
- In another bowl combine crushed crackers, poppy seeds and butter. Mix well.
- In a greased casserole dish, lay chicken in bottom layer. Next pour soup mixture over top as next layer. Top casserole with cracker mixture.
- Bake in preheated 350°F oven for 30 minutes.

- Place chicken breast in lightly greased baking dish, season with seasoned salt, and pepper. Bake at 450 for 30-35 minutes, until breasts are done. Remove from oven and reduce heat to 350°F.
- In medium bowl add cream soup, sour cream, poppy seeds, and 1/4 cup of parmesan cheese. Stir well.
- Chop chicken and add to bowl of soup and sour cream mixture. Stir well.
- Place chicken in a lightly greased 11x7x1 1/2 inch baking dish, spread evenly.

- Cook a little over half the bag of egg noodles until done.
- In a bowl,combine the chicken, cream of chicken soup, and sour cream. Mix well.
- In a 9x13 take a small chunk of cold butter and rub the bottom of the pan. This insures that the noodles will not stick or become crispy. (I find that this is the only way that works for me. Using spray Pam has always made my noodles on the side crispy.)
- Spread noodles over greased pan.
- Spread the chicken mixture on top making sure to cover all the noodles well.
- Melt the stick of butter and crumble the whole package of Ritz crackers in it and mix until crackers are saturated. Spread on top of chicken mixture.
- Sprinkle Poppy Seeds on top.
- Cook uncovered at 350 for 30 minute or until hot.

- 1. Preheat oven to 350 degrees. Grease 9 x 13-inch pan.
- 2. Spread dry uncooked rice evenly over bottom of prepared pan. Sprinkle with a little salt and pepper if desired. NOTE 1: There is a lot of salt in both the cream of chicken soup and cheese so not much salt if any is needed. NOTE 2: White rice does not take as long to cook. You should reduce cooking time by 15 to 20 minutes if using white rice.
- 3. Sprinkle 1/2 of the shredded cheese over rice; place chicken pieces on top of rice & cheese.
- 4. Combine soup and sour cream; spread evenly over chicken.
- 5. Pour chicken broth/stock or water over top. There will be a lot of liquid. Don't worry, the rice will soak up the liquid as it cooks.
- 6. Bake in oven uncovered for 1 hour and 45 minutes. Remove from oven. Check to see if rice is tender; add more liquid IF needed. At this point the liqiud shoud be almost (but not completely) soaked up by rice with the top looking almost like a pudding or like the cream of chicken soup when you 1st spooned it over the chicken. NOTE: Remember if using white rice you will need to reduce cooking time by 15 to 20 minutes. Brown rice takes longer to cook than white rice.
- 7. Sprinkle remaining cheese on top. Combine the crushed crackers and poppy seed. I do this in a large ziploc bag. Sprinkle mixture evenly over top. Drizzle melted butter over crumbs.
- 8. Return to oven (uncovered) and bake for 25 minutes longer. Remove from oven, cool for about 10 minutes and serve.
LOW-FAT POPPY SEED CHICKEN CASSEROLE
A low-fat, high taste twist on sour cream & chicken casseroles. When I cook the chicken, I usually pan-sear with salt, pepper, and spices like garlic or onion powder. This provides a little extra yummy taste to the overall dish. Wonderful with green vegetables or salad as sides.

- Preheat oven to 350°F.
- Place chicken in a pan and cover with water and bring to a boil, then reduce heat and simmer until tender and no longer pink(about 10 minutes). Once cool enough cut into bite size pieces(I use my electric knife).

- 1. Cook the chicken breasts and thighs using your favorite cooking method. I usually put in slow cooker with a cup of water for 4-6 hours on LOW. This also gives you your needed chicken broth. Shred or chop cooked chicken. If you are in a real rush, you can even buy a rotisserie chicken and shred that. 2. In large bowl, mix: soup, sour cream, poppy, seeds, and chicken broth. Mix in shredded chicken. 3. Spread chicken mixture into 9 x 13 casserole coated with cooking spray. 4. Top with crushed crackers. Spray top with cooking spray. I cannot bring myself to melt a stick of butter and pour it over the crackers, like many recipes suggest. I'll take my butter in a slice of pound cake for dessert. Trust me, the crackers will brown into a nice crunchy topping. 5. Cover with foil. Bake 30 min at 350 degrees. Remove cover and bake an additional 10 minutes until crust is brown and casserole is bubbly.
