MOO SHU CHICKEN WITH MANDARIN PANCAKES



Moo Shu Chicken with Mandarin Pancakes image

This is a decidedly American version of moo shu chicken, but fast to make! The Mandarin pancakes, also called moo shu shells, can be found in almost any Asian market, but feel free to use flour tortillas. Keep in mind the moo shu shells are much thinner than a typical flour tortilla, and have a different (pasta-like) taste.

¼ cup hoisin sauce
½ cup rice vinegar
2 cloves garlic, minced
1 tablespoon oyster sauce
1 tablespoon soy sauce
½ teaspoon toasted sesame oil
½ teaspoon Chinese five-spice powder
½ pound chicken tenders, sliced on the diagonal into thin strips
2 tablespoons sesame oil, divided
½ cup shiitake mushrooms, stemmed and thinly sliced
½ cup shredded napa cabbage
½ cup julienned carrots
½ cup julienned red cabbage
4 scallions, green parts only, thinly sliced
2 tablespoons water
1 large egg, beaten
10 Mandarin pancakes

Steps:

  • Mix hoisin sauce, rice vinegar, garlic, oyster sauce, soy sauce, toasted sesame oil, and Chinese five-spice powder together in a bowl. Add chicken strips and let marinate for 10 minutes.
  • Heat 1 tablespoon sesame oil in a large wok over medium-high heat. Add marinated chicken. Stir-fry until no longer pink in the center and juices run clear, about 5 minutes. Transfer chicken to a bowl. Wipe out wok.
  • Pour remaining tablespoon sesame oil into wok over medium-high heat. Add shiitake mushrooms, napa cabbage, carrots, red cabbage, and scallions; stir-fry until crisp-tender, about 3 minutes. Pour in water.
  • Pour beaten egg into vegetable mixture; stir-fry 1 to 2 minutes. Add cooked chicken and stir-fry to combine.
  • Heat pancakes according in a microwave oven until warmed, 30 seconds to 1 minute.
  • Divide stir-fry mixture between pancakes and fold over like a taco or wrap like a sandwich wrap. Serve.

Crispy pancakes with creamy chicken & bacon image

A grown-up homage to a schooldays favourite, these upgraded crispy pancakes are filled with creamy chicken, bacon and chestnut mushrooms

2 tbsp olive or rapeseed oil
2 chicken breasts
200g pack smoked bacon lardons
1 onion , chopped
200g chestnut mushrooms , finely chopped
3 tbsp flour
400ml milk
handful parsley , chopped
100g plain flour
2 large eggs , plus one beaten, for brushing
150ml milk
50g breadcrumbs
salad or baked beans, to serve (optional)

Steps:

  • Heat 1 tbsp oil in a large frying pan. Cook the chicken breasts for 5-8 mins each side until golden brown and cooked through, then transfer to a plate. Tip the lardons into the pan and sizzle for a few mins until crispy, then tip out onto the plate with the chicken.
  • If the pan looks dry, add the remaining oil, then the onion. Cook for 5 mins until softened and translucent, then stir in the mushrooms and some seasoning. Cook for 5-10 mins until the mushrooms are soft and most of the liquid in the pan has cooked. Stir in the flour, mixing it into the mushrooms to make a chunky paste, then pour in the milk, a little at a time, whisking continuously until you have a smooth sauce. Bubble for 2-3 mins until thick. Chop the chicken into small chunks and add back to the pan along with the lardons and any juices from the plate. Check the seasoning, stir in the parsley, then leave to cool and chill until you're ready to fill the pancakes.
  • To make the pancakes, tip the flour into a large bowl and season with 1/2 tsp salt. Make a well in the centre and crack in the 2 eggs. Pour in the milk, then use a large whisk to combine the eggs and milk, working the flour into the liquid until you have a smooth, thin batter. Heat a large frying pan or crêpe pan with a drizzle of oil.
  • When the pan is hot, pour in just under a ladleful of the batter and quickly swirl the pan to spread it across the surface, filling any gaps with an extra drizzle of batter. When the underside of the pancake is golden, flip and cook for 30 secs more. Transfer to a plate and make three more pancakes in the same way, then cool until you're ready to assemble. If you want to make the pancakes a day ahead, once cool stack on a plate, separated with sheets of baking parchment, then wrap the plate in cling film. Chill for up to 2 days.
  • Heat oven to 200C/180C fan/gas 6 and line two baking trays with baking parchment. Take one pancake and brush a circle of beaten egg around the edge. Pile a quarter of the chicken mixture into the centre of the pancake (the sauce should have thickened while chilling), then fold the pancake over and press the edges together to make a pasty shape. Transfer to a baking tray and continue assembling the remaining pancakes. Brush the top of each one with more egg and scatter over the breadcrumbs, then bake for 20-25 mins, swapping the trays halfway through. Leave to cool for 5 mins before serving with salad or baked beans, if you like.

1 whole roasting chicken, (freerange birds are always tastier)
2 large carrots --peeled and cut into 1- inch pieces
2 ribs of celery--cut into linch pieces
1 large onion, or 2 small ones-- peeled and cut into eighths
1 can of chicken broth
1/2 cup of real Vermont maple syrup
1 tablespoon chopped thyme-- dry is good, fresh is better
salt and pepper
1 pound russet potatoes, peeled and soaked in salted water
1 egg
1 small red onion, fine dice
3/4 cup flour
Salt
White pepper
1 tablespoon olive oil
Canola oil for sauteing
6 Cortland apples, peeled, cored and diced
3 tablespoons of granulated sugar
1/4 cup water

Steps:

  • Preheat oven to 325 degrees F
  • Once you've prepared all of your vegetables, toss them together with the thyme and some salt and pepper. Put the veggies into a 2-inch deep roasting pan.
  • Wash the bird inside and out and dry with a towel. Sprinkle it all over with salt and pepper. Rub a couple of teaspoons of olive oil all over the skin. Place it on top of the vegetables. Put it into the oven.
  • Pour the stock and syrup into a small saucepan. Bring to a boil and reduce it by half: Use this mixture to baste the chicken generously and frequently.
  • While the chicken is cooking, make the pancakes and the applesauce.
  • Grate the potatoes in the food processor. Put them in a bowl and add the egg and onion. Mix slightly. Add the flour and mix some more, but not too much. Add the salt and white pepper and olive oil. Mix a little more.
  • Heat the Canola oil in a nonstick pan. When it starts to smoke a little, add one sixth of the mixture. Turn down the heat to medium. When the potatoes start to brown around the edges, flip them over and cook for almost 3 to 4 minutes more. Repeat until you are out of batter. You may hold these warm and put them in the oven just before you sit down for dinner
  • Cook the apples on the stovetop with a little water and the sugar. When soft, mash with a potato masher or puree in the food processor for a smoother sauce.
  • FINISHING UP AND SERVING:
  • You will know that the chicken is done when the leg moves somewhat freely and the juices are running clear between the breast and the thigh. Take it out of the oven, move it to the cutting board and allow it to rest for 20 minutes.
  • While the bird is resting, spoon the veggies into a serving dish and keep warm. Put the roasting pan with the cooking juices on the stove and add 1/2 cup of white wine. Reduce all of this together just a little and pass in a pitcher with the chicken. Carve the chicken into large pieces; cut the pancake into wedges. Top with warm applesauce. Serve all family style and enjoy.
  • For a quicker dinner you may roast a whole cut up chicken, basting all pieces in the same manner. You will have to cut the vegetables into smaller pieces so that they are done when the chicken is

1 medium zucchini, shredded

Steps:

  • Combine flour, egg, water. This should make a thin batter. Adjust ingredients as necessary.
  • In a separate bowl, combine carrots, zucchini, garlic, ginger, bean sprouts and chicken.
  • Pour batter over vegetable and chicken mixture, gently stir until the mixture is covered with batter.
  • Heat oil over medium-high heat in frying pan.
  • Pour 1/2 cup portions of mixture in frying pan. Cook for 3-4 minutes on each side, until golden brown and cooked through.

1/2 teaspoon kosher salt
3/4 cup boiling water
4 green onions (green parts only), thinly sliced
2 tablespoons toasted sesame oil
6 to 8 boneless skinless chicken thighs (about 450 grams/1 pound)

1 1/2 teaspoons Chinese five spice
2 teaspoons toasted sesame oil
1 teaspoon canola oil
1/3 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
2 tablespoons grated fresh ginger
2 garlic cloves, grated
3 tablespoons toasted sesame seeds

Steps:

  • For the pancakes: Combine the flour and salt in a large bowl and make a well in the center. Pour in the boiling water and stir with a wooden spoon until a shaggy dough forms. Turn the dough out onto a lightly floured work surface and allow it to cool slightly. Knead the dough until smooth, about 2 minutes, adding more flour if needed. Cover with a clean kitchen towel to rest for 30 minutes.
  • For the chicken: Meanwhile, preheat your oven to 375 degrees F (190 degrees C). Place a large nonstick skillet over medium-high heat. Pat the chicken dry with a paper towel. Season with salt and scatter with the five spice. Add the sesame and canola oil to the pan and sear the chicken for 3 to 4 minutes per side, or until golden brown. Remove the chicken from the skillet and transfer to a sheet pan.
  • Meanwhile, whisk together the hoisin, soy, vinegar, ginger, garlic and toasted sesame seeds in a small bowl. Drizzle over the chicken then transfer to the oven. Cook for 15 to 18 minutes, or until the glaze has thickened and the internal temperature of the chicken is 165 degrees F (75 degrees C).
  • For the pickles: Whisk together the vinegar, honey, fish sauce, soy sauce, sesame oil and sesame seeds in a large bowl. Add the carrots, cucumbers and green onions. Toss to coat and set aside.
  • For the pancakes, place a stainless steel or cast-iron skillet over medium-high heat. Lightly dust a work surface with flour. Cut the dough into 16 equal pieces, and cover with a clean kitchen towel to keep moist.
  • Slightly flatten a piece of dough into an oval approximately 10 centimeters by 5 centimeters (about 4 by 2 inches) and scatter about a teaspoon of green onions to cover the surface. Roll the dough up starting at one long side to form a tight cylinder. Coil the cylinder into a tight spiral, resembling something like a tiny cinnamon bun and gently press the dough in your hand again to form a small disc. Return the now green onion-filled dough under the towel to rest, while you prepare the other pieces in the same way.
  • Roll out a disc into a very thin circle on the floured work surface, approximately 12 to 14 centimeters (5 to 6 inches) round. Lightly oil both sides with sesame oil.
  • Add to the heated pan and cook for about 30 seconds per side. Transfer to a plate and cover with a clean kitchen towel to keep warm while you continue to roll and cook the remaining pancakes.
  • To serve, slice the chicken into 1 centimeter (about 1/2-inch) thick slices and transfer to a platter along with the pickles and green onion pancakes.

¼ cup chopped onion
¼ cup sliced celery
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup milk
2 cups diced cooked chicken

1 teaspoon dried parsley

Steps:

  • Combine corn kernels, whole milk, Masa Harina, salt, and pepper in heavy large saucepan over medium heat; cook until liquid is absorbed and mixture is thick, stirring frequently, about 10 minutes. Remove from heat and let cool slightly. Stir in chopped bell pepper, chopped green onions, and chopped cilantro. Mix 1 tablespoon butter and baking soda in small bowl. Stir butter mixture into batter (batter will be very thick). Cool completely. (Can be prepared ahead - cover and refrigerate). Preheat oven to 250F. Using 1/4 cup pancake batter for each, form about 18 3-inch diameter patties. Melt 1/2 tablespoon butter in heavy large skillet over medium heat. Working in batches, cook patties until golden brown, adding more butter to skillet as needed, about 4 minutes per side. Transfer pancakes to baking sheet and keep warm in oven. Heat oil in heavy large skillet over medium heat. Add onions; sautee 2 minutes. Add chicken and barbecue sauce. Stir until chicken is heated through, about 5 minutes. Place 3 pancakes on each plate. Top with chicken mixture and avacado salsa. Drizzle with cilantro cream.

SHREDDED SESAME CHICKEN PANCAKES WITH SPICED PLUM SAUCE

Cook your roast chicken with honey and five-spice glaze then serve with a Chinese-style fruit sauce and pancakes

1.8kg whole chicken
2 tbsp sunflower oil
2 tbsp five spice powder
2 tbsp clear honey
2 tbsp sesame seed
6 plums , stones removed and quartered
3 tbsp soft brown sugar
2 tsp five spice powder
1 tsp cornflour
100ml rice wine vinegar or Sherry
soft Chinese pancakes or wraps, warmed
½ cucumber , finely shredded
6 spring onions , finely shredded

Steps:

  • Heat oven to 200C/180C fan/gas 6. Sit the chicken in a roasting tin, drizzle with oil and rub all over with the five-spice and plenty of seasoning. Roast in the centre of the oven for 30 mins.
  • Turn the oven down to 160C/140C fan/ gas 3 and cook for a further 1 hr 50 mins. Meanwhile, prepare the plum sauce. Put the plums, sugar, five-spice, cornflour and a good pinch of salt in a separate roasting tin. Toss everything together, then pour in the vinegar, mix again and set aside.
  • Remove the chicken from the oven and increase the heat back to 200C/180C fan/ gas 6. Drizzle over the honey and sprinkle with sesame seeds, then return to the oven for 20 mins, with the plums on the shelf underneath. When the chicken is cooked, remove from the oven and cover with foil. Leave to rest for 20 mins before serving. Continue cooking the plums for 15 mins more, until they are soft and the sauce is thick and sticky.
  • To serve, shred the chicken with forks and pile into warm Chinese pancakes or wraps with the warm plum sauce, and some shredded cucumber and spring onions.

This is a basic dish that needs some preparation of the ingredients, but it is quickly prepared. In Vietnam this is served with a choice of greens, rice paper sheets, fresh mint and don't forget the dipping sauce (nuoc cham). Note: I served this with the ingredients I had on hand. 1 cup rice flour (regular white rice flour, not glutinous rice flour)
1/2 teaspoon turmeric powder
1 cup water
1/2 teaspoon salt (or to taste)
pepper
1/2 cup coconut milk (alternative beer or water)
1 tablespoon green onion, finely chopped
2 tablespoons oil
5 ounces chicken breasts, thinly sliced
5 ounces shrimp, peeled and cleaned
1 medium onion, peeled and finely sliced
3 garlic cloves, crushed
1 cup bean sprouts
1 cup split green beans, soaked and steamed until soft
some lettuce leaf (or other salad)
1 cup cucumber, slices
1 spring fresh mint leaves
10 sheets vietnamese rice paper, sprinkled with water to soften
1/2 cup pickled carrots or 1/2 cup fresh carrot, sliced
2 tablespoons nuoc cham sauce

Steps:

  • Combine rice flour, turmeric, water, salt, pepper and coconut milk.
  • Mix well into a batter.
  • Add green onions.
  • Heat your wide skillet (non sticky pan) until very hot and add the oil.
  • Now add chicken, shrimps, onion and garlic.
  • Sauté for 3 minutes until meat is just done. Set aside.
  • Reduce heat to medium.
  • Place one quarter of the meat mix into the skillet and poor one quarter of batter on it.
  • After 1-2 minutes add one quarter of bean sprouts and green beans.

PANCAKES STUFFED WITH FRIED CHICKEN



Pancakes Stuffed with Fried Chicken image

4 chicken cutlets (remove skin)
Salt to taste
Black pepper, to taste
1 pound all-purpose flour
2 cups Canola oil
11/2 cups self rising flour
1 teaspoon baking powder
1 cup old fashioned oats
1 teaspoon baking soda
4 tablespoons sugar
1 teaspoon salt
3 cups buttermilk
1 teaspoon vanilla extract
2 large eggs
4 ounces melted sweet butter
2 ounces canola oil (to grease griddle)
8 ounces melted sweet butter
1 cup pecans
16 ounces maple syrup

Steps:

  • Cut each chicken cutlet into 3 strips. Season chicken with salt and pepper. Dredge the chicken in flour and shake off excess flour. Pour oil into heavy iron skillet. Heat over moderately high heat. Place chicken strips into hot oil. Fry the chicken until bottom is golden brown. Using tongs, turn the chicken and brown on the other side. Lower the heat if necessary to avoid burning. Continue to cook the chicken turning once or twice until fully cooked (approximately) 5 to 7 minutes depending on size of chicken and temperature of oil.) Remove chicken from pan and drain well on paper towels.;
  • In a medium size bowl, mix all dry ingredients together. Set aside. In a medium bowl combine buttermilk, vanilla and eggs. Using a wire whip, whisk ingredients together for approximately 1 minute. Add dry ingredients to buttermilk mixture. Add melted butter and continue to mix for about 1 minute until batter is fairly smooth. Allow pancake mixture to rest approximately 10 minutes before cooking. For each pancake, pour approximately 1/4-cup batter onto lightly greased griddle. Turn pancake when edges look brown and bubbles appear on top. Turn each pancake 1 time.
  • Yield: 10 to 12 pancakes
  • STUFFING PANCAKES:
  • Place pancakes on plate. Place a chicken strip on edge of pancake. Roll pancake until it is wrapped around chicken strip. Place crease end down on plate.
  • Place melted butter in a medium saucepan over medium heat. Add pecans and maple syrup. Stir mixture. Simmer for approximately 5 minutes or until syrup is hot. Spoon over stuffed pancakes.
  • Yield: 8 (4-ounce) servings

This is a recipe from my Great-Grandmother Sullivan. She made this for breakfast, lunch and dinner. It was a great way to use up left over chicken.... she had 15 children.... nothing went to waste.

1 1/4 c flour
3/4 c buttermilk
2 large eggs
1 Tbsp sugar (optional)
1 Tbsp baking powder
1/4 tsp ground sage (or poultry seasoning)
1/2 tsp salt
1/2 tsp ground black pepper
2 Tbsp chicken fat
3/4 c chicken (cooked and chopped small)
1 medium onion (minced and sauted)

Steps:

  • 1. Mix together all of the batter ingredients well. If the batter is too thin, add flour. If it is too thick, add a little milk. The batter should be thick. Add the onions and chicken. Let sit for 5 minutes.
  • 2. Cook on hot greased griddle as you would any pancake, turning over after bubbles appear.
  • 3. *** Serve with chicken gravy, cheese sauce, butter, or syrup (personally, I don't care for the syrup).

1 1/2 cups boiled rice
1 1/2 cups broken basmati rice
1/4 cup bengal gram dal (chana dal)
1 teaspoon salt

1/4 teaspoon asafoetida powder (hing)
1 teaspoon garlic paste
1/2 kg boneless chicken, shredded
2 tablespoons mustard oil
1 teaspoon ginger-garlic paste
1/2 teaspoon mustard seeds
1/2 teaspoon anise seed, coarsely ground (saunf)
1/4 teaspoon asafoetida powder (hing)
1 teaspoon red chili powder
1 teaspoon garam masala powder
1 teaspoon salt
1/2 teaspoon turmeric powder
coconut oil, for frying

Steps:

  • To prepare the batter: Soak the dals, the broken rice and the boiled rice overnight in plenty of water.
  • Drain and grind to a slightly grainy consistency in a food processor.
  • Add the remaining ingredients and enough water.
  • Whisk to achieve a thick and fluffy mixture.
  • Set aside for 8 hours to ferment.
  • To prepare the filling: Heat the mustard oil till smoking point.
  • Lower heat, add the ginger-garlic paste and saute for a minute.
  • Add the mustard seeds, aniseed and asafoetida.
  • Saute.
  • Add the chicken and remaining ingredients.
  • Cook till the chicken is done.
  • To prepare the dosas: Heat the coconut oil on a tawa (flat griddle).
  • Use one ladle of batter to make a thin dosa.
  • Fry till the base is golden brown.
  • Spoon some of the filling into the centre.
  • Fold and serve immediately.
  • Repeat with the rest of the batter and chicken filling.
  • Serve hot.

1/2 teaspoon curry powder
1/2 cup walnuts or pecans
2 cups skinless cooked roasted chicken, cut into coarse pieces
1 egg
Salt and freshly ground black pepper
Flour for dredging
2 tablespoons butter
2 portions of cole slaw or green mesclun salad tossed with vinaigrette
Sour cream, optional
1/2 cup each finely diced onions and Granny Smith apples

Steps:

  • Cook the onions and apples in the butter, until tender, then season with curry powder. In a food processor, coarsely chop the nuts with the chicken. Add the cooked onions and apples and the egg and process just until combined and almost pureed. The mixture should come together but
  • not be pasty. Season with 1/2 teaspoon salt and freshly ground black pepper. Shape the mixture into 8 small patties. Dredge them lightly in flour and cook in butter for 3 minutes a side or until hot through.
  • Serve over a green salad or with cabbage. Delicious topped with sour cream.
