These are the BEST crispy baked chicken nuggets you'll ever make! This delicious, healthy chicken nuggets recipe takes just about 30 minutes from start to finish and uses super simple ingredients like panko breadcrumbs, chicken breast and spices. Serve with honey mustard, ketchup or your favorite BBQ sauce. Kid-friendly and adult approved!

1 ½ cups panko breadcrumbs
Nonstick olive oil cooking spray
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon paprika
½ teaspoon garlic powder
1/4 teaspoon cayenne pepper*
2 large eggs
2 tablespoons almond milk (or milk of choice)
1 pound boneless skinless chicken breast, cut into into 1 inch cubes

Steps:

  • Preheat oven to 400 degrees F.
  • Add panko breadcrumbs to a large baking sheet and spread out in an even layer. Spray breadcrumbs with nonstick olive oil cooking spray. Bake for 2 minutes, then stir breadcrumbs (or just give the pan a shake) and then bake for 2-3 minutes or until breadcrumbs are golden brown. Keep heat in the oven.
  • Transfer breadcrumbs to a medium bowl. Whisk in spices: salt, black pepper, onion powder, paprika, garlic powder and cayenne pepper. Set aside.
  • In a separate medium bowl, whisk together the eggs and almond milk. Set aside.
  • Line the large baking sheet with an oven safe wire metal rack. Spray with nonstick cooking spray.
  • Dip each chicken cube into the egg mixture, then use a tong to grab each chicken nugget and toss into the breadcrumb mixture to completely coat with breadcrumbs. Use tongs to transfer to the wire rack, placing about 1 inch apart.
  • Generously spray the tops of the chicken nuggets with nonstick spray. Bake in the oven for 15-20 minutes until cooked through and temp reaches 165 degrees F with a meat thermometer. Serves 4. Serve with BBQ sauce, honey mustard, ketchup or whatever sauce you'd like!

3/4 cup Bisquick Gluten Free mix (If you don't have gluten-free Bisquick you can make your own, see the link in the post above.)
1/2 cup grated Parmesan cheese
1 teaspoon paprika
1/2 teaspoon salt or garlic salt
2 chicken breasts (cut into nugget size)
1 egg (slightly beaten)
3 tablespoons butter (melted)

Steps:

  • Preheat oven to 450 degrees.
  • Spray baking sheet with gluten-free cooking spray.
  • Place the gluten-free Bisquick mix, parmesan cheese, paprika, and garlic salt in a large plastic storage bag.
  • Cut chicken breasts into nugget size pieces. An easy way to cut chicken breasts into nugget size pieces is to cut the chicken breasts in half and then in half again. Cut the chicken quarter pieces into nugget size pieces.
  • Place the chicken pieces in the bowl of beaten egg. Stir the chicken until the pieces are fully covered in egg.
  • Place the egg covered chicken pieces into the plastic storage bag with the gluten-free Bisquick mixture. Turn the bag over and over again until the chicken pieces are fully coated with the gluten-free Bisquick mixture.
  • Melt the butter in a glass measuring cup or small microwave-safe dish.
  • Place the coated chicken on the greased baking sheet. Drizzle melted butter over the chicken.
  • Bake for 20 minutes and until golden brown.
  • Serve with your favorite dipping sauce and enjoy!

1/2 cup all-purpose flour
1 teaspoon granulated garlic
Kosher salt and ground black pepper
2 boneless skinless chicken breasts, cut into 1 1/2-inch pieces
1 cup prepared breadcrumbs
1 large egg
1 cup vegetable oil

Steps:

  • Place the flour in a resealable plastic bag and season with the garlic, 1 teaspoon salt and 1/4 teaspoon pepper. Place the chicken pieces in the bag with the flour and toss to coat (work in batches). Transfer the breadcrumbs to a rimmed plate, season with salt and pepper and set aside.
  • Whisk the egg and 1 tablespoon water in a medium bowl. Remove a piece of chicken from the flour, dip in the egg mixture, then the breadcrumbs, gently pressing the crumbs into the chicken, and set on a clean plate. Repeat with the remaining pieces of chicken.
  • Heat the vegetable oil in a large frying pan over medium-high heat. Add the chicken pieces to the pan (work in batches if needed) and brown on each side, about 8 minutes total. Use a spatula to transfer the chicken nuggets to a paper-towel-lined plate. Salt while hot and serve.

2 cups bite size shredded wheat cereal, crushed to 1 cup
1/2 cup grated parmesan cheese
1/2 teaspoon seasoning salt (Emeril's Essence)
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1/2 cup low-fat mayonnaise
1 tablespoon honey
2 teaspoons prepared mustard
1 lb chicken breast, cut approx 1-inch by 1-inch (boneless, skinless)

Steps:

  • preheat oven to 400°F.
  • In a bowl blend cereal, Parmesan cheese, seasoned salt, paprika and garlic powder.
  • In a different bowl mix mayo, honey and mustard.
  • Stir chicken into wet mixture then roll in dry mixture to coat evenly.
  • Place on rack in shallow backing pan.
  • Bake 15-20 min or until slightly browned and done (165F internal temp).

1 cup all-purpose flour
1 tablespoon seasoned salt
Salt and freshly ground black pepper
2 large eggs
2 cup seasoned breadcrumbs
2 chicken breasts, cut into small pieces
Vegetable oil, for frying
Ketchup, for serving

Steps:

  • In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.
  • Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.
  • Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.

4 skinless, boneless chicken breasts
2 cups corn oil
1 egg, beaten
⅓ cup water
⅓ cup all-purpose flour
1 ½ tablespoons sesame seeds, toasted
1 ½ teaspoons salt

Steps:

  • Rinse chicken with cold water and pat dry with paper towels. Cut into 1x1x1/2 inch pieces.
  • Fill a deep fryer with corn oil, no more than 1/3 full. Heat to medium heat.
  • Place egg and water in a small bowl and mix well. Add the flour, sesame seeds and salt, stirring until a smooth batter is formed.
  • Dip chicken pieces in batter and drain off any excess. Add battered chicken, a few pieces at a time, to the hot oil. Fry about 4 minutes or until golden brown and done (remove chicken from oil to test). Drain on paper towels.
