- Preheat oven to 350 degrees.
- Combine chicken and bread crumbs in large bowl.
- Set aside.
- Cut the carrot& onion into chunks and add to blender.
- Add the remaining 7 ingredients to the blender.
- Process in blender until carrot is very fine.
- Pour blender mixture over meat mixture.
- Mix very well using your hands.
- Form mixture into a loaf and place in lightly greased 9" X 13" pan.
- Cover with foil and bake for one hour.
- Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.

- For the sauce: Whisk together the ketchup and hot sauce in a small bowl and set aside.
- For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with cooking spray and set aside.
- Melt the butter in a medium saute pan over medium-high heat. Once melted, saute the celery and onion until softened, 3 to 5 minutes. Transfer the mixture, with the drippings, to a large bowl. Add the hot sauce to the bowl and stir to combine. Add the chicken, blue cheese, salt, pepper, eggs and 1 1/2 cups of the panko and mix until well combined.
- Press the mixture into the prepared loaf pan, pressing more in the center of the loaf to create a divot. This will allow the meatloaf to bake evenly and not create a mound after it is baked. Spread the sauce over the top of the meatloaf. Mix the Parmesan with 1/2 cup of the panko and sprinkle the mixture on top of the sauce. Bake until the center is set and the top is golden brown, 45 minutes to an hour. Let rest about 15 minutes before cutting to serve.
- Meanwhile, toast the remaining 1/4 cup panko in a dry pan until lightly golden and set aside.
- Garnish the meatloaf slices with the toasted panko and chopped celery leaves.

- Heat oven to 400°F. Spray 9x5-inch loaf pan with cooking spray.
- In 8-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Cook onions, 3 cloves garlic and a dash of salt in oil about 5 minutes or until onions are soft and translucent. Set aside to cool.
- In large bowl, mix remaining tablespoon olive oil, the ground chicken, 1 cup bread crumbs, the milk, egg, 2 tablespoons Parmesan cheese, 2 tablespoons parsley, the salt, pepper and pepper flakes. Add onion and garlic mixture; mix well.
- Pat half of meatloaf mixture in pan. Arrange cheese planks down center of meatloaf, leaving 1/2 to 1 inch of cheese-free space around all edges. Cut cheese in half as needed to fit. - Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray, set aside.
- In a large bowl, combine the ground chicken, egg, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. To not over handle the mixture otherwise it will get tough. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce.

- Preheat oven to 350 degrees. Set a steamer basket or colander in a large saucepan filled with 2 inches water; bring to a boil, then reduce to a simmer. Place broccoli florets and stems in basket, cover, and steam until bright green and just tender, 4 to 6 minutes. Remove basket from pan; let cool slightly.
- Brush a 5-by-9-inch loaf pan with oil. In a food processor, pulse onion, carrot, and celery until finely chopped; transfer to a large bowl. Pulse broccoli in food processor until finely chopped. Transfer to bowl.

The original recipe calls for 2# of ground turkey, but this recipe is better with 1# of ground chicken and the added shredded veggies. - Preheat oven to 400 degrees.
- Place milk and breadcrumbs in a bowl and let soak while mixing the rest of the ingredients.
- Pat and squeeze the shredded zucchini and carrots between paper towels to soak up extra moisture.

- Pre-heat oven to 350° degrees F.
- NOTE: I like to grill the corn for a bit of a charred taste, but you can cook it however you desire. Or you can use corn from the can.
- Heat medium pot, add about 1 tablespoons oil. Once oil is heated add onions, jalapeno, & green pepper. Cook until semi-soft, about 5-8 minutes. Add garlic and cook about another minute. Remove from pan and set aside.
- In same pan cook chorizo as directed on package, usually about 10-12 minutes, add tomato paste. Remove from heat and drain if needed. Let cool so it can be added with ground chicken without cooking it in bowl.
- In large bowl combine bread crumbs & spices, mix well. Add ground chicken & eggs, mix well. Add cooled vegies, including corn and beans. Add chorizo and mix well. Form into meatloaf.
- Place in lightly greased loaf pan and bake covered with foil for 1 hour.
- You can check internal temperature for 160° since you are using chicken, let rest for 5-10 minutes for temperature to reach 165° and then serve.
- NOTE: You can serve this with salsa for an extra kick in flavor.

I made this one up after not being able to find boneless thighs for a proper ckicken cordon blue recipe.(I was dining with someone who doesn't care for breasts! Add the chicken, soy sauce and eggs and mix together with your hands just until combined. Transfer to the prepared loaf pan and smooth out the top. Bake the meatloaf for 45 minutes.
- Meanwhile, whisk together the hoisin sauce and blackberry jam in a small saucepan over medium-low heat until smooth and warm, about 3 minutes. Remove from the heat and cover with foil to keep warm.
- Remove the meatloaf from the oven and brush generously with the hoisin glaze. Return to the oven and continue to bake until the meatloaf reaches an internal temperature of 165 degrees F, about 20 minutes. Remove from the oven and let the meatloaf sit for 5 to 10 minutes.
- Sprinkle sesame seeds over the meatloaf then slice and serve topped with the remaining hoisin glaze.

- Preheat oven to 350°F.
- Meatloaf: Place chicken, sausage, onion, pepper, pine nuts and bread crumbs in a large bowl.
- Mix together, evaporated milk and egg and pour over bowl ingredients.
- Season with salt and pepper and mix with fingers.
- Place in a loaf pan and bake 60 minutes.
- Drain off fat and let sit 5-10 minutes before slicing.
- Sauce: While the meat is sitting, combine sauce ingredients in a small pan, stir over medium high heat until smooth and hot.
